GLAZED PORK CHOP
A mustard and brown sugar glazed pork chop. This recipe works best if you butterfly the chops. Tastes great served with a baked potato and corn.

- Preheat oven to 325 degrees F (165 degrees C).
- In a small bowl, combine the brown sugar and mustard. Mix together well.
- Butterfly the pork chops and arrange them in a 9x13 inch baking dish. Spread the mustard mixture over the chops, then sprinkle with the lemon juice. Place about 1/8 of an inch of water in the bottom of the baking dish.
- Bake at 325 degrees F (165 degrees C) for 20 minutes, or to desired doneness.

- Prepare the pork: Mix 2 tablespoons salt, the black pepper, brown sugar and paprika in a bowl, then rub all over the chops. Wrap in plastic wrap and refrigerate 2 to 4 hours.
- Meanwhile, make the sauce: Melt the butter in a saucepan over medium heat, then add the onions and cook until translucent, about 4 minutes. Stir in the vinegar and brown sugar until dissolved. Add the ketchup, apple juice, syrup, bourbon, prunes, Worcestershire sauce, cayenne, 1 tablespoon salt and 1 1/2 teaspoons black pepper and bring to a boil. Reduce to a simmer and cook until thickened, about 30 minutes. Puree with an immersion blender or in a regular blender.
- Preheat a grill to medium. Brush the grates with vegetable oil, then place the chops directly over the flame and grill until marked and cooked halfway through, about 15 minutes. Turn the chops and place on a cooler area of the grill (such as the edges); cover and cook until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, 15 to 20 minutes. Uncover and brush the chops on all sides with the prepared sauce, then cover and cook until glazed, about 5 more minutes. Transfer to a cutting board and brush with more sauce. Tent with foil and let rest 10 minutes. Serve with more sauce and Smoky Corn on the Cob.
- Peel back the husks from the corn and remove the silk. Butter the kernels and sprinkle with salt and smoked paprika. Fold the husks back over the corn and grill over low heat until cooked through, turning occasionally, 12 to 15 minutes.
HONEY-GLAZED PORK CHOPS

- Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray. Season pork chops with salt and pepper.
- Coat a skillet with cooking spray and heat over medium heat. Add chops to the hot skillet and cook until browned, about 5 minutes per side.
- While the chops are browning, combine brown sugar and honey in a microwave-safe bowl. Microwave on high until brown sugar has softened or melted, about 20 seconds. Stir to combine.
- Transfer browned chops to the prepared baking dish and spoon 1/2 of the honey glaze evenly over top.
- Bake, uncovered, in the preheated oven for 15 minutes. Remove from the oven, turn over, and spread the remaining honey glaze over top. Bake until no longer pink in the center, 15 to 20 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

- In a bowl, whisk together the sauce base ingredients.
- Transfer 1/4 cup of mixture to a zip top bag and add pork chops. Press out as much air as possible and seal the bag. Marinate no more than one hour.
- Remove chops from bag. Pat dry with paper towels. Season both sides with salt and pepper.
- Heat a 12" skillet over medium-high flame. Add oil. When oil shimmers, add chops. Sear both sides until golden brown, 3-4 minutes per side. Transfer to a clean plate. Tent with foil to keep warm.
- Pour remaining sauce mixture into hot skillet. Scrape up browned bits (fond) from the bottom of the pan. Reduce over medium-high heat until thickened, about 5 minutes. Whisk in remaining vinegar and juices from pork chops. Whisk in cold butter.
- Return chops to pan, presentation side down. Turn chops over to glaze them fully. Turn off heat. Cover for 5 minutes to finish cooking.

- Stir the water, salt, and brown sugar until the salt dissolves, then pour over the ribeye pork chops. Brine the chops in the refrigerator for at least one hour, and up to eight hours. Right before lighting the grill, stir the glaze ingredients in a small bowl until smooth. (I use a Pyrex 2 cup measuring cup as my bowl – the handle is easier to grab when working over the grill.)
- Set the grill for indirect high heat (450°F+): Prepare the grill for cooking with two zones – half the grill with direct high heat, and the other half with no heat – then brush the grill grate clean. On my Weber Summit, I turn all the burners to high, close the lid, and let the grill preheat for ten to fifteen minutes. Then I brush the grates clean with my grill brush, leave two burners on high, and turn the other burners off. (I want an internal grill temperature of 400°F or higher).
- Sear the chops over direct high heat: Remove the chops from the brine and pat them dry with paper towels. Put the chops on the grill grate, directly over high heat. Sear the chops, flipping every minute or two, until they are browned and crusty on both sides, about 8 minutes. (If you are cooking on a gas grill, rotate the steaks 90 degrees after the second flip to get a diamond crosshatch pattern on the steaks. This doesn’t matter as much with a charcoal grill – charcoal will brown the steaks regardless of the grate direction.)
- Indirect-roast the chops over indirect heat to 145°F: Move the chops to the indirect heat side of the grill, away from the fire, bone side down, and then brush with a coat of glaze. Close the lid and cook the chops; open the lid every five minutes, quickly brush the chops with another coat of glaze, and close the lid again. The chops are done when they reach an internal temperature of 145°F, about 20 minutes. Let the chops rest for at least 3 minutes, then serve.
