GLAZED DOUBLE-CUT PORK CHOPS

Provided by Food Network Kitchen

Time 1h50m

Yield 4 servings

Number Of Ingredients 19

Kosher salt
1/4 cup coarsely ground black pepper
2 tablespoons packed dark brown sugar
2 teaspoons smoked paprika
4 double-cut bone-in pork loin chops (about 1 pound each)
Vegetable oil, for the grill
4 tablespoons unsalted butter
2 cups diced onions
1 cup apple cider vinegar
3/4 cup packed dark brown sugar
1 1/2 cups ketchup
1 1/4 cups apple juice
1 cup maple syrup
1/2 cup bourbon
1/2 cup prunes
1/4 cup Worcestershire sauce
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
Serving suggestion: Smoky Corn on the Cob, recipe follows

Steps:

  • Prepare the pork: Mix 2 tablespoons salt, the black pepper, brown sugar and paprika in a bowl, then rub all over the chops. Wrap in plastic wrap and refrigerate 2 to 4 hours.
  • Meanwhile, make the sauce: Melt the butter in a saucepan over medium heat, then add the onions and cook until translucent, about 4 minutes. Stir in the vinegar and brown sugar until dissolved. Add the ketchup, apple juice, syrup, bourbon, prunes, Worcestershire sauce, cayenne, 1 tablespoon salt and 1 1/2 teaspoons black pepper and bring to a boil. Reduce to a simmer and cook until thickened, about 30 minutes. Puree with an immersion blender or in a regular blender.
  • Preheat a grill to medium. Brush the grates with vegetable oil, then place the chops directly over the flame and grill until marked and cooked halfway through, about 15 minutes. Turn the chops and place on a cooler area of the grill (such as the edges); cover and cook until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, 15 to 20 minutes. Uncover and brush the chops on all sides with the prepared sauce, then cover and cook until glazed, about 5 more minutes. Transfer to a cutting board and brush with more sauce. Tent with foil and let rest 10 minutes. Serve with more sauce and Smoky Corn on the Cob.
  • Peel back the husks from the corn and remove the silk. Butter the kernels and sprinkle with salt and smoked paprika. Fold the husks back over the corn and grill over low heat until cooked through, turning occasionally, 12 to 15 minutes.

Yield 4

Number Of Ingredients 5

1 serving nonstick cooking spray
4 bone-in pork loin chops
1 pinch salt and ground black pepper to taste
2 tablespoons packed brown sugar
2 tablespoons honey

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray. Season pork chops with salt and pepper.
  • Coat a skillet with cooking spray and heat over medium heat. Add chops to the hot skillet and cook until browned, about 5 minutes per side.

From "Cook's Country from America's Test Kitchen," episode 110, "Regional Chops." Use rib chops or center-cut chops.

Provided by DrGaellon

Categories     Pork

Time 1h35m

Yield 4 serving(s)

Number Of Ingredients 13

1/2 cup whiskey
1/2 cup apple cider (non-alcoholic)
2 tablespoons brown sugar
1 tablespoon Dijon mustard
2 teaspoons cider vinegar
1/4 teaspoon vanilla extract
1/8 teaspoon cayenne pepper
2 -3 lbs center-cut pork chops (4 chops, each about 1-inch thick)
salt
black pepper
2 teaspoons canola oil
2 teaspoons cider vinegar
1 tablespoon butter, very cold

Steps:

  • In a bowl, whisk together the sauce base ingredients.
  • Transfer 1/4 cup of mixture to a zip top bag and add pork chops. Press out as much air as possible and seal the bag. Marinate no more than one hour.
  • Remove chops from bag. Pat dry with paper towels. Season both sides with salt and pepper.
  • Heat a 12" skillet over medium-high flame. Add oil. When oil shimmers, add chops. Sear both sides until golden brown, 3-4 minutes per side. Transfer to a clean plate. Tent with foil to keep warm.
  • Pour remaining sauce mixture into hot skillet. Scrape up browned bits (fond) from the bottom of the pan. Reduce over medium-high heat until thickened, about 5 minutes. Whisk in remaining vinegar and juices from pork chops. Whisk in cold butter.
  • Return chops to pan, presentation side down. Turn chops over to glaze them fully. Turn off heat. Cover for 5 minutes to finish cooking.

  • I probably have pork chops at least once a month, and I love them, but similar to chicken, I’m always looking for new twists to make them a bit more exciting. In this recipe video I make a maple glazed pork chop, that takes me back to my New England days. With a rich maple flavor, this sauce lends a sweet and tangy spin to the standard chop. And if you have the time, I highly recommend that you brine the chop. It takes a few hours of soaking, but you'll end up with a much for tender, moist and flavorful pork chop, and I'm sure it will become your go to technique. RECIPE FOR MAPLE GLAZED PORK CHOP Ingredients
  • Pork Chops – I prefer the double cut; about 2 inches thick Brining Liquid – To brine the chops Maple Syrup – about a 1/3 of a cup Mustard – about 2 tablespoons whole grain or French mustard Chicken/Beef Stock – 1/2 cup Sage leaves 3-4 Sherry vinegar – 2 or 3 tablespoons
  • Recipe Overview & Keys to Success The most important aspect of this recipe is cooking the pork well. While the sauce is phenomenal, no matter how great the sauce, a tough, dry pork chop is going to be a tough dry pork chop. To make sure the pork is great, you should do three things:
  • Buy good product: Thicker is better, because they are harder to overcook; and overcooking is bad Brine: I’ve found brining is a great way to add flavor and makes the meat more tender, it gives you a safety net that you should take advantage of Cook it right: For cooking, you want to make sure you get a good sear on both sides of the pork to develop that nice crust and flavor, but you also want to make sure you don't overcook the pork. Think medium not well done. If needed, get a meat thermometer; I cook my pork chop until they are about 140 in the center, then let them rest for about 5 – 7 minutes while I make the sauce

  • Stir the water, salt, and brown sugar until the salt dissolves, then pour over the ribeye pork chops. Brine the chops in the refrigerator for at least one hour, and up to eight hours. Right before lighting the grill, stir the glaze ingredients in a small bowl until smooth. (I use a Pyrex 2 cup measuring cup as my bowl – the handle is easier to grab when working over the grill.)
  • Set the grill for indirect high heat (450°F+): Prepare the grill for cooking with two zones – half the grill with direct high heat, and the other half with no heat – then brush the grill grate clean. On my Weber Summit, I turn all the burners to high, close the lid, and let the grill preheat for ten to fifteen minutes. Then I brush the grates clean with my grill brush, leave two burners on high, and turn the other burners off. (I want an internal grill temperature of 400°F or higher).
  • Sear the chops over direct high heat: Remove the chops from the brine and pat them dry with paper towels. Put the chops on the grill grate, directly over high heat. Sear the chops, flipping every minute or two, until they are browned and crusty on both sides, about 8 minutes. (If you are cooking on a gas grill, rotate the steaks 90 degrees after the second flip to get a diamond crosshatch pattern on the steaks. This doesn’t matter as much with a charcoal grill – charcoal will brown the steaks regardless of the grate direction.)
  • Indirect-roast the chops over indirect heat to 145°F: Move the chops to the indirect heat side of the grill, away from the fire, bone side down, and then brush with a coat of glaze. Close the lid and cook the chops; open the lid every five minutes, quickly brush the chops with another coat of glaze, and close the lid again. The chops are done when they reach an internal temperature of 145°F, about 20 minutes. Let the chops rest for at least 3 minutes, then serve.
