STEAK WITH GINGER BUTTER SAUCE

Steak With Ginger Butter Sauce image

An astonishingly good recipe for steak with butter, ginger and soy that Mark Bittman picked up from the New York chef Jean Georges Vongerichten and gave to The Times a few years later. It's simple and takes no time to make after work.

Provided by Mark Bittman

Categories     dinner, easy, quick, weeknight, times classics, main course

Time 10m

Yield 4 servings

Number Of Ingredients 4

1 to 1 1/2 pounds boneless top blade, sirloin or rib-eye, cut into 2 or 4 steaks 3/4 inch thick or less
1 1/2 tablespoons butter
1 tablespoon minced ginger
2 tablespoons soy sauce

Steps:

  • Heat a large, heavy skillet over medium-high heat until it begins to smoke. Add the steaks, and cook until nicely browned, 1 or 2 minutes. Turn, and brown the second side, another minute or two. Remove the skillet from the heat and the steaks to a plate.
  • When the skillet has cooled enough so that no smoke is rising, return it to medium heat. Add butter, and when it melts, add ginger. About 30 seconds later, add soy sauce and stir to blend. Return steaks to the skillet, along with any accumulated juices. Turn heat to medium, and cook the steaks a total of 4 minutes, turning 3 or 4 times. (If pan juices dry out, add a couple of tablespoons of water.) At this point, they will be medium-rare; cook a little longer if you like, and serve, with pan juices spooned over.

AMAZING GINGER-GARLIC STEAK MARINADE

Amazing Ginger-Garlic Steak Marinade image

This marinade tenderizes the steaks and makes them absolutely delicious. You won't need steak sauce for this one! I will sometimes use it on a big London broil which I'll slice against the grain. The result is tender and really delicious. I never measure anything for this. It's hard to mess up. Prep time doesn't include time marinating in the fridge.

Categories     Steak

Time 5m

Yield 4 serving(s)

Number Of Ingredients 8

4 steaks, any cut
1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons garlic powder
1 teaspoon ground ginger or 1 tablespoon fresh ginger, minced
1 teaspoon toasted sesame oil
1 teaspoon Worcestershire sauce
1 teaspoon black pepper

Steps:

  • Throw all ingredients in a Ziplock bag with your steaks.
  • Refrigerate overnight (tastes best), or for at least two hours.
  • Cook your steaks however you want.
  • Some people will probably scream unsanitary, but I like to boil down the marinade until it thickens in the same pan I cook my steaks in, and serve it as a pan sauce. I'm not dead yet!
  • Enjoy!

STEAK WITH SOY-GINGER BUTTER

Steak with soy-ginger butter image

Try this steak with soy-ginger butter. It makes more butter than you'll need, but you could add it to corn on the cob or even on toast. Serve with chips

Provided by Diana Henry

Categories     Dinner, Main course, Supper

Time 35m

Number Of Ingredients 7

100g butter , at room temperature
4 spring onions , trimmed and finely chopped
1.5cm square piece of ginger , peeled and finely grated
2 tbsp soy sauce
2 tsp vegetable oil
4 x 250g steaks , about 3cm thick
Asian greens such as pak choi and chips, to serve

Steps:

  • Mash the butter with the spring onions ginger and soy, gradually working in the soy. You can leave it at room temperature or put it in the fridge to chill. Some people like to chill it a little, then shape it into a log and wrap it in baking parchment. You can then cut the butter into rounds.
  • Heat oven to 140C/120C fan/gas 2 and put an empty roasting tin or a metal baking sheet large enough to hold all the steaks into it.
  • Heat a large frying pan (or 2 smaller ones) - use a cast iron one if you can - for 7-10 mins before you want to start cooking. Add a tiny bit of flavourless oil. When the pan smokes, it's ready for the steaks.
  • Add the steaks to the pan. Quickly hold the fat on each of them against the base of the pan to render a little fat and colour it, then lay the steaks flat and press down with your tongs. Season with salt and flip the steaks over frequently, moving them round the pan and making sure you can hear them sizzle. If the pan gets too hot, and the surface is getting too dark, turn the heat down (you want a good dark colour, but you don't want to burn it). Once the surface is well coloured - this should take about 4 mins - transfer the steaks to the hot sheet or tin in the oven. Finish cooking the steaks in the oven - 2 mins for rare steak, 5 minutes for medium-rare. Serve with a knob of the soy butter melting over the top, some Asian greens and chips.

GINGER STEAK SALAD

Ginger Steak Salad image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 16m

Yield 1 serving

Number Of Ingredients 16

2 tablespoons soy sauce
1 tablespoon sherry
2 teaspoons brown sugar
2 cloves garlic, minced
1 rib eye, strip or sirloin steak
2 tablespoons olive oil
2 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon minced fresh ginger
1 tablespoon lime juice
1 tablespoon granulated sugar
2 cloves garlic, finely diced
1/2 jalapeno, seeded and diced
8 ounces salad greens (baby lettuce, endive, radicchio, etc.)
1 cup cherry tomatoes
2 green onions, sliced

Steps:

  • For the steak and marinade: Combine the soy sauce, sherry, brown sugar and garlic in a resealable plastic bag. Mix together, place the steak in the bag and seal. Marinate for 5 minutes (or up to 2 hours if you have time).
  • For the salad dressing: Combine the olive oil, soy sauce, ginger, lime juice, granulated sugar, garlic and jalapenos in a small bowl.
  • Heat a grill pan over medium-high heat. When hot, brush it with the olive oil. Remove the steak from the marinade, letting any excess drain off, and cook to medium rare on the grill pan, about 1 1/2 minutes per side. Transfer the steak to a plate, allowing it to cool slightly.
  • For the salad: In a bowl, toss the salad greens, tomatoes and half of the green onions with about three-quarters of the salad dressing.
  • Place the steak on a cutting board and slice thinly, then pour the juices from the plate over the top of the steak. Mound the tossed salad on a serving plate, then arrange the sliced steak on top. Pour the remaining salad dressing over the top. Sprinkle the remaining green onions over the salad and serve.

  • Toss steak in a medium bowl with sugar, sesame oil, 1 tsp. soy sauce, and 1 tsp. salt to coat and let sit 20 minutes.
  • Place a large skillet over high heat. Pour in vegetable oil and swirl to coat bottom of pan. The oil should be shimmering and you should see some wisps of smoke—if it’s not hot enough, the meat will steam instead of getting deeply browned.
  • Add steak to skillet in an even layer (it’s okay to crowd it a bit) and cook, undisturbed, until brown around the edges, about 2 minutes. Turn steak over and add onion, ginger, lots of pepper, and ⅓ cup water. Cook, tossing often, until onion is just tender and ginger is softened, about 2 minutes.

  • Batter the beef: Cut the flank steak into 1/4" thin strips, slicing against the grain. It may help to freeze the meat for 10-20 minutes before slicing. Whisk the cornstarch, flour, and white pepper together in a mixing bowl. Add the water and egg and whisk until the batter is smooth. Toss the beef strips in with the batter to coat.
  • Fry the beef: Add the vegetable oil to a pot, filling it 2-3 inches with the oil. Heat the oil to 350F. Add the beef strips, working in batches, and use a fork to stir and break them apart as they cook. Fry for 3-4 minutes, or until golden brown. Remove the beef strips with a slotted spoon and let them drain on a paper towel lined plate.
  • Cook the sauce: Whisk the sauce ingredients together in a bowl. Heat the sesame oil in a large skillet over medium-high heat. Add the garlic and ginger, and cook for 1 minute or until fragrant. Add the sauce to the skillet and let it bubble, while stirring, for 1-2 minutes until slightly thickened.
  • Finish: Add the fried beef strips to the skillet and toss to coat well in the sauce. Cook for another 1-2 minutes until the sauce is thickened and fully coats each beef strip. Garnish with sesame seeds and green onion.
