Ginger infused simple syrup is so easy to make! It will add a touch of festive cheer to your favorite cocktail, and, decanted in a pretty bottle, is a delightful homemade hostess gift.

Steps:
- Peel the ginger root with a vegetable peeler, and cut into thin rounds.
- Bring the sugar and water to a boil over medium high heat.
- Add the sliced ginger and bring the mixture back up to a simmer.
- Remove from heat and allow to steep for at least 30 minutes.
- Strain syrup through fine mesh. Discard ginger.
- Keep the syrup for a month refrigerated in an airtight container.

- Gather the ingredients.
- In a saucepan on medium heat, combine the sugar and water.
- Stir constantly until the sugar is dissolved.
- Add the ginger and continue to heat, bringing the syrup to a light boil.

- Remove the outer peel of the lemon with a vegetable peeler, taking care not to include too much of the bitter white pith. Finely chop the lemon peel and ginger in a food processor.
- Transfer the lemon-ginger mixture to a medium saucepan, add the sugar and water and bring to a boil. Reduce heat, and simmer, partially covered, for 15 minutes. Strain the mixture and cool. Cover and refrigerate for up to 1 week.
