These are just what they say: big, soft, gingerbread cookies. They stay soft, too. My oldest son's favorite.

- Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
- In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

- In small bowl, mix walnuts, brown sugar, ginger, cinnamon and cloves. In medium bowl, stir cookie mix, butter, water and egg until dough forms.
- Divide dough in half. Place 1 portion of dough between 2 (16x12-inch) sheets of waxed paper; roll dough into 11x6-inch rectangle. Remove top sheet of waxed paper from dough. Sprinkle evenly with half of walnut mixture, pressing into dough. Tightly roll into a log, starting at short side and using bottom sheet of waxed paper as a guide. Repeat with remaining dough portion and walnut mixture. Wrap tightly in waxed paper; freeze 2 hours or until very firm.
- Heat oven to 350°F. Unwrap dough; cut into 1/4-inch slices. On ungreased cookie sheets, place slices 1 inch apart. Bake 10 to 12 minutes or until set. Cool 2 minutes; remove from cookie sheets to cooling racks.

- Beat butter and sugar together in a large bowl until fluffy; stir in eggs and extract. Stir together flour, baking soda and salt; add to butter mixture, mixing until thoroughly combined.
- Stir in walnuts and ginger. Wrap dough tightly in plastic wrap and refrigerate for at least 2 hours or until firm. (May be prepared up to a week ahead.) Preheat oven to 400°F and line 2 baking sheets with parchment paper.
- Using a portion of the dough, roll out 1/4-inch thick on a lightly floured board and cut into desired shapes. Bake for 8 to 10 minutes, or until lightly browned around the edges.
- Transfer cookies to a baking rack to cool before coating with a thin layer of Lemon Glaze. Store cookies in an airtight container.
- Lemon Glaze
- Stir together 2 cups powdered sugar, 1 tablespoon lemon juice and 1 tablespoon milk in a small bowl until smooth. Sprinkle with finely grated lemon zest if you like.

- 1. In a mixing bowl cream the butter (should be softened) with the sugars. Beat until fluffy using a mixer. Add the egg and extra yolk and mix well. Add the vanilla and bourbon and mix well. Add the salt, ginger, baking soda and baking powder and mix well.
- 2. Stir in the walnuts, golden raisins, and flour. Mix well. At this point you can bake the cookies, but for a slightly higher rise, chill the dough for 1 hour before baking.
- 3. To bake, have the oven preheated to 375 degrees or 350 degrees for a convection oven. Make balls of dough 1 1/4 - 1 1/2 inch in size. Leaving a couple of inches between the the balls of dough, bake on an ungreased cookie sheet for 11 minutes. (Check at 10 minutes if your oven is hot or baking sheet is darkened.
- 4. Remove baked cookies from the oven and rest a minute before transferring to a rack with a spatula to cool completely.
- 5. Store the cooled cookies in an airtight container. Makes approximately 38 cookies.
