MEDITERRANEAN TILAPIA
We had some beautiful tilapia fillets, but no recipes! I had recently bought some amazing sun-dried tomatoes packed in oil, and decided to invent a slightly Mediterranean fish dish for a quick weeknight dinner. My husband is a recipe purist, always follows them to the letter, but after this, he's learned to trust my inventions!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). In a small bowl, stir together the sun-dried tomatoes, olives and capers. Set aside.
- Place the tilapia fillets side by side in a baking dish. Drizzle with oil and lemon juice.
- Bake for 10 to 15 minutes in the preheated oven, until the fish flakes with a fork. Check after 10 minutes, so as not to overcook, or the fish may be dry. When fish is done, top with the tomato mixture, and serve.

Steps:
- Whisk together everything except for the fish filets.
- Submerge fish in sauce to marinate for at least 30 minutes.
- In nonstick or lightly oiled skillet, sear fish over medium high heat for 4-5 minutes or until fish is white and fully cooked.
- Remove fish from pan and plate filets.
- Pour leftover marinate into skillet and stir for 5 minutes while sauce thickens.
- Drizzle over filets.

- line a baking pan with foil for easier cleanup.
- pour oil on the pan and spread evenly.
- rinse fillets under cool water and shake off excess water.
- place the fillets in the pan and sprinkle them with the creole seasoning, use more if you like it spicy. If you use Tony Cacheres often you will know how much to use to suit you taste.
- pour the ginger salad dressing over the fillets evenly covering them completely.
- Bake at 350' Fahrenheit or 177' Celsius for 30 minutes I used a toaster oven and it came out fantastic.
- remove from oven and sprinkle with fresh chopped parsley.
- I served it with sautéed broccoli, carrots and zucchini, baked potato and crabmeat stuffed Portobello mushrooms.

GINGER LIME TILAPIA
My husband won't eat fish unless its Tilapia, so I've had to find ways to make it interesting. This is my favorite variation I've done so far. I generally serve this with fresh snow peas or green beans splashed with teriyaki sauce.

Steps:
- Mix together the lime zest, ginger, paprika, garlic powder, red pepper flakes, salt and pepper.
- Sprinkle mixture on both sides of each tilapia filet.
- Heat olive oil in a pan. Add the fish filets to the pan and cook on medium-high for 4 minutes on each side.
- Sprinkle finished filets with lime juice.

- Heat the oven to 475 degrees.
- Pat the fish dry and season lightly with salt and pepper. Place in a glass baking dish.
- Place in a small food processor the jalapeno, garlic and ginger along with the soy sauce, white wine, sesame oil and cilantro. Process until blended.
- Pour the sauce over the fish, spreading and slightly pressing the solid ingredients down into the fish. Bake for about 8 minutes or until the fish flakes easily and is cooked through.
- Remove the tilapia with a spatula and divide between two plates. Drizzle the fish with the marinade juices left in the pan. Serve with jasmine or brown rice.
