Homemade Fresh Ginger Tea (Filipino Salabat) image

Homemade Fresh Ginger Tea is soothing and healing, especially during cold and flu season. Also good for nausea and to aid digestion. In the Philippines, it is called Salabat.

6 cups water
4 oz fresh ginger, peeled and sliced into 1/4-inch pieces ((about 5 inch piece))
1/4 cup honey ((or sugar))

Steps:

  • Combine the water, ginger, and honey in a small saucepan, and bring to a boil over medium-high heat. Stir to dissolve the honey.
  • Lower heat, cover, and let it simmer for about 10-15 minutes.
  • Strain and transfer the tea into a teapot or your preferred container. Enjoy immediately, with a slice of lemon and additional honey to taste.
  • Chill any remaining ginger tea and store in the refrigerator -- you can drink it chilled or reheat before serving.

Number Of Ingredients 3

1 kg fresh ginger
1 kg refined sugar
1 cup water

Steps:

  • Peel off the ginger.
  • Wash and drain.
  • Cut into small thin strips.
  • Put one cup of ginger strips in the blender or food processor.
  • Add one cup of water.
  • Cover and blend in high speed for 2 minutes.
  • Strain and squeeze off the juice into a container.
  • Repeat the procedure using the juice extracted instead of water until all the ginger strips are blended.
  • Mix extracted ginger juice concentrate and 1 kilo sugar in a non stick pan.
  • Put in high heat and reduce the when the mixture starts boiling.
  • Stir until the mixture becomes very thick.
  • Reduce heat during this stage and continue stirring until you achieve a moist powdery mixture.
  • Turn off the heat and continue stirring until the product becomes a little bit cooler and powderized.
  • Let cool and transfer in a dry sterilized bottle or jar.
  • For one cup of tea, mix one tablespoon of ginger tea powder in a cup of hot water.

The Salabat is the traditional Filipino Ginger Tea, made from fresh ginger slices. In the Philippines, this is a cure-all for sore throats, coughs, colds, or upset stomachs. It is also recommended to soothe vocal chords. It can also serve as a wellness beverage. The combination of a fresh ginger brew, honey and citrus juice like calamansi or lemon provide curative effects when taken often. This recipe was inspired by a previous blog post on Asian in America. *I share 2 alternative ways to prepare Salabat: Stove-top or in the Instant Pot.

1/2 piece fresh ginger, about 2-inches length (peeled, sliced thin)
3 cups water (for boiling)
2 teaspoons calamansi or lemon juice
1 to 2 Tablespoons honey

Steps:

  • Place the ginger in a medium-sized stockpot.
  • Pour the water over the ginger. Bring to a boil. When water boils, reduce the heat and simmer on low for about 10 minutes. At this time, you will be able to smell the gingery aroma from the brew. The tea will turn a dark amber color.
  • By this time, the ginger slices would have softened.Place the ginger slices on a sieve or small colander. Press the ginger so that the juices pour down the tea. This adds a stronger ginger flavor. You may keep the ginger slices in the liquid or if preferred, discard them when you serve the tea.
  • Pour the tea in cups. Sprinkle the calamansi or lemon juice. Sweeten with a teaspoon or more of honey per cup. Stir the Salabat to blend ingredients. Serve piping-hot.
  • Pour the water in the inside pot. Add the fresh ginger slices.Close and lock the lid. Set the release valve to Sealing.Select Manual and cook at High Pressure for 5 minutes. When cooking is complete, do a Quick Release and carefully open the lid.Place the ginger slices on a sieve or small colander. Press the ginger so that the juices pour down the tea. This adds a stronger ginger flavor. You may keep the ginger slices in the liquid or if preferred, discard them when you serve the tea.Use a large ladle with a long handle to pour the Salabat into cups. Stir in the calamansi or lemon juice. Sweeten each cup with a teaspoon or 2 of honey.Serve piping hot.
  • It takes about 17 minutes for the Instant Pot to preheat before the High Pressure cooking time begins. For other multicookers, please consult the product manual.The Instant Pot is ideal to use when you need to walk away from the kitchen and don't have to watch the stove.Quick Release is when you release the pressure instantly. Press Cancel and turn the Steam release handle on the lid to a Venting position.
  • Enjoy cups of piping-hot salabat with a fruit, a snack or a meal. This is a wellness, as well as a curative beverage.

The Salabat is the traditional Filipino ginger tea, made from fresh ginger slices. This is known to be a cure-all for sore throats, coughs, colds, upset stomachs or just about any ailment. The combination of a fresh ginger brew, honey and lemon have the most amazing curative effects when taken regularly. In Manila, I used to flavor my cup of Salabat with calamansi, the Filipino lime. While living in America, I've learned to substitute the citrusy flavor with lemon. My friends at Honey Ridge Farms sent me artisan honey products, so I added Lemon Honey Crème to my piping-hot ginger tea. Use regular honey if preferred. This was inspired by a recipe from the cookbook Memories of Philippine Kitchens by Amy Besa and Romy Dorotan. Makes 2 (6 oz.) cups.

1/2 cup fresh ginger (peeled, sliced in 1-inch thin slices )
1 whole fresh lemon (washed, seeded, sliced )
1/2 large fresh apple (peeled, cored, seeded and sliced (red delicious or Fuji or any sweet variety))
2 Tablespoons Honey Ridge Farms Lemon Honey Creme (or use any kind of honey)
3 cups water to boil

Steps:

  • Place the ginger, lemon and apple slices in a medium-sized stockpot.
  • Add 3 cups of water and bring to a boil.Reduce the heat and simmer for about 8 minutes. You will smell the gingery aroma from the brew and see the tea turn to a darker color
  • If desired, press the fruits through a large sieve and add the liquid to the ginger tea. Pour the tea in a large teapot. Serve with a few tablespoons of honey.

2 gingers each that are 1-inch long (peeled)
1/4 inch fresh turmeric
2 tablespoon honey
¼ teaspoon cinnamon powder

Steps:

  • In a pot over high heat, bring to a boil 5 cups of water.
  • In a mortar and pestle, smash ginger and turmeric, then add it to the boiling water and cook for 5-7 minutes.
  • Next, strain and transfer to a teapot or your preferred container. Also, feel free to not strain and directly transfer to your choice of container.
  • Best served hot.
