1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
pinch of cayenne pepper (optional)

50g icing sugar
a few glacé cherries (we used undyed)
2 balls stem ginger

  • Heat oven to 200C/180C fan/gas 6. Line 2 baking sheets with baking parchment. Melt butter, sugar and syrup in a pan. Mix flour, soda, spices and a pinch of salt in a bowl. Stir in the butter mix and chopped ginger to make a stiff-ish dough.
  • Wait until cool enough to handle, then roll out dough to about 5mm thick. Stamp out gingerbread men, re-rolling and pressing the trimmings back together and rolling again. Lift onto baking sheets. Bake for 12 mins until golden. Cool 10 mins on the sheets, then lift onto cooling racks.
  • To decorate, mix icing sugar with a few drops of water until thick and smooth. Halve then slice cherries thinly to make smiles, and cut ginger into small squares. Spoon icing into a food bag, snip off the tiniest bit from one corner, then squeeze eyes and buttons, and a tiny smile onto 1 man at a time. Stick on a cherry smile and ginger buttons. GINGERBREAD MEN

Gingerbread Men image

Perfectly spiced, with just the right amount of crunch and softness, these Gingerbread Men Cookies are SO yummy! Make these ahead, and plan a decorating party! A fun activity for people of all ages to enjoy!

Provided by Kylee Cooks

Categories     baked goods     Cookie     Dessert

Time 3h30m

Number Of Ingredients 16

3/4 cup unsalted butter (softened)
3/4 cup dark brown sugar (packed)
1/2 cup molasses
1 egg
2 tsp vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 Tbs ginger
1 Tbs cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp cloves
1 egg white
3 cups powdered sugar
2-3 Tbs milk

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl using a hand mixer (or stand mixer with the paddle attachment) cream butter and brown sugar until smooth and creamy, about 2 minutes.
  • Add molasses, egg, and vanilla and mix until light and fluffy, making sure to scrape down the edges as you go, about 3 minutes.
  • In a separate smaller bowl combine flour, baking soda, and salt. Then add ginger, cinnamon, nutmeg, allspice, and cloves until well combined.
  • Slowly add the flour mixture to wet ingredients one cup at a time and mix until fully blended. The dough should be sticky and thick but not too sticky that you can't handle it.
  • Wrap the dough in plastic wrap and shape it into a disc. Refrigerate for 3 hours or overnight, the longer you chill it the better.
  • Place the dough disc on a lightly floured surface, split it in half, put one half back in the refrigerator to continue cooling.
  • Roll out with a rolling pin the other half of the dough until it is about 1/4 inch thick. Using a cookie cutter cut out shapes and add them to a cookie sheet lined with parchment paper.
  • Transfer to the preheated oven and bake for 8-10 minutes.Allow the cookies to cool completely on cooling rack before frosting them.
  • Add egg white, powdered sugar and milk to a bowl and beat on low speed until combined. Beat on high speed for 4-5 minutes or until stiff peaks form. You should be able to pull your beater up and the drips melt into the rest of the icing slowly. If it is too runny add more sugar and if it is too thick add more milk.
  • Fill a piping bag with a small tip attached with icing, I used a #3 tip, or you can use a sandwich bag with a small cut at the end.
  • Decorate your gingerbread men with icing or decorative candies and allow the icing to harden for about 10 minutes before eating.
  • Devour.

GINGERBREAD MEN

Gingerbread Men image

Recipe video above. Classic gingerbread men! I love these because you can actually taste the spices. Smells like Christmas when they're baking!TOP TIP: The dough is quite sticky to work with (but sticky dough = moist cookie!). The trick is to make sure it's cold - so if it gets too sticky, return to refrigerator for a bit at anytime during roll out/cutting process.

Provided by Nagi

Categories     Christmas     Cookies

Number Of Ingredients 11

3 cups flour (, plain/all purpose)
3 tsp baking powder
1 tbsp ground ginger
2 tsp ground cinnamon
1 tsp mixed spice ((Note 1))
1/4 tsp ground cloves ((Note 2))
85g / 5 1/2 tbsp unsalted butter (, softened (Note 3))
3/4 cup brown sugar ((Note 4 re: light or dark brown))
1 large egg (, at room temperature (Note 5))
2 tsp vanilla extract
1/2 cup molasses, light / true ((NOT blackstrap)(Note 6))

Steps:

  • Whisk Dry Ingredients on one bowl.
  • Cream butter & sugar - In a separate bowl, cream the butter and sugar together using a stand mixer or electric beater on speed 7 for 2 minutes, or until light and fluffy.
  • Egg & vanilla - Add the egg and vanilla, then mix on speed 5 until combined (~30 sec).
  • Molasses - Add the molasses, mix for 1 minute using speed 2.
  • Gradually add dry ingredients - Add 1/4 of the Dry ingredients, then mix until you can't see flour (start on speed 1 to stop flour flying everywhere!). Repeat until all Dry ingredients are mixed in, then mix for further 15 seconds. Dough should be soft and a bit sticky - see video for texture.
  • Refrigerate - Pat dough into a disc shape, wrap in the cling wrap and refrigerate for at least 2 hours or until firm. (Can refrigerate 5 days or freeze 3 months).
  • Preheat the oven to 375°F/190°C (170°C fan) and set a shelf in the middle. Line 3 x baking trays with parchment/baking paper.
  • Take the dough out of the refrigerator and cut into half. Wrap half and return to the fridge.
  • Roll out (Note 7)- Sprinkle a sheet of baking paper very lightly with flour. Place dough on top, sprinkle surface very lightly with flour. Place another sheet of baking paper on top. Roll dough out until 4mm / 1/6" thick using a rolling pin. As you work, flip and if paper is wrinkling, peel it off then put if back on, smoothing out wrinkles.
  • Cut out shapes (Note 8) - Use a gingerbread cookie cutter to cut out gingerbread men shapes, firmly pressing to cut all the way through. If the dough sticks to the cutter, dip it into flour.
  • Transfer - Use a palette knife (or large knife) to transfer shapes onto baking sheet. Place 6 on the first sheet. Tidy edges if necessary using a butter knife.
  • Bake Tray 1 - Bake for 12 minutes (for classic light golden) or 14 minutes (dark golden and crisp). Then remove and cool fully on tray.
  • Repeat - Meanwhile, gather scraps of dough, press together then roll out again. If dough is sticky, return to refrigerator and work on the other half of the dough instead. Repeat rolling out and cutting out. You should have 18 to 20 gingerbread men in total (depending on cutter size)
  • Trays 2 & 3 - Fill and bake 2nd and 3rd tray with gingerbread men, 6 to 8 on each tray. I find the workflow that works best is baking one tray at a time ie. roll/cut-out/fill/bake one tray while you prepare the next.
  • Decorate - Fully cool on trays, then decorate! Use a half batch of this Royal Icing recipe to pipe and stick on decorations (sets hard and doesn't soak into cookies). The recipe makes more than you need, but it's impractical to make less. So freeze leftovers in fully sealed piping bag for future use.

THE BEST GINGERBREAD COOKIES

The Best Gingerbread Cookies image

Here's the perfect holiday cookie recipe for cut-outs and decorating. The balanced blend of warm spices and molasses adds just the right amount of seasonal flavor. A combination of butter and shortening creates a dough that rolls out easily and holds it shape during baking.

Provided by Food Network Kitchen

Time 3h

Yield 2 to 3 dozen cookies

Number Of Ingredients 15

3 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon fine salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
6 tablespoons unsalted butter, melted
1 tablespoon vegetable shortening, melted
2/3 cup light brown sugar
3/4 cup molasses
1 large egg
1 pound confectioners' sugar (3 1/2 cups)
2 tablespoons meringue powder
Food coloring, if desired

Steps:

  • For the cookies: Whisk together the flour, ginger, cinnamon, baking soda, salt, allspice and cloves in a large bowl.
  • Mix the butter, shortening, brown sugar and molasses in the bowl of a stand mixer fitted with the paddle attachment. Beat in the egg. Beat the dry ingredients into the wet ingredients in two additions. Divide the dough in half, wrap in plastic and pat to 1/2-inch thick. Refrigerate for 2 hours.
  • Preheat the oven to 350 degrees F.
  • On a lightly floured surface, roll out one piece of dough to 1/4-inch thick, dusting with flour if needed. Cut into 3- to 5-inch cookies with a gingerbread man cutter or desired shape. Brush off the excess flour and refrigerate for 15 minutes. Repeat with the second piece of dough.
  • Bake the cookies in batches until they are golden around the edges, 12 to 15 minutes. Transfer to a wire rack and cool completely.
  • For the royal icing: Whisk the confectioners' sugar with the meringue powder in the bowl of a stand mixer fitted with a paddle attachment. Beat in 6 tablespoons of water until well combined and you have stiff glossy peaks, adding 1 tablespoon more water at a time to reach a smooth pipeable consistency. Mix in food coloring as desired. Fill pastry bags fitted with tips. Decorate the gingerbread cookies with the icing.

MY FAVORITE GINGERBREAD COOKIES - SALLY'S BAKING ADDICTION
2015-12-01 Gingerbread cookie recipes all start the same and mine comes from my mom. To her recipe, I add a little more molasses and increase the amount of spice flavors (cinnamon, ginger, cloves, and allspice). Because of the added sticky sweetener (molasses), I add a little more flour to help soak it all up. Flour so the cookies can keep their shape. Molasses + spices for flavor; Egg so the gingerbread ...

  • In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and molasses and beat on medium high speed until combined and creamy-looking. Scrape down the sides and bottom of the bowl as needed. Next, beat in egg and vanilla on high speed for 2 full minutes. Scrape down the sides and bottom of the bowl as needed. The butter may separate; that’s ok.
  • In a separate bowl, whisk the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves together until combined. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be quite thick and slightly sticky. Divide dough in half and place each onto a large piece of plastic wrap. Wrap each up tightly and pat down to create a disc shape. Please see photo and description above in my post. Chill discs for at least 3 hours and up to 3 days. Chilling is mandatory for this cookie dough. I always chill mine overnight.
  • Preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Remove 1 disc of chilled cookie dough from the refrigerator. Generously flour a work surface, as well as your hands and the rolling pin. Roll out disc until 1/4-inch thick. Tips for rolling– the dough may crack and be crumbly as you roll. What’s helpful is picking it up and rotating it as you go. Additionally, you can use your fingers to help meld the cracking edges back together. The first few rolls are always the hardest since the dough is so stiff, but re-rolling the scraps is much easier. Cut into shapes. Place shapes 1 inch apart on prepared baking sheets. Re-roll dough scraps until all the dough is shaped. Repeat with remaining disc of dough.
