GINGER ALE BAKED HAM
Ginger Ale is a simple addition to traditional Baked Ham, but it really makes a difference and adds a lot of flavor while keeping the ham moist.

Steps:
- Place ham in baking dish or roasting pan.
- Score ham diagonally both ways about 1/8" in.
- Pour ginger ale over top.
- Pat brown sugar all over top and sides of ham.
- Bake according to ham package directions.
- (Usually 20 minutes per pound at 325 degrees).
- Serve with Potato Salad or Scalloped Potatoes (see my other recipes).

- Put ham, fat side up, in a shallow pan.Brush with mustard, sprinkle with brown sugar and pour ginger ale over it.Cover and bake in a preheated 325°F (160°C) oven about 1 hour; let stand and serve.To microwavePut ham, fat side up, on a rack in a microwave dish.Brush with mustard, sprinkle with brown sugar and pour ginger ale over it.Protect the extremities of the ham from overcooking with strips of aluminium foil, shiny side facing the meat; cover the edge with wax paper.Cook at "Medium" 24 minutes (for a 650 watt oven), remove aluminium foil and turn ham.Cook another 24 minutes at "Medium".Let stand 10 to 15 minutes, covered with aluminium foil, shiny side facing the ham.
GINGER ALE GLAZED HAM
This recipe is different from other ginger-ale glazes on RZ. It has a tangy-sweet flavor with a bite from the mustard & cayenne. From B H & G April 2007.

Steps:
- Preheat oven to 300 degrees F.
- Place ham on a rack in a roasting pan.
- In a saucepan combine wine, mustard, molasses, and cayenne pepper. Bring to simmering. Simmer, uncovered for 6 minutes.
- Stir in ginger ale.
- Pour glaze over ham.
- Bake 1 hour (I usually cover loosely with foil, afraid of drying it out).
- Increase oven temperature to 325 degrees F. Bake 1 hour more (remove foil covering), basting ham every 15 minutes.
- Brush ham with honey.
- Bake 15 minutes more.
- Slice and serve.

HOMEMADE GINGER ALE

Yield Makes about 1 1/2 cups syrup (enough for 4 to 6 drinks)

- Make syrup:
- Cook ginger in water in a small saucepan at a low simmer, partially covered, 45 minutes. Remove from heat and let steep, covered, 20 minutes.
- Strain mixture through a sieve into a bowl, pressing on ginger and then discarding. Return liquid to saucepan and add sugar and a pinch of salt, then heat over medium heat, stirring, until sugar has dissolved. Chill syrup in a covered jar until cold.
- Assemble drinks:
- Mix ginger syrup with seltzer and lime juice (start with 1/4 cup syrup and 1 1/2 teaspoons lime juice per 3/4 cup seltzer, then adjust to taste).

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
- In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
- In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
- Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.

- Into an empty 2-liter soda bottle, put the ginger root, sugar, yeast, and lemon juice. Fill the rest of the way with water. Screw the cap onto the bottle as tight as possible. Shake the bottle well, then leave at room temperature until the bottle is too hard to squeeze, about 2 days. Refrigerate. To serve, pour through a tea strainer.
