I've made batches of this simple jelly, a winner at our county fair, to give as gifts for many years. When the jars are empty, people return them for a refill. -Robin Nagel, Whitehall, Montana

Yield 5 half-pints.

Number Of Ingredients 6

2-1/2 cups water
18 gingerbread spice tea bags
4-1/2 cups sugar
1/2 cup unsweetened apple juice
2 teaspoons butter
2 pouches (3 ounces each) liquid fruit pectin

Steps:

  • In a large saucepan, bring water to a boil. Remove from heat; add tea bags. Cover and steep 30 minutes., Discard tea bags. Stir in the sugar, apple juice and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Continue to boil 1 minute, stirring constantly. , Remove from heat; skim off foam. Ladle hot mixture into 5 hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool. (Jelly may take up to 2 weeks to set.)

1 cup all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
4 large eggs, separated, at room temperature
2 tablespoons unsalted butter, melted and cooled
3/4 cup molasses
1/4 cup granulated sugar
Confectioners' sugar, for dusting
1 cup cold heavy cream
3/4 cup plus 2 tablespoons confectioners' sugar
8 ounces mascarpone cheese, at room temperature
1 teaspoon pure vanilla extract
1/3 cup mini chocolate chips
1/3 cup finely chopped candied citrus peel (lemon and/or orange)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
Pinch of freshly grated nutmeg
Pinch of ground cloves

Steps:

  • Make the cake: Preheat the oven to 375 degrees F. Coat an 11-by-17-inch rimmed baking sheet or jelly roll pan with cooking spray; line the bottom with parchment paper. Whisk the flour, cinnamon, ginger, allspice, baking powder, baking soda, nutmeg, cloves and salt in a medium bowl.
  • Whisk the egg yolks, melted butter and molasses in a large bowl. Beat the egg whites and granulated sugar with a mixer on medium-high speed until stiff peaks form, 5 minutes. Stir the
  • flour mixture into the yolk mixture until smooth. Stir one-third of the whites into the batter with a rubber spatula, then fold in the remaining whites in two batches. Spread the batter in the prepared pan; bake until a toothpick inserted into the center comes out with just a few crumbs, 10 to 12 minutes.
  • Immediately sift confectioners' sugar generously over the top of the warm cake and loosen the edges with a knife; lay a clean kitchen towel (not terry cloth) over the cake. Place another baking sheet over the towel and flip the cake with the baking sheets to invert it onto the towel. Remove the top baking sheet and parchment. Starting at a short end, roll up the cake and the towel together into a spiral. Transfer seam-side down to a rack and let cool completely.
  • Meanwhile, make the filling: Beat the heavy cream and 3/4 cup confectioners' sugar with a mixer on high speed until soft peaks form. Beat in the mascarpone and vanilla. (Do not overbeat.) Fold in the chocolate chips and candied citrus with a rubber spatula.
  • Make the topping: Combine the remaining 2 tablespoons confectioners' sugar, the cinnamon, ginger, allspice, nutmeg and cloves in a bowl. Gently unroll the cake. Spread the filling over the cake about 1/4 inch from the edges; reroll (without the towel). Trim the ends with a serrated knife. Transfer to a platter; dust with the spice mixture.

3/4 teaspoon freshly grated nutmeg
3/4 teaspoon freshly ground black pepper
1/2 teaspoon ground cloves

Steps:

  • Stir together the cinnamon, ginger, allspice, nutmeg, black pepper and ground cloves in a small bowl until thoroughly combined. Use accordingly in your favorite gingerbread-spiced recipes. The spice mix can be stored in an airtight container for up to 6 months.

This is a versatile mix of spices that can be added to lots of other things -- yellow cake mix, pancake or waffle batter, ground coffee before brewing, scones, muffins, cookies, whatever you want to have a gingerbread flavor. I sometimes put some of this mix in an 8-oz jelly jar and give as a gift along with cookie cutters, some standard cake mixes, and a sampling of recipes. I also use this to season my pumpkin pies and butternut squash custards.

1/4 cup allspice
1/4 cup nutmeg
1/4 cup ground cloves

Steps:

  • For standard size cakes (9x13 or two 8" rounds) use 5 tsp of the mix.
  • For a standard size cookie recipe (makes 2-3 dozen), use 4 teaspoons.
  • To flavor ground coffee before brewing, use 2 teaspoons.
  • For pancakes or waffles, use 2-3 tsp to flavor batter that is meant to make a dozen or so servings.

(Jelly make take up to 2 weeks to fully set.) Yield: 5 half-pints. Or just pour into jars and turn upside down and let it cool down jars will go ahead and seal themselves.
