HOISIN-SESAME CARROTS



Hoisin-Sesame Carrots image

Glazed carrots take on the Asian flavors of hoisin and sesame.

2 tablespoons sesame seeds
1 pound carrots, peeled and sliced 1/4-inch-thick on the diagonal
3 tablespoons hoisin sauce
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives

Steps:

  • Toast the sesame seeds in a large dry skillet over medium-high heat, stirring, until lightly browned, about 2 minutes. Transfer to a small dish and set aside.
  • To the same skillet, add the carrots, hoisin, butter, a pinch of salt, a few grinds of pepper and 1/2 cup water. Bring to a simmer over medium-high heat. Lower the heat to medium, cover and cook until the carrots are tender and easily pierced with a fork, about 20 minutes.
  • Uncover the skillet and raise the heat to medium-high. Simmer until the liquid has reduced to a glaze, about 2 minutes. Remove the pan from the heat. Adjust the seasoning with additional salt and pepper. Serve sprinkled with the toasted sesame seeds and chives.

1 1/2 teaspoons toasted sesame oil
4 carrots, peeled and sliced
1 tablespoon light soy sauce
1 teaspoon hoisin sauce
2 tablespoons orange juice (or pineapple juice or just water)
1/2 teaspoon grated gingerroot
1 1/2 tablespoons honey
1 tablespoon sesame seeds (toasting is optional)
1/8 teaspoon pepper (to taste)
salt, if needed, to taste

Steps:

  • Heat sesame oil in skillet on medium-high heat; add carrots, soy sauce, hoisin sauce, juice (or water) and ginger root. Reduce heat, cover and cook at a simmer and stir until carrots are crisp-tender (depends how small your carrot slices are).
  • Stir in the honey. Stir in well and cook until heated through.
  • Top with the sesame seeds. Season with pepper and salt, if needed.

6 large carrots, halved
3 tablespoons light soy sauce
3 tablespoons rice vinegar
2 cloves garlic, minced
2 teaspoons sesame oil
2 teaspoons minced fresh ginger root
¼ teaspoon Chinese five-spice powder

Steps:

  • Bring a large pot of water to boil, add the carrots and parboil for 5 minutes. Drain and rinse with cold water.
  • In a large glass dish, combine the remaining ingredients. Add the carrots and marinate for 30 minutes.
  • Prepare an outdoor grill with an oiled rack set 4 inches from the heat source. Using a oiled wire hinged vegetable basket or just directly on the rack ( whichever you find easier), grill the carrots, turning constantly for a total of 10 minutes, until slightly charred.

8 skin-on, bone-in chicken thighs (about 6 ounces each)
2 teaspoons toasted sesame oil
1/4 teaspoon five-spice powder
Kosher salt and freshly ground pepper
1/4 cup hoisin sauce
1 tablespoon packed light or dark brown sugar
3 cloves garlic
2 small bunches broccolini
1 bunch baby carrots, greens trimmed
1 tablespoon vegetable oil
2 teaspoons toasted sesame seeds
1 scallion, thinly sliced

Steps:

  • Position a rack in the upper third of the oven; preheat to 450 degrees F. Put the chicken on a foil-lined rimmed baking sheet; drizzle with 1 teaspoon sesame oil, sprinkle with the five-spice powder and toss. Arrange skin-side up; season with salt and pepper. Roast until the chicken is cooked through and the skin is crisp, 25 minutes.
  • Meanwhile, stir the hoisin sauce, brown sugar and remaining 1 teaspoon sesame oil in a small bowl. Grate 1 garlic clove into the sauce; set aside. Chop the remaining garlic. Trim the broccolini and slice lengthwise into long florets. Trim and scrub the carrots; halve or quarter lengthwise.
  • Preheat the broiler. Brush half the hoisin sauce mixture on the chicken and broil until bubbling, 1 to 2 minutes. Brush with the remaining sauce and broil 1 to 2 more minutes.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the broccolini, carrots and chopped garlic; season with salt and pepper. Cook, stirring, until the garlic is soft, 1 minute. Add 1/4 cup water, cover and cook until the vegetables are crisp-tender, about 4 minutes. Uncover and stir in the sesame seeds.
  • Divide the chicken among plates; top with the scallion. Serve with the vegetables.

Glazed Carrots with Toasted Sesame Seeds image

This is a very simple recipe that will teach you how to master the technique of glazing a vegetable, which is a great way to add a lot of flavor, color, and texture.

Number Of Ingredients 11

6 carrots, scrubbed, peeled, and sliced on the bias into 1/2-inch thick wedges
1 white onion, medium, peeled, small dice
1 garlic clove, peeled, gently smashed
2 tablespoons olive oil
1/4 cup orange juice
1 cup carrot juice
Salt and pepper to taste
2 tablespoons butter
1 tablespoon honey
Water
1 tablespoon sesame seeds, toasted

Steps:

  • Prepare the carrots, onion, and garlic as indicated above.
  • In a medium saute pan over medium to medium-high heat, saute onion and carrots in 1 Tbsp. of the olive oil for 3 minutes, or until softened. Do not brown. Add the garlic.
  • When the onions start to sweat, add the carrots and stir. Add the orange juice and allow to simmer and lightly reduce with carrots/onion/garlic mixture. Add the carrot juice, and water if necessary, to ensure that the level of liquid is almost to the top of the vegetables. Return to a simmer. Lightly season with salt, pepper. Drizzle in honey, add butter, and simmer, uncovered, until carrots are tender and liquid has reduced to a sauce consistency, about 15 minutes.
  • Remove garlic clove. Taste for seasoning and doneness; add splash of water and 1 Tbsp. olive oil and stir. Swirl carrots in the pan, and allow water to reduce. The final consistency should be thick and glossy, almost creamy, but not dry. Meanwhile, toast sesame seeds in a dry pan with a light drizzle of olive or sesame oil for about 5 minutes, flipping or stirring, until lightly toasted in color. Set aside. (This can be done in advance.) When the carrots have reduced fully, sprinkle the sesame seeds onto carrots and stir.
  • Pour carrots into a serving bowl and enjoy.
