You can thank Kathy Knapp for bringing pie back to Pie Town, New Mexico. She and her mother found the nearly deserted town during a road trip in 1995. A "for sale" sign on an old trading post read, "There used to be pie. Ain't no more." They bought the place and opened Pie-O-Neer.

1 cup all-purpose flour, plus more for dusting
1/8 teaspoon baking powder
1/8 teaspoon fine salt
2 tablespoons cold unsalted butter, cut into small pieces
1 tablespoon lard
1 large egg yolk
1/4 teaspoon apple cider vinegar
5 or 6 firm ripe pears (such as Bosc), peeled and sliced (about 5 cups)
Grated zest of 1 lemon, plus 1 tablespoonfresh lemon juice
1 1-inch piece ginger, peeled and finely chopped
2 tablespoons all-purpose flour
2 tablespoons orange marmalade
For the topping:
3/4 cup all-purpose flour
1/2 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
5 tablespoons cold unsalted butter, cut into small pieces

Steps:

  • Make the crust: Sift the flour, baking powder and fine salt into a large bowl. Cut in the butter and lard with a pastry blender or your fingers until the mixture looks like coarse meal with pea-size bits of butter. Beat the egg yolk, vinegar and 1 1/2 tablespoons cold water in a liquid measuring cup with a fork. Add the egg mixture to the flour mixture and gently stir with a fork until just moistened. Gently gather into a ball, then shape into a disk on a lightly floured surface. Wrap in plastic and refrigerate at least 1 hour.
  • Preheat the oven to 425 degrees F. Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Fold the overhanging dough under itself and crimp the edge with your fingers; set aside.
  • Make the filling: Gently toss the pears with the lemon zest, lemon juice, ginger and flour in a bowl. Spread the marmalade on the bottom of the pie crust. Add the pear mixture, keeping the pears as flat as possible.
  • Make the topping: Combine the flour, sugar, cinnamon and kosher salt in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until fine crumbs form. Scatter the topping over the filling and gently pat down.
  • Bake the pie 20 minutes, then reduce the oven temperature to 350 degrees F and bake until the topping is lightly browned and the filling is bubbling, about 40 more minutes (cover with foil if the topping is browning too quickly). Transfer to a rack and let cool completely.

Steps:

  • Prepare recipe for double crust pie. Roll out dough for bottom crust. Place in 9-inch pie plate. Press to fit without stretching dough. Trim even with pie plate. Heat oven to 400 degrees F.
  • Heat oven to 400 degrees F. Combine pears, apples, sugar, flour, cinnamon, ginger, salt and lemon juice in large bowl. Spoon into prepared pie crust.
  • Roll out dough for top crust. Place onto filled pie or cut into strips creating a lattice top. Trim 1/2-inch beyond edge. Fold under bottom crust edge to seal. Crimp and flute edges. Cut slits in top crust or prick with fork to allow steam to escape. Brush crust with milk and sprinkle with cinnamon sugar.
  • Bake 30 to 40 minutes or until apples are tender and crust is golden brown.

Dough for single-crust pie
TOPPING:
1 cup crushed gingersnap cookies (about 16 cookies)
1/4 cup all-purpose flour
1/4 cup packed brown sugar
Pinch salt
1/2 cup cold butter, cubed
FILLING:
2/3 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground ginger
1/4 teaspoon salt
2-1/2 pounds ripe pears (about 4 medium), peeled and thinly sliced
1 tablespoon lemon juice
1 teaspoon vanilla extract
Hot caramel ice cream topping, optional

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 400°., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. 1/2 cup water
1/2 cup dark corn syrup
1 teaspoon lemon juice

  • In a large saucepan, combine the cornstarch and ginger. Stir in the water, corn syrup, lemon juice and zest until smooth. Gently stir in pears. Pour into pastry shell., For topping, combine the flour, brown sugar and ginger in a small bowl; cut in butter until crumbly. Stir in pecans. Sprinkle over pears. My good friend is very fond of pears and I thought I'd bake a pear pie for her birthday. It turned out quite well.

1/2 c granulated white sugar
3 1/2 Tbsp quick-cooking tapioca
2 Tbsp orange juice
1 Tbsp lemon juice
2 Tbsp butter, cubed
1 tsp ground cinnamon
1/4 tsp salt
1 Tbsp grated fresh ginger root
1 Tbsp grated orange rind
1 tsp grated lemon rind
7 large large, fresh, ripe pears, peeled and sliced
2 refrigerated unbaked pie crusts
1 Tbsp milk
1 Tbsp sugar

Steps:

  • 1. In large bowl, combine first 10 ingredients (up to the pears)
  • 2. Add peeled, sliced pears and toss to coat.
  • 3. Line a 9 inch pie plate with one crust. Add pear filling. With wet fingers, moisten outer edge of crust with water.
  • 4. Roll out 2nd crust. Using a sharp knife, cut steam vents in the top crust and place over the pie filling. Cut off excess dough and fold the top crust over the bottm edges and flute to finish the edge and to seal the crusts together.
  • 5. Brush milk over the top crust and sprinkle the sugar over the wet surface.
  • 6. Place pie on a baking sheet and place into a 400 degree oven for 50-60 minutes, until crust is golden brown. Place foil over the edge of crust if it begins to get too brown before pie is fully cooked. Filling should be bubbly. Remove pie from oven and cool well on wire rack. Serve plain or with a scoop of vanilla ice cream.

Your favorite pie pastry for two 9 inch crusts (regular or gluten free )
4 tablespoons orange marmalade or mixed citrus marmalade
Juice of one lemon (for use see ingredient instruction below for the pears)
6-7 medium pears
1-2 tablespoons crystallized ginger (minced)
1/4 cup granulated white sugar
1/4 cup light brown sugar (firmly packed)
1/4 teaspoon ground cardamom
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
2 1/2 tablespoons cornstarch or arrowroot starch
2 tablespoons cold unsalted butter (chopped into small pieces)
1 egg

Steps:

  • Preheat the oven to 425 degrees.
  • Prepare one crust and line a 9 inch pie pan with it.
  • Spread the bottom of the pie crust with the marmalade.
  • In a large bowl, combine the pears, ginger, granulated sugar, brown sugar, cardamom, nutmeg, cinnamon and cornstarch/arrowroot starch. Toss gently to combine.
  • Spoon into prepared pie crust. Place pieces of butter on top of the pie filling.
  • Prepare an egg glaze with the egg, whisked with one tablespoon water. Brush the edge of the prepared pie crust with the egg glaze. Set the rest of the egg glaze aside.
  • Prepare the second pie crust. Place on top of the pie filling allowing ¾ inch of the crust to overhang the filled crust.
  • Fold the top crust edges over the filled crust edges, and pinch together to make a fluted edge. Cut vent holes on the top (I cut 4 long slits and a ½ inch circle in the middle).
  • Brush the top with the rest of the egg glaze and sprinkle with granulated sugar.
  • Place pie in the lower portion of the oven at 425 degrees and bake for 12 minutes.
  • Lower the oven heat to 350 degrees, move the pie to the middle of the oven and bake 30-35 minutes longer or until top crust is golden. Check the pie during the last 30-35 minutes and if the crust edge is beginning to over brown, cover with foil (edges only).
  • Remove and cool on rack. Serve at any temperature but perfect warm with vanilla ice cream!

1 1/4 teaspoons grated lemon zest
2 pinches of table salt
1/3 cup unsalted butter (about 5 tablespoons)
3 pounds pears, a mix of Anjou and Bartlett, peeled, cored, and thinly sliced (about 6 small pears)
1/2 teaspoon ground ginger
2 tablespoons minced crystallized ginger
2 tablespoons currants or raisins
Flaky Pie Crust Dough
1 1/2 cups all-purpose flour
1/2 teaspoon table salt
9 tablespoons cold unsalted butter, cut into pieces
(makes 1 9-inch pie shell)

Steps:

  • To make the topping, in a small bowl, combine 1/2 cup sugar, 1/3 cup flour, 1/4 teaspoon lemon zest, and 1 pinch of salt. Cut in the butter with a pastry blender or large fork until the mixture resembles coarse crumbs. Set aside until ready to use.
  • Position a rack in the lower third of the oven and preheat the oven to 400˚F.
  • In a large bowl, combine the pears, remaining sugar, remaining flour, remaining lemon zest, the ground and crystallized ginger, the currants, and 1 pinch of salt. Pour into the prepared pie crust and sprinkle evenly with the topping.
  • Place the pie on a rimmed baking sheet to catch any drips. Bake for 15 minutes, reduce the oven temperature to 350˚F., and continue to bake for 45 minutes, or until the filling is bubbly around the edges, the crust is golden, and the center of the pie is tender when pierced with a knife.
  • Cool to room temperature before slicing and serving.
  • Flaky Pie Crust Dough
  • In a large bowl, combine the flour and salt. Using a pastry blender or fork, cut in the butter until the mixture is coarse and crumbly. Sprinkle 3 to 4 tablespoons water over the mixture 1 tablespoon at a time while stirring the mixture with a fork. Add enough water to make the dough cohesive. Gently gather the dough with your hands and pat it firmly into a ball. (This dough is best when rolled out immediately.)
  • To roll out the dough, press it into a 7-inch circle on a sheet of plastic wrap. Place another large sheet of plastic wrap on top of the dough. Roll the dough from the center into a 12-inch circle, flipping the dough (including the plastic) once or twice while rolling. With each flip, lift the plastic wrap from the surface of the dough to let the dough stretch, and then lay it back on the dough. When finished, lift the top piece of plastic wrap off the dough. Invert the dough, holding it from the underside with the remaining plastic wrap, into a 9-inch pie pan. Gently press the dough to mold it to the shape of the pan. Peel the plastic wrap off the dough.
  • Trim the edges, leaving 1/2 inch of dough overhanging. Fold the overhanging dough under and crimp the edges to form a decorative rim. Chill until ready to use.

Steps:

  • Combine raisins and ginger in heavy small saucepan. Add enough water to just cover. Simmer over low heat until liquid is absorbed, about 15 minutes. Cool completely.
  • Position rack in lowest third of oven and preheat to 400°F. Combine pears and next 6 ingredients in bowl. Stir in raisin mixture. Roll out 1 pie crust disk on lightly floured surface to 13-inch round (about 1/8 inch thick). Roll up dough on rolling pin and transfer to 9-inch-diameter glass pie plate. Gently press into place. Trim edges of crust, leaving 1/4-inch overhang. Spoon pear mixture into pan, mounding in center.
  • Roll out second crust disk on lightly floured surface to 13-inch-diameter round. Roll up on rolling pin and unroll over pie. Trim edges, leaving 3/4 -inch overhang. Fold overhang of top crust under edge of bottom crust. Pinch edges together to seal. Crimp edges to make decorative border. Gather and reroll scraps. Cut out decorative shapes. Beat egg with milk in small bowl for glaze. Brush top of pie with glaze. Make several slashes in top crust so steam can escape.
  • Bake pie until crust is golden brown and juices bubble up through slashes, covering crust edges with foil if browning too quickly, about 1 hour. Serve warm with vanilla ice cream.

  • Combine ginger and water in a small saucepan. Bring to a boil; remove from heat. Cover and let stand 1 hour. Drain mixture, reserving liquid.
  • Combine flour, baking powder, and 1/2 teaspoon sugar in a small bowl; cut in margarine with a pastry blender until mixture resembles coarse meal and is pale yellow. Sprinkle ice water, 1 teaspoon at a time, over surface of dough; toss with a fork until dry ingredients are moistened and mixture is crumbly.
  • Divide dough in half. Gently press each half of dough between 2 sheets of heavy-duty plastic wrap into a 4-inch circle. Chill 15 minutes. Roll each half of dough into a 5 1/2-inch circle between sheets of plastic wrap. Set 1 dough circle aside. Remove top sheet of plastic wrap from other circle. Invert dough, and fit into a 4-inch tartlet pan coated with cooking spray. Remove remaining plastic wrap.

  • Make the Dough: Put the flour, sugar and salt in the processor bowl of a food processor and pulse once or twice to combine. Add the butter and continue to pulse until the mixture resembles coarse crumbs. Slowly add 2 tablespoons of water as you continue to pulse, adding more water a tablespoon at a time if necessary; stop pulsing when the dough just starts to come together. Remove the dough from the food processor and form into a disk. Wrap in plastic wrap and refrigerate for at least 2 hours, or up to 3 days.
