I get so busy during the Christmas season that cutout cookies are a hassle. But I love gingerbread and spritz cookies so I combined my favorite recipes and was pleased at the results.-Sherry Gazelka, Iron, Minnesota

Number Of Ingredients 12

1 cup butter, softened
1-1/2 cups sugar
1 large egg
1/2 cup molasses
1-1/2 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
Colored sugar or multicolored jimmies

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, molasses and vanilla. Combine the flour, baking soda, ginger, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. , Using a cookie press fitted with the disk of your choice, press dough 1 in. apart onto ungreased baking sheets. Sprinkle with colored sugar or jimmies. , Bake at 400° until set (do not brown), 6-8 minutes. Remove to wire racks. Store in an airtight container.

This melt-in-your-mouth ginger cookie recipe that I received from my grandmother has been enjoyed in my family since 1899.

Number Of Ingredients 10

2 cups sifted all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
¾ cup shortening
1 cup white sugar
1 egg
¼ cup dark molasses
⅓ cup cinnamon sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift the flour, ginger, baking soda, cinnamon, and salt into a mixing bowl. Stir the mixture to blend evenly, and sift a second time into another bowl.
  • Place the shortening into a mixing bowl and beat until creamy. Gradually beat in the white sugar. Beat in the egg, and dark molasses. Sift 1/3 of the flour mixture into the shortening mixture; stir to thoroughly blend. Sift in the remaining flour mixture, and mix together until a soft dough forms. Pinch off small amounts of dough and roll into 1 inch diameter balls between your hands. Roll each ball in cinnamon sugar, and place 2 inches apart on an ungreased baking sheet.
  • Bake in preheated oven until the tops are rounded and slightly cracked, about 10 minutes. Cool cookies on a wire rack. Store in an air tight container.

1/3 cup shortening
1/2 cup sugar
1 large egg, room temperature
2 tablespoons molasses
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/8 teaspoon salt
Additional sugar

Steps:

  • Cream shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg and molasses. In another bowl, whisk together the next 6 ingredients; gradually beat into creamed mixture, and mix well. Refrigerate, covered, for at least 4 hours., Preheat oven to 350°. Shape tablespoonfuls of dough into balls; roll in additional sugar. Place 2 in. apart on lightly greased baking sheets., Bake until edges are lightly browned and tops are set and starting to crack, 8-10 minutes. Cool for 2 minutes before removing to wire racks.

MOJITO (CUBAN RUM LIME SPRITZER)



Mojito (Cuban Rum Lime Spritzer) image

1 bunch fresh mint leaves
6 to 8 tablespoons sugar
1/2 cup fresh lime juice
1 cup white rum
6 cups club soda
6 cups crushed ice

Steps:

  • Wash and stem the mint leaves, reserving 6 whole sprigs for garnish. Place the mint leaves in the bottom of a sturdy pitcher and add the sugar. Mash the mint leaves and sugar together, using the tip of a wooden spoon -- this extracts the mint oils. Add the lime juice and rum and stir until the sugar is dissolved. The recipe can be made several hours ahead to this stage. However, expect some discoloring in the mint leaves if you make the mojitos more than 20 minutes ahead.
  • Just before serving, add the club soda and gently stir to mix. Partially fill 6 highball glasses with ice. Add the mojito mixture and garnish each glass with a sprig of fresh mint.

GINGER-ORANGE SPRITZER



Ginger-Orange Spritzer image

1 (2-inch) piece peeled fresh ginger, sliced
1/2 cup sugar
1/2 cup water
4 sprigs fresh mint
2 cups fresh orange or tangerine juice
1/4 cup fresh lime juice
2 cups seltzer water

Steps:

  • Combine the ginger with the sugar and 1/2 cup water in a small saucepan, bring to a boil, and then reduce the heat and simmer for 10 minutes. Allow the mixture to cool, then strain, reserving the sliced ginger.
  • Put 2 tablespoons each of the ginger syrup in 4 tall glasses, add a mint sprig to each and a couple slices of ginger; slightly muddle or crush. Fill the glasses 3/4 of the way with ice cubes. Add 1/2 cup of orange juice and 1 tablespoon of lime juice to each glass and stir. Top off each glass with 1/2 cup seltzer and stir well. Serve.
