1 apple, halved cored. and sliced 1/2 in slices
2 tablespoons butter
2 tablespoons dry white wine
1/4 lemon
1 tablespoon fresh gingerroot, minced
1/4 teaspoon cinnamon
2 tablespoons brown sugar

Steps:

  • Melt butter over medium heat until just starts to brown.
  • saute apples until golden on both sides. Put on the side.
  • Add minced ginger to pan until fragrant appx 2 minute
  • Return apples to pan and sprinkle with remaining ingredients.
  • Cover and cook until tender about 5 min.

2 cups apple butter
1 cup chicken stock
1/4 cup BBQ sauce
1/4 cup apple juice
2 tablespoons pure maple syrup or honey
1/2 teaspoon red pepper flakes
Kosher salt
One 1-pound package smoked cocktail franks

Steps:

  • In the bowl of a medium slow cooker (3-quart), combine the apple butter, chicken stock, BBQ sauce, apple juice, maple syrup or honey, red pepper flakes and a pinch of salt. Whisk to thoroughly combine. Add the cocktail franks, stirring to mostly submerge them in the sauce. Cover and cook on high until heated through, about 3 hours. Serve warm in the sauce.

3 small Granny Smith apples or other tart baking apple (about 1 1/4 pounds)
3 Bosc pears (about 1 1/4 pounds)
Juice of 1 lemon
1/4 cup unsalted butter
3 tablespoons sugar
Grated zest of 2 oranges, plus their juice
Two 3-inch-long cinnamon sticks
2 tablespoon Calvados, Apple Jack, or brandy (optional)

Steps:

  • Peel, core, and cut both the apples and pears into 3/4-inch wedges. In a medium bowl, toss the fruit with the lemon juice. Melt the butter in a medium skillet over medium heat. Add the sugar, orange zest, and cinnamon sticks and stir until sugar is dissolved. Add the fruit, increase the heat to medium-high, and cook, shaking the pan frequently, until glazed, about 10 minutes. Raise the heat to high, add the orange juice, and cook until the fruit is easily pierced with a paring knife, about 1 minute more. If desired, add the Calvados. If cooking on a gas burner, carefully tip the pan toward the flame to flambe the alcohol; if cooking over an electric element, hold a long match near the mixture. Swirl the pan over the heat until the flame subsides. Serve warm.

Steps:

  • Cook the sausage according to package directions. Meanwhile, in a large saucepan, combine the apples, onion, water and brown sugar. Cook over medium heat for 5-8 minutes, stirring occasionally. Add the sausage; heat through. Yield: 8 servings.

If making ahead, let cool, then refrigerate overnight; reheat in the microwave.

  • In a small bowl, mix the first 5 ingredients. Place apples in a greased 5-qt. slow cooker; add sugar mixture and toss to coat. Top with butter. Cook, covered, on low 3-4 hours or until apples are tender, stirring halfway through cooking.

2 lb Golden Delicious apples, peeled and each cut into 8 wedges

Steps:

  • Bring water and 1/2 cup sugar to a boil in a 3-quart saucepan, stirring until sugar is dissolved, then reduce heat and simmer 5 minutes. Add apples and simmer, stirring occasionally, until just tender, about 15 minutes. Transfer apples with a slotted spoon to a rack set over a baking pan, reserving poaching syrup, and drain apples 10 minutes.
  • Preheat broiler.
  • Arrange apple wedges in 1 layer in a flameproof shallow baking pan and sprinkle with remaining tablespoon sugar. Broil about 6 inches from heat, rotating pan occasionally and basting twice with poaching syrup, until apples are lightly browned on edges, 3 to 5 minutes.
