MY FAVORITE GLAZED BANANA CAKE
I've searched high and low for the *perfect* banana cake; well, I think I've found it! This is moist and delicious, easy to make, and the perfect way to use up the oldest, blackest bananas you can find. The glaze topping is a nice change from the typical cream cheese icing, because it's not overpowering--it really allows the full flavor of the banana cake to shine through. Use your choice of ground walnuts or ground pecans in this cake--I've tried both, and either one works fine. I hope you enjoy this recipe as much as I do !! I think it's just fantastic!! (Chris says it reminds him of Entemann's banana cake, only better! How's that for a compliment!) Number of servings depends on how big you make your slices.

Steps:
- In mixing bowl, cream butter and sugar until light and fluffy.
- Add eggs, one at a time, combining well, then add vanilla.
- In seperate bowl, combine all dry ingredients (flour, salt, spices, baking powder, and baking soda).
- Add dry ingredients to creamed butter mixture, alternating with milk and bananas (you can combine milk with mashed bananas to make this step easier).
- Stir in nuts, and pour into a greased 9 x 13 inch baking dish.
- Bake at 350 degrees for 30-40 minutes, or until done (insert toothpick or caseknife into center of cake-if it is clean when removed, cake is done).
- Allow to cool in pan before glazing.
- GLAZE: Cream butter and sugar, then add vanilla and just enough milk to reach spreadable consistency-you may need as much as 4 tablespoons.
- Decorate surface of glazed cake with nuts, if desired.
- This cake refrigerates very well, making it a great"make ahead" dessert.
- For OAMC, freeze slices of unglazed cake-allow cake to thaw before glazing.
MANGO BANANA BUNDT CAKE WITH BUTTERED RUM GLAZE
This actually has more the consistency of banana bread than cake. It comes out moist and delicious, even without the glaze!

- CAKE:.
- Preheat oven to 350.
- Spray a bundt pan with nonstick cooking or baking spray.
- Combine the flour, salt, baking soda, cinnamon and nutmeg in a bowl.
- In a separate bowl cream butter and brown sugar.
- Stir in eggs, mashed bananas, and half of the diced mango until blended.
- Add banana mango mixture to the flour, stirring just enough to moisten throughout.
- Pour batter into bundt pan.
- Bake for 45 minutes or until toothpick comes out clean.
- Cool for 10 minutes, then invert onto a cooling rack and cool completely before making glaze.
- GLAZE:.
- Heat brown sugar and butter over medium heat until melted.
- Add rum and water.
- Simmer 5 minutes, stirring constantly until reduced.
- Place the cake on a cake plate. Spoon glaze over cooled cake.
THE BEST BANANA BUNDT CAKE (DORIE GREENSPAN)
This is an incredibly moist and delicious banana bundt cake/banana bread; the best one I've ever tasted. It also makes great muffins. It is so good, I don't feel it needs the optional glaze but I've included the instructions below if you want to make it. You can also simply dust with powdered sugar. The recipe is from Dorie Greenspan's fabulous cookbook, "Baking: From My Home to Yours". You can reduce the amount of butter by up to a 1/2.

- Center a rack in the oven and preheat to 350°F Generously butter a 9- to 10-inch (12 cup) Bundt pan. (If you use a silicone pan there's no need to butter it.) Don't place the pan on a baking sheet - you want the oven's heat to circulate through the Bundt's inner tube.
- Whisk the flour, baking soda and salt together.
- Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter until creamy. Add the sugar and beat at medium speed until pale and fluffy. Beat in the vanilla, then add the eggs one at a time, beating for about 1 minute after each egg goes inches Reduce the mixer speed to low and mix in the bananas. Finally, mix in half the dry ingredients (don't be disturbed when the batter curdles), all the sour cream and then the rest of the flour mixture. Scrape the batter into the pan, rap the pan on the counter to debubble the batter and smooth the top.
- Bake for 65-75 minutes, or until a thin knife inserted deep into the center of the cake comes out clean. Check the cake after about 30 minutes - if it is browning too quickly, cover it loosely with a foil tent. Transfer the cake to a rack and cool for 10 minutes before unmolding onto the rack to cool to room temperature. If you have time, wrap the cooled cake in plastic and allow it to sit overnight before serving - it's even better the next day.
- OPTIONAL LEMONY WHITE ICING: Sift 3/4 cup confectioners' sugar into a bowl and squeeze in enough fresh lemon juice (start with 2 teaspoons and add more by drops) to make an icing thin enough to drizzle down the Bundt's curves.
- MUFFIN OPTION: Halve the recipe. You can add nuts or chocolate chips. Bake 28-32 minutes. Yields 12 muffins.
BANANAS 'N' CREAM TUBE PAN CAKE

- In a large bowl, cream the shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Add bananas and mix well. GLAZED BANANA BUNDT CAKE~ROBYNNE
This cake is amazing! Moist, decadent, and addictive. I have made it several times, and my family and friends fight over it. My neighbor, Ryan hordes and rations it to make it last, although he swears he could eat it in one sitting. I found it and adapted it from twirlandtaste.com.

Steps:
- Preheat oven to 325 degrees. Prepare Bundt pan by brushing with vegetable oil with pastry brush, and then lightly flour. I use Wilton Cake Release instead of oil and flour.
- Using a mixer on low speed mix together cake mix, pudding mix, oil, eggs, water and extract for 30 seconds. Increase speed to medium and mix for until well blended; approx. 1 minute. Add bananas and mix an additional minute.
- Stir in toasted pecans. Pour batter into prepared pan. Note: Many of my family members dislike nuts. As a compromise I add the toasted pecans after I pour batter into bundt pan, so they are easily removed. This cake is delicious without the nuts.
- Bake for 50-60 minutes or until toothpick inserted in the cake comes out clean. Remove from oven.
- Make Banana Butter Sauce: Add sugar, water, banana and butter in a small pan and heat. Do not boil. Remove from heat and add banana extract; stir. While the cake is still hot and in the pan, pour sauce over the cake. Allow cake to cool in the pan.
- When cake has cooled. Place cake platter over the top of the cake, and carefully invert the cake and allow the cake to release from pan onto the platter. Gently lift pan off of the cake. Voila!
