This healthy sweet potato casserole recipe has subtle Asian flavors with coconut milk and ginger, but still pairs well with traditional Thanksgiving dishes. And you can even make it ahead!

3-3 1/2 pounds sweet potatoes
1 teaspoon grated ginger
1/4 cup coconut milk
1/2 teaspoon ground cinnamon
1 teaspoon orange zest
1/4 cup orange juice
1/2 cup chopped pecans
3 Tablespoons chopped crystallized ginger

Steps:

  • Preheat oven to 400 degrees. Wrap sweet potatoes in foil and place on a baking sheet. Roast for 80-90 minutes until easily pierced with a fork.
  • Carefully unwrap potatoes then pull off and discard the skins (you may want to wait until they cool a little).
  • Place the roasted sweet potatoes into a large bowl and mash them up, mixing in ginger, coconut milk, cinnamon, orange zest and orange juice.
  • Pour the sweet potato mixture into a casserole dish and top with pecans and crystallized ginger.
  • If serving now, cook in the oven for about 15 minutes, until heated through.
  • If making this ahead, cover with foil and refrigerate, then cook covered for 20 minutes, and uncovered for another 10-20 minutes, until heated through.

3 tablespoons extra-virgin olive oil
1 cup diced onion
1 tablespoon minced garlic
1 quart vegetable broth
2 ½ pounds sweet potatoes, peeled and cubed
10 slices nickel-sized slices fresh ginger
1 tablespoon finely chopped cilantro
½ teaspoon ground cumin
½ teaspoon cayenne pepper
salt and ground black pepper to taste
½ cup sour cream

Steps:

  • Heat oil in a heavy stock pot over medium-high heat. Add onions and saute until soft, about 5 minutes. Add garlic and saute until garlic begins to brown, 2 to 3 minutes. Stir vegetable broth, sweet potatoes, ginger, cilantro, cumin, cayenne pepper, salt, and ground black pepper into onion mixture; bring to a boil. Reduce heat and simmer until potatoes are soft, about 30 minutes.
  • Remove stock pot from heat and blend soup with an immersion blender until smooth. Season with salt and ground black pepper as necessary. Serve with a dollop of sour cream.

2 lbs yams (or sweet potatoes) sliced into ½ inch thick disks, skin on
water
2 tablespoons coconut oil, butter, ghee, or olive oil
1 shallot, finely diced
2 teaspoons fresh ginger, grated or paste
2 garlic cloves, minced
1 teaspoon salt
pepper to taste

Steps:

  • Slice sweet potatoes into disks and place them in a pot, cover with water, bring to a boil, cover with lid and simmer 12-15 minutes.
  • When the sweet potatoes are fork tender, drain, saving the water. In the same pot, heat olive oil, butter or coconut oil over medium heat and add shallots, ginger and garlic, stirring until fragrant and golden about 2-3 minutes.
  • At this point, you could add the sweet potatoes back into the pot and mash ( using a potato masher) adding some of the reserved sweet potato water to loosen it, or place it all in a food processor to whip until silky smooth.
  • I usually add about ½ cup liquid for a looser, almost saucy consistency. Season with the salt, pepper.
  • Top with maple pecans for a crunchy texture.

3 pounds sweet potatoes
6 tablespoons unsalted butter
2 tablespoons plus 2 teaspoons ginger pulp, (freshly grated (see notes))
2 teaspoons brown sugar
½ teaspoon ground cinnamon
6 tablespoons heavy cream
salt and freshly ground black pepper to taste

Steps:

  • Peel the sweet potatoes, and then cut them into bite-sized pieces, about 2-inch cubes.
  • Put a large steamer into a large pot with the water level just below it. Over high heat, bring the water to a boil and then add sweet potatoes to the rack. Turn the heat to low, cover, and steam until the sweet potatoes are very tender, about 15 minutes. (You can stick a fork into one of the pieces to see how tender they are -- it should easily slide right out when they're done.)
  • Add the sweet potatoes -- along with the butter, ginger, brown sugar, and cinnamon -- to a large mixing bowl and use a very large fork or potato masher to mash them. They can be as smooth or as chunky as you'd like -- mine are mostly smooth with a few chunks. (This must be done while they're still hot, so that the butter melts in nicely.)
  • Now mix in the cream and season to taste with salt and pepper. (Here's How.)

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a large bowl, toss together the sweet potatoes, honey, ginger, walnut oil, cardamom, and pepper. Transfer to a large cast iron frying pan.

1 sweet potato
2 tsp oil
½ onion , finely chopped
1 garlic clove , crushed
small knob of ginger , grated
1-2 tsp curry paste (use what you have or buy a Madras or red curry paste)
knob of butter
handful of spinach

Steps:

  • Heat oven to 200C/180C fan/gas 6. Prick the potato and bake it for 40-45 mins or until soft when you squeeze the sides.
  • Meanwhile, heat the oil in a small frying pan and fry the onion until softened, add the garlic and cook for 1 min, then add the ginger and curry paste and cook for another min. Stir in the butter and spinach, and continue stirring until the spinach wilts. Season well.
  • Cut open the top of the sweet potato, scoop out some of the flesh, add it to the mix in the pan and stir through, then spoon the mixture back into the potato.

Season the sweet potato and coconut milk stew again with salt and pepper. Bring the stew back up to a strong simmer and check for seasoning. Adjust with more salt, pepper, chili etc. if necessary.
