1/2 cup honey
1/3 cup soy sauce (see notes below)
4 garlic cloves (minced)
1 tablespoon ginger (finely diced)
1/4 cup water
2 pounds chicken wings (tips removed, and drumettes separated (24-26 chicken wings))
1 tablespoon avocado oil
salt and pepper (to taste)

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Use a paper towel to remove any moisture from the chicken wings.
  • Toss the wings with the oil, salt, and pepper.
  • Place a piece of parchment paper on a baking sheet then place a wire rack on top. Spread out the wings on a single layer on the baking sheet.
  • Bake for 40-45 minutes until crispy.
  • While the wings are cooking, make the sauce. Add the honey, soy sauce, garlic, ginger, and water to a small pot. Bring it to a boil and reduce the heat to low letting it simmer for 10 minutes - or until slightly reduced and thickened.
  • Remove the sauce from the heat and let it cool. It will continue to thicken as it cools.
  • Remove wings from the oven. Toss the wings in the sauce and place them back in the oven on the baking sheet and cook for an additional 10 minutes.

1 tablespoon soy sauce
1/2 teaspoon sugar
2 tablespoons fresh lime juice
1 tablespoon seasoned rice vinegar
Salt to taste
1 garlic clove, minced or puréed
2 teaspoons minced fresh ginger
1/4 cup plus 2 tablespoons grapeseed oil or sunflower oil
1 tablespoon dark sesame oil
1 to 2 serrano or Thai green chiles, minced (to taste), or 1/8 to 1/4 teaspoon cayenne
2 boneless skinless chicken breasts (most weigh 8 to 10 ounces)
Salt and freshly ground pepper
2 tablespoons all-purpose flour or a gluten-free flour such as rice flour or corn flour
2 tablespoons chopped cilantro
4 cups wild arugula or salad mix, rinsed and spun dry

Steps:

  • In a small bowl or measuring cup, whisk together the soy sauce, sugar, 1 tablespoon of the lime juice, the vinegar, salt, garlic, ginger, 1/4 cup of the grapeseed or sunflower oil and the sesame oil. Pour half of this mixture into a bowl large enough to accommodate the chicken breasts and add the remaining tablespoon of lime juice and the chiles or cayenne to the bowl. Cut each chicken breast into 2 equal pieces (3 if 12 ounces or more) and place in the bowl. Stir together and refrigerate for 15 to 30 minutes.
  • Remove chicken from marinade and pat dry with paper towels (discard marinade). Place two sheets of plastic wrap (1 large sheet if you have extra-wide wrap) on your work surface, overlapping slightly, to make 1 wide sheet, and brush lightly with olive oil. Place a piece of chicken in the middle of plastic sheet and brush lightly with oil. Cover the chicken with another wide layer of plastic wrap. Working from the center to the outside, pound chicken breast with the flat side of a meat tenderizer until about 1/4 inch thick. (Don't pound too hard or you'll tear the meat. If that happens it won't be the end of the world, you'll just have a few pieces to cook.) Repeat with the remaining chicken breast pieces.
  • Season the pounded chicken breasts with salt and pepper on one side only. Dredge lightly in the flour (you will not use all of it) and tap breasts to remove excess.
  • Turn oven on low. . Heat a wide, heavy skillet over high heat and add remaining 2 tablespoons grapeseed or sunflower oil. When oil is hot, place one or two pieces of chicken in the pan - however many will fit without crowding. Cook for 1 1/2 minutes, until bottom is browned is spots. Turn over and brown on the other side, about 1 1/2 minutes. (Do not overcook or chicken will be dry.) Transfer to a platter or sheet pan and sprinkle cilantro over the top. Keep warm in the oven.
  • Place arugula or salad mix in a bowl and toss with the remaining dressing. Distribute among plates or arrange on a platter and serve with the chicken.

8 bone-in skinless chicken thighs (you can also use 6 skinless legs or breasts)
3 tsp sesame oil
2 tbsp lime juice
2 tbsp honey
4 tbsp reduced-sodium soy sauce (use gluten-free soy sauce if you prefer)
2 tbsp fresh ginger (grated)
4 garlic cloves (finely minced or pressed)
1 pinch salt and pepper
chopped green onions garnish (optional)

Steps:

  • Start by combining the sesame oil, lime juice, honey, soy sauce, grated ginger, minced garlic, and salt and pepper in a shallow baking dish. Whisk these ingredients together with a fork and set everything aside while you prepare the chicken.
  • Add the bone-in, skinless chicken pieces to the baking dish with the marinade, making sure the chicken pieces are well-coated in the marinade. Cover the dish with a lid or some plastic wrap. Refrigerate for 1-2 hours
  • This is a dish that you can prepare earlier in the day and leave it to marinate for several hours until it's time to grill.

  • Mince the garlic and grate the ginger using a fine holed cheese grater or box grater. 2 cups broccoli florets

  • Tenderise the chicken strips using a meat mallet or the blunt edge of a cleaver. Rub with the sesame oil and set aside for 15 minutes.

You can make your own also. There are many recipes on the internet. You could eliminate it all together and still have yummy chicken wings.

1 1/2 lb chicken wings
1 Tbsp oil
1 inch piece ginger grated
4 clove garlic minced
2 Tbsp soy sauce
3 Tbsp sweet soy sauce
1/2 tsp white pepper

1/2 c water
XO SAUCE REDUCTION
1 Tbsp eel sauce
1 tsp chili garlic paste
2 Tbsp brown sugar
1 Tbsp xo sauce
1 tsp yuzu or lime juice
4 stalk(s) green onions large chop

Steps:

  • 1. Add oil to a large pot. Add the chicken and sear in batches until browned on all sides. Remove chicken to a plate. Add the ginger and garlic and cook 1 minute. Add the chicken back to the pot and add the soy sauce, sweet soy sauce, white pepper, sesame oil, and water. Bring to a boil. Reduce heat to a simmer and simmer about 20 minutes until chicken is done. Remove chicken to a plate and keep warm.
  • 2. To the pan drippings add the eel sauce, chili garlic paste, XO sauce, brown sugar and yuzo or lime juice. Bring to a boil and let reduce to a thick syrup texture. Add the chicken back to the pan and stir well. Add the green onions and stir.
  • 3. Serve immediately.

  • Dry the skin of each thigh with paper towels and season the flesh side with salt and pepper. I can’t tell you how much to add here, because it depends if you’re using regular soy sauce or low sodium, as well as your personal preference. When in doubt, use a little less, because you can always add more at the end if needed. Pour 1 tablespoon of oil (olive, canola, or vegetable) in a large skillet or braising pan. Arrange the chicken so that there’s just a little space between them and they’re not crammed. Season the dried skin side with salt and pepper, set aside.
  • In a large measuring cup or medium sized bowl, add the soy sauce, garlic chili paste (Sambal), garlic paste, ginger paste, rice wine vinegar, honey, brown sugar, dark soy sauce (if using), toasted sesame oil, and chili oil. Whisk until the sugar is dissolved. Taste this mixture. If you want it sweeter, add more brown sugar. If you want it spicier, add more Sambal or chili oil. When it’s perfectly balanced for your tastes, set aside.
  • Place the chicken in the oven and roast for 15 minutes. Remove, and pour in the soy braising liquid in until it goes up the sides of the chicken, but not too much — because this mixture boils in the oven and rises quite a bit. Please use my photo as a reference as to how much to put in. Pop it back in the oven and continue to cook until the internal temperature of the chicken registers 175 degrees on an instant-read thermometer, about 25-30 minutes longer. The sauce should be thickened slightly and sticky, but easily pourable.
