GREEN BEANS WITH GINGER AND GARLIC



Green Beans With Ginger and Garlic image

Here is a recipe for fresh green beans, boiled just until barely tender and bright green, then tossed in a pan with minced garlic and ginger. The beans can be cooked a day ahead, leaving nothing more to do before the meal than to assemble everything over high heat.

2 1/2 pounds green beans (French-style slim haricots verts work especially well), trimmed
4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

¾ cup reduced-sodium soy sauce
1 tablespoon minced garlic
1 teaspoon minced fresh ginger root
1 cup honey

Steps:

  • Bring a large pot of water to a boil; add green beans and cook until bright green and just tender, about 5 minutes. Drain and rinse with cold water.
  • Heat soy sauce in a large skillet over medium heat. Cook and stir garlic and ginger in soy sauce until fragrant; stir in honey. Add green beans and toss to coat. Reduce heat to medium-low and simmer until beans are tender, about 5 minutes more.

We blanch the beans before sauteing. This means to plunge fresh green beans into boiling salted water, leave for 1 to 2 minutes, and then plunge into icy water to stop the cooking. This makes them crisp and bright green. You can blanch the beans, cool, and drain them a day in advance. Just keep them covered in the refrigerator.

1 ½ pounds green beans, stem ends trimmed
2 tablespoons butter
1 (2-inch-long) piece fresh ginger
Salt and fresh ground black pepper

Steps:

  • Bring a medium pot of salted water to a boil. Plunge the beans into the water and cook until crisp-tender, 1 to 2 minutes. Drain and transfer to a bowl filled with ice and cold water to stop cooking. Drain well.
  • Peel the ginger and cut in half crosswise. Thinly slice lengthwise and cut into very thin matchsticks.
  • Melt the butter in a wide heavy skillet over moderately high heat until bubbling. Add the ginger and cook until it begins to brown, about 2 minutes. Toss in the beans and cook, stirring, until just tender, 2 to 3 minutes. Season with salt and pepper and serve immediately.

1 tangerine, peeled, segmented, seeds removed
1/4 cup chopped green onions
1/4 cup soy sauce

1 garlic clove, peeled and halved
1 teaspoon packed brown sugar
1/2 teaspoon salt

½ pound green beans
5 garlic cloves, minced
1 2-inch knob of ginger, minced
¼ cup chicken broth
1 tablespoon soy sauce
2 teaspoons sesame oil

Steps:

  • Prepare the green beans. Wash and trim (cut off the ends) of the green beans.
  • Over medium-high heat, add a bit of oil to a saucepan and stir fry the beans for 2 minutes.
  • Then add the ginger and garlic. Stir fry for another 1 minute.
  • Pour in the chicken broth and soy sauce.
  • Place a lid on the pan and let steam for 1 minute. Remove the lid. Finish with a drizzle of sesame oil.
  • Stir and slide the green beans onto a serving plate. Eat with rice.

1 tablespoon canola oil
1 teaspoon soy sauce
1 teaspoon freshly grated gingerroot (FRESH only!) or 1 teaspoon freshly grated galangal (FRESH only!)
1 garlic clove, finely minced
3/4 cup walnut halves
1 lb green beans, rinsed and trimmed
2 teaspoons fresh lime juice or 2 teaspoons fresh lemon juice
1 tablespoon olive oil
cilantro leaf (optional)

Steps:

  • Preheat oven to 250 degrees.
  • On a baking sheet spread the canola oil and heat up in the oven. Once the pan is hot, remove from oven and add the soy sauce, fresh ginger, garlic and walnut halves. Stir to coat.
  • Bake, stirring occasionally, for about 25 minutes, or until walnuts are browned and crisp.
  • Remove the pan from the oven and set the nuts on a paper towel to drain and cool.
  • In a medium saucepan, steam the green beans for approximately 5 minutes, or until crisp-tender. Drain and toss the beans with the toasted walnuts, lime juice and olive oil in a serving bowl.
  • Garnish with cilantro leaves if desired.

1 tbsp vegetable oil
4 garlic cloves, minced
2-inch fresh ginger, minced
2 tbsp sliced almonds
1 tbsp soy sauce

Steps:

  • In a large pot, boil the green beans for 3-4 minutes, until tender-crisp. Then immediately place the green beans into a large bowl with ice and cold water (ice bath). Set aside.
  • Heat a large skillet at medium-high heat and add the oil, garlic, and ginger to the skillet. Sauté for 1-2 minutes until the garlic just begins to brown.
  • Remove the green beans from the ice bath using a slotted spoon and place them into the skillet. Top with soy sauce, almonds, salt and pepper, and then toss to combine all the ingredients.
  • After the green beans are heated through, remove from heat. Taste for additional salt and pepper. Best served immediately.
