Steps:
- Preheat waffle iron. Stir together flour, baking powder, salt, sugar, and nutmeg.
- Beat egg yolks in another bowl with milk and vanilla. Stir in the flour mixture until blended. Stir in mashed bananas and butter.
- Make waffles in waffle iron. Top with sliced bananas and maple syrup. Or melted chocolate. Or whipped cream. Or honey. Or hell, ice cream- whatever you want!

Steps:
- Preheat waffle iron according to manufacturer's instructions.
- Mix vinegar into milk and set aside.
- In a medium bowl, beat egg yolk, bananas and sugar.
- Add dry ingredients and continue to mix. Pour in milk, mix.
- In a small bowl, beat the egg white to stiff peaks.
- Fold in the egg whites.
- Grease waffle iron according to manufacturer's instructions.
- Scoop batter into waffle iron (approximately ¾ cup batter depending on your waffle iron).
- Cook until the waffle iron stops steaming or the waffle reaches your desired color.
- Serve with assorted nuts, chocolate chips, syrup, honey, and/or sliced bananas.

GINGERY BANANA WAFFLES
A far cry from your average waffles, I think the ginger makes all the difference. Use only fresh ginger, and grate fresh right before using. - Preheat waffle iron.
- In large bowl, combine flour, baking powder, cinnamon, ginger, and salt.
- In medium bowl, beat eggs with brown sugar until light and fluffy.
- Puree extra-ripe bananas in blender.
- Beat pureed bananas, milk, molasses or dark corn syrup, and melted butter into egg mixture; add to dry ingredients. Stir until just moistened.
- Pour 3/4 cup batter in middle of waffle iron and cook until golden.
- Dust with powdered sugar and serve with additional sliced bananas and maple syrup (or try a tropical syrup, such as coconut or guava).

- Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, salt and nutmeg. Stir in milk and eggs until mixture is smooth.
- Spray preheated waffle iron with non-stick cooking spray. Pour two tablespoons of the waffle batter onto the hot waffle iron. Place two slices of banana on top of the batter and then spoon another two tablespoons of batter on top of the banana. Cook until golden brown. Serve hot.
