This is a great recipe from The Good Housekeeping All-American Cookbook. I used to hate eating carrots until I tried this recipe. Kids are guaranteed to love this recipe! It's quick and easy and made from foods that are around the house.

1 lb carrot, cut into 2 inch sticks (or even better, 1 lb baby carrots)
salt
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons brown sugar
1/4 teaspoon ground nutmeg

Steps:

  • In a medium saucepan over medium heat, add carrots and just enough water to cover them with 1/4 teaspoons salt.
  • Bring to a boil.
  • Cover, then cook carrots for 15 minutes or until the carrots are tender-crisp; drain well.
  • Return the carrots to the saucepan.
  • Mix in the butter or margarine, the sugar, 1/4 teaspoons salt and the nutmeg.
  • Return the mixture to the heat and cook over low heat, stirring constantly, until the carrots are glazed.
  • Transfer glazed carrots to a warmed bowl and serve.

  • Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.
  • Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

  • In a medium saucepan cook carrots, covered, in a small amount of boiling salted water for 8 to 10 minutes or until crisp-tender. Drain; remove carrots from pan.

1 kg / 2 lb carrots (, peeled (Note 1))
1/4 cup (40g) brown sugar (, loosely packed (Note 2))
2 garlic cloves (, minced)
2 tbsp butter (30g) (, melted (or olive oil))
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
Parsley (, for garnish (optional))

Steps:

  • Preheat oven to 220C/425F (standard) or 200C/400F (fan).
  • Cut carrot on the diagonal into 4cm / 1.75" lengths. Halve thicker end so they are all roughly the same width.
  • Toss in a bowl with sugar, butter, garlic, oil, salt and pepper. Pour onto tray, spread out.
  • Roast 15 minutes. Toss, then roast a further 10 minutes until soft and caramelised on the edges with plenty of glaze left on the tray.
  • Toss carrots in the glaze, sprinkle with parsley if using. Serve warm.

8 tablespoons butter, divided
1½ pounds baby carrots with tops, peeled and trimmed
½ cup apple juice
¾ cup firmly packed brown sugar
1 teaspoon salt
1 teaspoon Dijon mustard
¼ teaspoon smoked paprika

Steps:

  • In a large Dutch oven, melt 2 tablespoons butter over medium-high heat. Add half of carrots; cook, stirring occasionally, for 3 minutes or until carrots are lightly browned. Remove from pan, and set aside. Repeat with 2 tablespoons butter and remaining carrots. Stir apple juice into pan, scraping browned bits from bottom of pan with a wooden spoon. Cook over medium heat for 6 minutes or until liquid is reduced by half. Stir in sugar, all remaining ingredients, and remaining 4 tablespoons butter. Cook, stirring constantly, until sugar dissolves and mixture is smooth. Stir carrots into sugar mixture, and bring to a boil. Reduce heat to low, and cook for 15 minutes or until carrots are tender.

  • Put baby carrots in small pot or pan, adding just enough water to cover carrots.
  • Cover with lid and bring to a boil over high heat.

2 pounds carrots (peeled and cut into 1" lengths*)
1 tablespoon olive oil
water
2 tablespoons unsalted butter
3 cloves garlic (minced)
2 tablespoons brown sugar
1 tablespoon pure maple syrup (may sub honey or brown sugar)
1 tablespoon lemon juice
1 teaspoon balsamic vinegar
1/2 teaspoon salt plus more to taste
1/4 tsp EACH dried thyme, ground cinnamon, pepper
1/8 tsp EACH ground ginger, chili powder (or more to taste (I like more))

Steps:

  • (Optional for more flavor): Heat oil over medium-high heat in a large skillet with a lid. Once hot, add carrots and cook undisturbed for 2 minutes, then continue to cook and stir an additional 3 minutes.
  • Remove from heat and carefully add enough water to reach 1" deep in the skillet. Bring to a boil, cover, and reduce heat to a simmer. Simmer 12-18 minutes (depending on actual carrot size, pot size, etc.) or until carrots are barely fork tender, adding additional water if it evaporates too soon. Once tender, drain carrots of any excess water and add carrots back to skillet.
  • Add butter and garlic to carrots and cook over medium heat until the butter melts. Add brown sugar, maple syrup, lemon juice, balsamic vinegar and all seasonings. Continue to cook and stir until glaze thickens, about 5 minutes. Taste and add additional salt if desired (I like more salt). Best served warm.

2 tablespoons olive oil
2 tablespoons brown sugar
½ cup orange juice

Steps:

  • Preheat oven to 400 degrees F. Line a large, rimmed baking sheet with foil and spray with cooking spray.
  • If the carrots are thick, cut them in half lengthwise; if not, leave whole. Slice the carrots diagonally in 2-inch-thick slices.
  • Spread carrots in a single layer on the prepared baking sheet. Drizzle with olive oil and toss to coat.
  • Roast in the oven for 15 minutes.
  • Meanwhile, whisk together brown sugar, orange juice, and salt in a small bowl until completely combined.
