Gingerbread Cake in a Mug image

If you have a mug that will hold 1-1/2 cups, you can make this delicious ginger- bread cake mix for a gift for someone special -- or for yourself -- to celebrate the upcoming season. Make up the cake mix and enclose it in a sandwich-size ziplock bag. Place the sealed bag in a mug and present it with the following directions.

4 tablespoons flour
2 tablespoons dark brown sugar
1 teaspoon unsweetened cocoa powder
1/4 teaspoon ground ginger
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon cinnamon
1 pinch nutmeg
1 pinch clove
gingerbread cake mix (the ingredients in the baggie)
2 tablespoons molasses
1 small egg
2 tablespoons warm water

Steps:

  • In a small bowl, combine all dry ingredients. Mix well and place in a sandwich-size ziplock bag and seal. Place sealed bag in a mug. Make sure the mug holds a volume of at least 1-1/2 cups.
  • Decorate mug and attach a gift tag with the following directions on how to prepare the cake.
  • The gift tag should read: Gingerbread Cake. Then list the ingredients under Gift Tag Directions above, followed by these instructions.
  • "Preheat oven to 350 degrees F. In a small bowl, place Gingerbread Cake Mix from bag. Add molasses, egg and warm water and blend until thoroughly mixed, about 1 minute. Pour mixture into lightly greased mug. Bake in oven for 20 minutes. Enjoy!".

2 tablespoons (1oz/30g) butter
4 tablespoons sugar ((Brown or white))
2 egg yolks
6 tablespoons all purpose flour
1 pinch salt
1/4 teaspoon cinnamon
1/8 teaspoon ginger

Steps:

  • Place butter in the mug and melt in the microwave (about 30 seconds).
  • Stir in the sugar (brown or white).
  • beat in the egg yolks, mixing thoroughly.
  • Add flour, cinnamon, salt and ginger and stir until combined.
  • Divide the mix between two mugs.
  • Cook in the microwave separately for about 45 seconds - 1 minute. (This timing is based on my 1200W microwave so check the wattage of your timing may vary)
  • Serve with a little vanilla ice cream and a sprinkle of cinnamon sugar on top.
