This one-pan dish is filled with the flavors of fall. Maple syrup adds sweetness and depth to the tangy cider-infused glaze that coats tender pan-roasted chicken, apple wedges and shallots.

2 pounds skin-on, bone-in chicken breasts, cut into large chunks
Kosher salt
2 tablespoons extra-virgin olive oil
2 apples (1 red, 1 green), cored and cut into wedges
8 medium shallots, quartered lengthwise
1/4 cup fresh sage leaves, torn
1/2 cup low-sodium chicken broth
1/4 cup pure maple syrup
1/4 cup apple cider vinegar

Steps:

  • Pat the chicken dry and season all over with salt. Heat a large heavy skillet over high heat and add the olive oil. When the oil is hot, add the chicken skin-side down and cook, undisturbed, until the skin is browned and crisp, about 5 minutes.
  • Turn the chicken and add the apples, shallots and sage to the skillet. Reduce the heat to medium high and cook until the chicken is browned on the bottom, 4 to 5 minutes. Transfer the chicken to a plate and continue to cook the apples and shallots, stirring, until golden, about 2 more minutes.
  • Meanwhile, make the glaze: Mix the chicken broth, maple syrup, vinegar and 1/2 teaspoon salt in a small bowl. Add the mixture to the skillet with the apples and shallots and boil until reduced by about three-quarters, 2 to 3 minutes. Return the chicken to the skillet, turning to coat, until cooked through, about 2 more minutes.

1 tablespoon olive oil, or to taste
1 cup pure maple syrup
¼ cup low-sodium soy sauce
2 tablespoons garlic-infused olive oil
1 tablespoon ginger powder
1 teaspoon sesame seeds
1 teaspoon ground black pepper
1 teaspoon ground cayenne pepper
2 pounds skinless, boneless chicken thighs
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking dish with olive oil.
  • Combine maple syrup, soy sauce, garlic oil, ginger powder, sesame seeds, pepper, and cayenne in a bowl.
  • Neatly arrange chicken thighs in the baking dish. Pour maple sauce over the chicken thighs. Use tongs or gloved hands to turn thighs over in sauce until fully coated. Cover with aluminum foil.
  • Bake in the preheated oven for 40 minutes. Uncover baking dish and turn thighs over. Continue baking until an instant-read thermometer inserted into the center reads 200 degrees F (93 degrees C), about 15 minutes. Turn over once more and sprinkle with parsley. Let rest for 10 minutes before serving.

2 tablespoons pure maple syrup
1 tablespoon reduced-sodium soy sauce
2 teaspoons lemon juice
1 clove garlic, minced
1 teaspoon minced fresh ginger
¼ teaspoon freshly ground pepper
2 boneless, skinless chicken breasts, (about 8 ounces), trimmed and tenders removed (see Tip)

Steps:

  • Whisk syrup, soy sauce, lemon juice, garlic, ginger and pepper in a small, shallow dish. Add chicken and turn to coat with the marinade; cover and refrigerate for 2 hours, turning once.
  • Coat an indoor grill pan with cooking spray and heat over medium heat. Remove the chicken from the marinade (reserving the marinade) and cook until an instant-read thermometer inserted into the thickest part of the breast registers 165 degrees F, 3 to 5 minutes per side.
  • Meanwhile, pour the reserved marinade into a small saucepan and bring to a simmer over medium heat. Cook until reduced by about half, about 4 minutes. Liberally baste the chicken with the reduced sauce and serve.

1 teaspoon fresh ginger, grated
1/8 teaspoon cayenne pepper
4 chicken breasts, boneless skinless (about 11/2 pounds)

Steps:

  • Combine syrup, soy sauce, ginger and cayenne in small bowl and set aside.
  • Pat chicken dry with paper towels and season with salt and pepper. Heat oil in laarge non-stick skillet over med-high heat until just smoking. Cook chicken till golden brown, about 5 minutes a side.
  • Reduce heat to med-low and add syrup mixture to skillet. Simmer, turning chicken once or twice to coat, until glaze is slightly thickened and chicken is cooked through, 2 to 4 minutes Serve.
  • Make sure to use real maple syrup.

2 cloves garlic, minced
2 tablespoons minced fresh ginger root
6 whole allspice berries
6 whole cloves
1 cinnamon stick
1 pod whole star anise
½ cup pure maple syrup
½ cup bourbon whiskey
¼ cup packed brown sugar
1 cup orange juice
⅓ cup ketchup

Steps:

  • Melt butter in a saucepan over medium heat. Cook garlic and ginger for about 2 minutes. Add allspice, cloves, cinnamon, and star anise; stir until fragrant, about 1 minute. Add maple syrup, bourbon, and brown sugar to the saucepan.
  • Cook and stir mixture until reduced and thickened to a glaze consistency, about 5 minutes. Whisk orange juice and ketchup into glaze until smooth. Strain glaze to remove spices.

Bring to a simmer over medium heat adjust heat and simmer for about 8 to 10 minutes, whisking occasionally, until the glaze has visibly thickened. Pour glaze through a wire-meshed strainer into a bowl and discard ginger pieces. Allow glaze to cool slightly until it has further thickened and become a bit sticky.
  • When wings are cooked through, remove from oven and turn broiler onto high. Brush the glaze generously over the wings and place under broiler for a minute or two or until the glaze is bubbly. Remove the pan from the oven, flip all the wings over, brush again with glaze, liberally, and broil until bubbly.
