I LOVE anything with ginger in it (it's most definitely my favorite spice). My boyfriend and I made this as a dipping sauce for a fondue night we had because I am lactose intolerant and needed something to go with the meatballs we had made. Fantastic--probably would make a great marinade as well.

1/2 cup low sodium soy sauce
1/4 cup red wine vinegar
2 teaspoons ginger
2 tablespoons brown sugar
2 scallions, chopped

Steps:

  • In a small bowl, combine soy sauce, vinegar, and ginger and set aside.
  • In a saucepan, melt brown sugar on high, stirring rapidly (do not burn!).
  • Add the soy sauce mix and bring to a boil.
  • Remove from heat and pour into a serving dish and garnish with the scallions.

1 egg white, lightly beaten
1 tablespoon reduced-sodium soy sauce
1 teaspoon cornstarch
1/8 teaspoon white pepper
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
SAUCE:
1/2 teaspoon cornstarch
2 tablespoons rice vinegar
2 tablespoons reduced-sodium soy sauce
1 teaspoon sugar
STIR-FRY:
1 tablespoon plus 2 teaspoons peanut oil, divided
1 medium green pepper, julienned
3 green onions, cut into 1-inch lengths
1/2 cup canned bamboo shoots, finely chopped
2 to 3 teaspoons minced fresh gingerroot
1/4 cup slivered almonds, toasted
Hot cooked rice, optional

Steps:

  • In a large resealable plastic bag, combine the egg white, soy sauce, cornstarch and pepper. Add chicken; seal bag and turn to coat. Refrigerate for 30 minutes. For sauce, combine the cornstarch, vinegar, soy sauce and sugar until smooth; set aside., Drain chicken and discard marinade. In a large skillet or wok, stir-fry chicken in 1 tablespoon oil until no longer pink. Remove and keep warm., Stir-fry green pepper and onions in remaining oil for 2 minutes. Add bamboo shoots and ginger; stir-fry 3-4 minutes longer or until vegetables are crisp-tender., Stir sauce mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken and heat through. Sprinkle with almonds. Serve with rice if desired.

1/2 cup light soy sauce
1/4 cup rice wine vinegar
2 teaspoons ginger, minced
2 tablespoons brown sugar
2 spring onions, finely chopped

Steps:

  • Gather the ingredients.
  • Combine soy sauce, rice wine vinegar, and minced ginger in a small bowl. Set aside.
  • Melt brown sugar over high heat in a small heavy saucepan until just melted but not burnt.
  • Add soy sauce and rice wine vinegar mixture.
  • Bring to a boil until brown sugar has melted again (it will harden temporarily after the soy sauce mixture is added).
  • Remove from heat, pour into a serving dish, and garnish with chopped spring onions.
  • Serve with pot stickers, gyoza, or other Chinese dumplings.

3 tablespoons vegetable oil, divided
2 cups broccoli florets
1 cup julienned carrots
1 cup sliced fresh mushrooms
1 cup fresh pea pods
1/4 cup sliced green onions
1/2 cup mayonnaise
1/4 cup chicken broth
1 garlic clove, minced
1 tablespoon soy sauce
1/2 teaspoon ground ginger
Hot cooked rice, optional
Sliced almonds, optional

  • In a large skillet or wok, stir-fry chicken in 1 tablespoon oil over medium-high heat for 5-7 minutes or until juices run clear. Remove chicken and set aside. In remaining oil, stir-fry broccoli, carrots, mushrooms, pea pod and onions for 8-10 minutes or until tender. Return chicken to skillet. Combine mayonnaise, broth, garlic, soy sauce and ginger; add to skillet. Reduce heat and cook until heated through. Serve over rice and sprinkle with almonds if desired.
