RHUBARB-GINGER CHUTNEY
A tangy fresh rhubarb chutney, spiced with ginger.

Steps:
- Combine the sugar and vinegar in a large, heavy-bottomed pot, such as a Dutch oven. Bring to a boil, stirring until sugar has dissolved.
- Add rhubarb and all remaining ingredients. Bring to a boil, then reduce heat to low and cook, stirring occasionally, for 2 hours.
- Ladle into sterile jars and process, according to safe canning procedures. Cool and store.
- Keeps for up to 1 year.
PEAR BUTTER
Pear butter is lightly scented with orange and nutmeg. This is an old recipe from a dear friend. Its taste is so good in toast or even on top of steak or chicken.

- Place pears into a large pot over medium heat, and add just enough water to cover the bottom of the pot and keep them from sticking, about 1/2 cup. Cook until the pears are soft, about 30 minutes. Press pears through a sieve or food mill, and measure out 2 quarts of the pulp.
- Pour the pear pulp and sugar into a large saucepan and stir to dissolve sugar. Stir in the orange zest, nutmeg and orange juice. Cook over medium heat until the mixture is thick enough to mound in a spoon. When the mixture begins to thicken, stir frequently to prevent scorching on the bottom. This will take about 1 hour.
- Ladle the pear butter into hot sterile jars, leaving 1/4 inch of headspace. Remove air bubbles by sliding a metal spatula around where the pear butter touches the glass. Wipe jar rims clean, and seal with lids and rings. Process for 10 minutes in a boiling water bath. The water should cover the jars by 1 inch. Check with your local extension for exact processing times for your area.

This Ginger Pear Bread is deliciously different with sweet pears and a kick of ginger flavor.

- Combine the brown sugar, pecans, and flour in a small bowl.
- Add the butter and mix well. Set aside.
- Preheat oven to 350°F. Grease a 9"x 5" loaf pan.
- Whisk together the flour, baking soda, baking powder, ginger, and salt. Set aside.
- Using an electric mixer on medium speed, beat the butter and brown sugar until light and fluffy. Add the egg and vanilla, and mix well.
- Reduce mixer speed to low. Add the flour mixture in three portions, alternating with two portions of milk. Mix just until combined.
- Stir in the pears.
- Transfer the batter to the prepared pan, and spread evenly.
- Sprinkle the topping over the batter, pressing it down gently into the batter.
- Bake 50 to 60 minutes, or until the bread has browned and a pick inserted into the center comes out clean.
- Cool the bread in the pan for about 10 minutes. Then remove the bread from the pan to a wire rack to cool completely.

- Add the first 4 ingredients to the slow cooker; stir to combine.
- Cover and cook on LOW for 8 hours.
- Remove the lid and stir in the fresh and ground ginger.
- Increase temperature setting to HIGH; cook, uncovered, 1-2 hours, to thicken and blend, stirring occasionally.
- Let cool completely, then transfer to glass jars or other containers with tight fitting lids; store in the refrigerator where they will keep for several weeks.
PEAR GINGER JAM

- In a large pot, combine the pears, fresh ginger, sugar and juice from one lemon.
- Bring to a boil over medium-high heat them reduce the heat to medium. As you cook the jam for 10-15 minutes, it will thicken.
- Use a potato masher to help break down the fruit if necessary. If you want to make more of a sauce similar to an applesauce, you could puree the jam before canning it.
- When the jam is the consistency you prefer, ladle it into jars leaving 1/4 inch headspace.
- Process the jars for 10 minutes in a water bath canner (adjust for your altitude as needed). Or you could store the jam in the refrigerator for about a month.

- Place the chopped pears, cinnamon stick, ginger, and vanilla bean into a large, wide-mouthed, heavy-bottomed pot. My creuset is perfect for this! Add the water and lemon juice, and bring to a boil.
- Lower the heat to a simmer and cook until the pears are completely soft. The time for this will vary according to the hardness of the pears, but it took me about 30 minutes. Remove from heat.
- Remove the cinnamon stick and vanilla bean, and set aside. Strain the solids out of the pear mixture into a large bowl using a food mill, chinoise, or other finely meshed strainer. Use a wooden spoon to push all of the pulp through the mesh if using a chinoise or other mesh strainer. Discard the solids (but not the cinnamon stick or vanilla bean).
- Pour the pear purée into a large measuring cup designed for liquids - I recommend a 4-cup measuring cup - to determine how many cups of purée you have. This is very important in order to determine how much sugar to add.
