Carrots are cooked tender then mixed with a tangy apricot sauce. Serve cold or slightly warm.

2 pounds carrots, peeled and diagonally sliced
3 tablespoons butter, melted
⅓ cup apricot preserves
¼ teaspoon ground nutmeg
¼ teaspoon salt
1 teaspoon orange zest
2 teaspoons fresh lemon juice
chopped fresh parsley for garnish

Steps:

  • Add carrots to a pot of lightly salted water, and bring to a low boil. Simmer until carrots are tender. Drain.
  • Put melted butter in a bowl, and stir in apricot preserves. Stir in nutmeg, salt, orange zest, and lemon juice. Add carrots, and stir well to coat. Sprinkle with chopped parsley.

2 pounds carrots, peeled and cut into sticks
¼ cup butter
¼ cup packed brown sugar
¼ teaspoon salt
⅛ teaspoon ground white pepper

Steps:

  • Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.
  • Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

Steps:

  • Quarter and cut carrots into 2-inch lengths.
  • In a skillet, bring carrots, sugar, 1/2 cup water, butter, and salt to boil. Reduce heat; simmer, partly covered, 6 minutes.
  • Cook uncovered, over high, tossing often until tender, 3 to 4 minutes. Season with pepper.

Easy Glazed Carrots and Raisins image

I usually make my glazed carrots with fresh baby carrots, butter, and honey. However, tonight I needed a quick side to go with my Easy One Pot Lentils and Rice. I did not have any fresh carrots or honey on hand (I need to get to the grocery store!) but I had a can or organic sliced carrots and some brown sugar. I decided to add raisins, because my 18 month old dd LOVES them, but cannot eat them unless they are chopped or cooked. (due to the fact that they are a major choking hazard) This is what I came up with. I served the lentils and rice as a rice ring, and served it with the carrots and raisins in the middle. (lifted out of the pan with a slotted spoon) My family really enjoyed it, and the kids appreciated the presentation! Whatever works to get them to eat healthy! ;o)

1/4 cup raisins
1/4 cup hot water
1 tablespoon brown sugar, packed
1 tablespoon butter
1 pinch sea salt
1 (15 ounce) can sliced carrots

Steps:

  • Put raisins into a small saucepan, add hot water. and let stand 5 minutes to plump raisins slightly.
  • Meanwhile, drain and rinse the carrots.
  • Add brown sugar, butter, and salt to the pan and stir to dissolve sugar.
  • Bring glaze to a boil over medium-high heat and cook 1 minute.
  • Add carrots to glaze and toss to coat.
  • Bring to a boil, reduce heat to medium and simmer 5 minutes uncovered. You can serve the carrots at this point, but the longer they simmer, the thicker the glaze gets and the sweeter the carrots get.
  • Enjoy!

½ teaspoon ground cumin
½ cup pecan halves
4 tablespoons butter, softened
1 cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • In bowl whisk together egg white, cayenne and cumin. Add pecans and toss to coat.
  • Transfer to rimmed baking sheet and bake for 10 to 12 minutes. Set aside to cool. Once cooled, chop into smaller pieces.
  • Heat skillet over medium heat and add butter, brown sugar, rosemary, and drained carrots. Add 1/4 cup of water to carrots. Cover and simmer for 8 minutes.

1-1/2 TBS Apricot jam
1 teaspoon honey
1 teaspoon balsamic vinegar
1/2 teaspoon dried thyme
Pinch of salt
Pinch of pepper
1 teaspoon extra virgin olive oil
1 TBS goat cheese
2 TBS toasted pine nuts'
2 TBS pomegranant arils
Fresh thyme sprigs for garnish

Steps:

  • Preheat oven to 350°
  • Clean and peel carrots with a vegetable peeler.
  • Place them on a cookie sheet covered with parchment paper.
  • Drizzle with olive oil.
  • Mix jam, honey, dried thyme, salt, pepper, blasamic in a small bowl and microwave for 30 seconds.
  • Brush them with the apricot honey balsamic glaze.
  • Roast carrots for 20-25 minutes.
  • Palce them on a serving platter and place small pieces of goat cheese all over the top of the carrots.
  • Sprinkle with toasted pine nuts and pomegranant arils.
  • Garnish with fresh thyme sprigs.
