Start with this basic recipe, and add one of several different ingredients for a variety of different muffins.

Number Of Ingredients 7

2 cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt
¾ cup white sugar
1 egg
1 cup milk
¼ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
  • Variations: Blueberry Muffins: Add 1 cup fresh blueberries. Raisin Muffins: Add 1 cup finely chopped raisins. Date Muffins: Add 1 cup finely chopped dates. Cheese Muffins: Fold in 1 cup grated sharp yellow cheese. Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.
  • Bake for 25 minutes, or until golden.

Give Me Relief Muffins image

For any of you who have problems with chronic constipation, these muffins are for you! Now, These muffins are not your normal, soft, fluffy type. But a muffin who has a job to do...and that is to make you feel better by not being constipated. Eat several a day . To give a powerful punch add chopped prunes. If prunes gives you gas then make try taking the herb fennel, it really helps relieve the gas and calm the bowels.

Number Of Ingredients 13

1 cup pure oat bran
1 cup oatmeal
1/2 cup flax seed (ground Flax)
1/4 cup mesa cornmeal, fine grained
1/2 cup sugar
3/4 cup whole wheat flour
2 1/2 teaspoons baking powder
2 eggs
1/2 teaspoon vanilla
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2-1 cup of chopped prune

Steps:

  • Mix all dry ingredients. Then in another bowl beat eggs till mixed, add milk and oil, vanilla. Pour into dry mixture and mix till well combined. Add the chopped prunes.
  • WIth paper muffin cups FIll to almost full.
  • Bake at 375 degrees for 20 minutes.
  • When the muffins are cooled slightly I like to put them in a zip lock baggie to keep them moist. They are a very dense muffin. Serve with butter.
  • They will soften up if you micro wave them too.

Basic Muffin Recipe image

Use the muffin method to make this basic muffin recipe and change up the flavors however you like! All measurements are by weight, including liquids.

Number Of Ingredients 7

8 oz low protein flour, ( 2 scant cups) such as cake flour, pastry flour or White Lily flour
3.5 oz (1/2 cup) granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon fine sea salt
1 large egg at room temperature
6 oz (3/4 cup) whole milk at room temperature
2 1/2 oz (5 Tablespoons or a little over 1/2 stick) butter, melted and cooled to barely warm

Steps:

  • Position a rack in the center of the oven. Preheat oven to 425F.
  • Line a 12-cavity muffin tin with paper liners or spray lightly with pan spray. Set aside.
  • Whisk together the dry ingredients in a large bowl--flour, sugar, baking powder, and salt.
  • Whisk together the wet ingredients in a small bowl--egg, milk, and melted butter.
  • Make a well in the center of the dry ingredients. Pour in the wet, and stir/fold until mixed but still a little lumpy.
  • Allow the batter to sit for about 10 minutes, then portion out using a disher (ice cream scoop).
  • Bake until well risen, nicely peaked, and deep golden brown on top, 15-20 minutes.
