This delicious, old-fashioned bake from Mary Berry is an all-time classic - perfect with a hot cup of tea! From her BBC2 series, Simple Comforts.

Steps:

  • 1. You will need a 23 x 30cm (9 x 12in) traybake tin lined with baking paper. Preheat the oven to 180°C/160°C fan/Gas 4. 2. Measure the flour, bicarbonate, ginger and mixed spice into a large bowl. 3. Measure the butter, treacle, syrup and sugar into a small saucepan and heat gently until the butter has just melted. Set aside to cool a little. 4. Pour the mixture from the saucepan into the bowl of dry ingredients. Add the beaten egg and beat with a wooden spoon until combined. Gradually add the milk, beating to make a smooth batter. 5. Pour the batter into the prepared tin and bake for about 35 minutes or until dark golden and springy to the touch. Cut into 24 pieces to serve. Wrapped tightly, this keeps for up to a week. Prepare ahead: Can be made a day ahead. Freezes well. Gingerbread men image

This easy gingerbread recipe is great for baking with children, and it makes a lovely homemade Christmas present. Make gingerbread men or any other shape! Each serving provides 161 kcal, 2g protein, 25g carbohydrates (of which 11.5g sugars), 6g fat (of which 3.5g saturates), 0.7g fibre and 0.3g salt.

350g/12oz plain flour, plus extra for rolling out
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g/4½oz butter
175g/6oz light soft brown sugar
1 free-range egg
4 tbsp golden syrup
writing icing (optional)
cake decorations (optional)

Steps:

  • Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar.
  • Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in cling film and leave to chill in the fridge for 15 minutes.
  • Preheat the oven to 180C/160C Fan/Gas 4. Line two baking trays with greaseproof paper.
  • Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them.
  • Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations, if using.

225g plain flour, plus extra for dusting
½ tsp salt
2 tsp bicarbonate of soda
1 heaped tsp ground ginger
½ tsp cinnamon
50g unsalted butter
100g soft brown sugar
100g golden syrup

Steps:

  • Heat oven to 190C/170C fan/gas 5 and line a baking tray with baking parchment. Sieve the flour, salt, bicarb, ginger and cinnamon into a large bowl. Heat the butter, sugar and syrup until dissolved. Leave the sugar mixture to cool slightly, then mix into the dry ingredients to form a dough. Chill the dough in the fridge for 30 mins.
  • On a surface lightly dusted with flour, roll out the dough to a ¼-inch thickness. Stamp out the gingerbread men shapes with a cutter, then re-roll any off-cuts and repeat. Place your gingerbread shapes on the lined trays, allowing space for them to spread. Cook for 10-15 mins, then remove from the oven and leave to cool.

225 g self-raising flour
1 tsp bicarbonate of soda
2 tbsp ground ginger
1 tsp mixed spice
100 g butter, diced
100 g black treacle
100 gl golden syrup
100 g light muscovado sugar
1 egg beaten
275 ml full-fat milk

Steps:

  • Preheat the oven to 180°C/160°C fan/350°F/Gas 4.
  • lightly butter and line a 9"x12" deep baking tray with baking paper.
  • Sieve the flour, bicarbonate, ginger and mixed spice into a large bowl.
  • Place the butter, treacle, syrup and sugar into a small saucepan and heat gently until the butter has just melted.
  • Set aside to cool a little.
  • Once cooled, make a well in the middle of the dry ingredients and pour the butter mixture into the bowl add the beaten egg, a splash of milk and beat with a wooden spoon until totally combined.
  • Gradually add the remainder of the milk, beating to make a smooth batter.
  • Pour the batter into the prepared tin and bake for about 35 minutes or until dark golden and springy to the touch.
  • Test with a thin skewer by inserting through the top, if it comes out clean your bake is cooked
  • Leave to cool for a few minutes before cutting into 24 pieces in the tin
  • Serve on its own or with Creme Anglaise or Vanilla ice cream for a dessert
