BEST-EVER CHEWY GINGERBREAD COOKIES
Crisp gingerbread cookies have their place, of course, but sometimes, you want to soften them up a little bit, don't you? These tender cookies are the perfect fix for that craving, combining the classic spice flavors we all love and a chewy crumb that just about melts in your mouth. Making them from scratch allows for control in the texture, and these are calibrated to a just-right tenderness that we (and many others) find irresistible. And speaking of irresistible, we guarantee that the aroma coming from your kitchen as you bake these will make it the gathering place of the entire house. While that scent (and those flavors) are especially welcome when temperatures outside start to dip, these tender cookies are welcome at any time of year.

- In large bowl, beat butter and brown sugar with electric mixer on medium speed until light and fluffy, about 5 minutes. Beat in egg and molasses. Stir in remaining ingredients except granulated sugar. Cover; refrigerate at least 2 hours.
- Heat oven to 350°F. Line cookie sheets with cooking parchment paper or silicone baking mat. In small bowl, place granulated sugar. Shape dough into 1-inch balls; roll in sugar. On cookie sheets, place balls 2 inches apart.
- Bake 8 to 10 minutes or just until set and soft in center. Cool 2 minutes; remove from cookie sheets to cooling racks. Store tightly covered up to 1 week.

- In a large bowl, beat cookie mix, butter, sugar, egg, flour, water and, if desired, ginger until blended. Refrigerate 30 minutes or until firm., Preheat oven to 350°. Shape dough into 1-in. balls; place in ungreased mini-muffin cups. Press evenly onto bottoms and up the sides of cups. Bake 10-12 minutes or until edges are lightly golden. Cool in pans 2 minutes. Remove to wire racks to cool completely., For filling, in a large bowl, beat cream cheese, butter and vanilla until blended. Gradually beat in confectioners' sugar until smooth. Pipe into cookie cups; sprinkle with cinnamon, nutmeg and, if desired, crystallized ginger. Refrigerate in an airtight container.

- Place dough on a plate and cover with a paper towel and put in the freezer for 10 minutes. Note - This step is optional but makes the dough easier to cut into shapes.
- Roll the dough out in between two layers of parchment or baking paper and cut into shapes using a cookie cutter. If you are only rolling into balls and not cutting into shapes then you do not need to roll it out just simply roll the dough into a ball.
- Optional - Sprinkle the cookie bites with a light dusting of ground almonds or coconut sugar. For the bites in the photo I have used ground almonds.

- Add the ground almonds and ground walnuts to the food processor and blend for 5 - 7 minutes, until the mixture starts starts clumping together. At this point, it will be half-way to a nut butter, but we'll stop at this stage.
- Add the ground oats and blend for a further 1 - 2 minutes, until the oats are evenly distributed and absorbed by the nut mixture.
- In a small bowl, mix together the sweetener of choice, molasses, spices and salt. Add the sweet mixture to the food processor and blend until the "cookie dough" becomes smooth and clumps together into a single ball.
- Roll about 1 1/2 tbsp worth of the "cookie dough" into balls and put them onto a lined baking sheet. Refrigerate the balls while you prepare the icing of choice.

- Mix butter with an electric mixer until fluffy. About 20 seconds. Add powdered sugar, vanilla, salt, cinnamon, ginger, nutmeg, allspice, cloves, and molasses and mix until mixture is smooth. Add flour and mix until the dough comes together. This will take time. It will look like it won’t go beyond a crumbly mess but it will form into a cookie dough if you keep mixing. I can take a few minutes.
- Bake cookies for 10-12 minutes until bottoms are just slightly brown. Remove from oven and cool for just a minute, until you can handle them. Fill a small bowl with additional powdered sugar and roll each cookie in the sugar until coated. Place on a rack to cool. (Once cookies are cooled, you may want to re-roll them in more powdered sugar.)

- Cream butter and sugar. Add molasses and egg yolk. In a medium bowl, combine remaining ingredients. Add flour mixture to butter mixture. Chill for at least an hour. It’s a fairly sticky dough so you might need to chill it a little longer.
- Preheat oven to 350. Roll dough to 1/4″ thick and cut with cookie cutters. Place cookies 2″ apart on a baking sheet. Bake 8-10 minutes. If you bake them on the short end they will stay soft and chewy and if you bake them on the longer end they will be nice and crispy. They’re great either way!
- Allow to cool about 5 minutes on pan and then transfer to wire rack and cool completely. Once they’re cooled you can decorate your heart out.
