Steps:
- Preheat oven to 425 degrees Fahrenheit.
- Use a paper towel to remove any moisture from the chicken wings.
- Toss the wings with the oil, salt, and pepper.
- Place a piece of parchment paper on a baking sheet then place a wire rack on top. Spread out the wings on a single layer on the baking sheet.
- Bake for 40-45 minutes until crispy.
- While the wings are cooking, make the sauce. Add the honey, soy sauce, garlic, ginger, and water to a small pot. Bring it to a boil and reduce the heat to low letting it simmer for 10 minutes - or until slightly reduced and thickened.
- Remove the sauce from the heat and let it cool. It will continue to thicken as it cools.
- Remove wings from the oven. Toss the wings in the sauce and place them back in the oven on the baking sheet and cook for an additional 10 minutes.

- In a small bowl or measuring cup, whisk together the soy sauce, sugar, 1 tablespoon of the lime juice, the vinegar, salt, garlic, ginger, 1/4 cup of the grapeseed or sunflower oil and the sesame oil. Pour half of this mixture into a bowl large enough to accommodate the chicken breasts and add the remaining tablespoon of lime juice and the chiles or cayenne to the bowl. Cut each chicken breast into 2 equal pieces (3 if 12 ounces or more) and place in the bowl. Stir together and refrigerate for 15 to 30 minutes.
- Remove chicken from marinade and pat dry with paper towels (discard marinade). Place two sheets of plastic wrap (1 large sheet if you have extra-wide wrap) on your work surface, overlapping slightly, to make 1 wide sheet, and brush lightly with olive oil. Place a piece of chicken in the middle of plastic sheet and brush lightly with oil. Cover the chicken with another wide layer of plastic wrap. Working from the center to the outside, pound chicken breast with the flat side of a meat tenderizer until about 1/4 inch thick. (Don't pound too hard or you'll tear the meat. If that happens it won't be the end of the world, you'll just have a few pieces to cook.) Repeat with the remaining chicken breast pieces.
- Season the pounded chicken breasts with salt and pepper on one side only. Dredge lightly in the flour (you will not use all of it) and tap breasts to remove excess.
- Turn oven on low. . Heat a wide, heavy skillet over high heat and add remaining 2 tablespoons grapeseed or sunflower oil. When oil is hot, place one or two pieces of chicken in the pan - however many will fit without crowding. Cook for 1 1/2 minutes, until bottom is browned is spots. Turn over and brown on the other side, about 1 1/2 minutes. (Do not overcook or chicken will be dry.) Transfer to a platter or sheet pan and sprinkle cilantro over the top. Keep warm in the oven.
- Place arugula or salad mix in a bowl and toss with the remaining dressing. Distribute among plates or arrange on a platter and serve with the chicken.

- Start by combining the sesame oil, lime juice, honey, soy sauce, grated ginger, minced garlic, and salt and pepper in a shallow baking dish. Whisk these ingredients together with a fork and set everything aside while you prepare the chicken.
- Add the bone-in, skinless chicken pieces to the baking dish with the marinade, making sure the chicken pieces are well-coated in the marinade. Cover the dish with a lid or some plastic wrap. Refrigerate for 1-2 hours
- This is a dish that you can prepare earlier in the day and leave it to marinate for several hours until it's time to grill.
- When it's time to grill, remove the chicken from the fridge and let it rest at room temperature while you preheat the grill.
- When your grill is ready, turn the heat down to medium-low (if your grill is notoriously hot like mine is, then grill on low to be safe) and place the chicken pieces on the grill.
- Leave them for about 8 minutes, making sure you allow the bottom side to caramelize before turning. Flip them when they've achieved a nice brown colour on the bottom side and let them grill on the other side on medium-low (or low) for another 8 minutes, or until they reach an internal temperature of 165 degrees Fahrenheit (use an instant read meat thermometer).
- Remove them from the grill and let them rest for 2-3 minutes. Garnish with some chopped green onions and serve!

- Mince the garlic and grate the ginger using a fine holed cheese grater or box grater. In a small bowl stir together the brown sugar, soy sauce, garlic, ginger, some freshly cracked pepper (about 15 cranks of a pepper mill), and cooking oil. Place the chicken thighs in a shallow dish or a gallon size zip lock bag. Pour the marinade over the chicken and turn to coat. Cover the chicken and marinate for at least 30 minutes or up to a day (refrigerated).
- When ready to cook the chicken, heat a large skillet over medium flame. Once hot, add 1/2 Tbsp cooking oil and swirl to coat the bottom of the skillet. Add half of the chicken pieces and let cook until well browned on each side and cooked through. Remove the cooked chicken to a clean plate, then repeat with the second batch.
- Once all the chicken has been removed from the skillet, pour the leftover marinade into the skillet and allow it to come up to a boil. Whisk the marinade as it boils to dissolve any browned bits from the skillet. Let it continue to boil until it reduces to a thick glaze*. You can make your own also. There are many recipes on the internet. You could eliminate it all together and still have yummy chicken wings.

- 1. Add oil to a large pot. Add the chicken and sear in batches until browned on all sides. Remove chicken to a plate. Add the ginger and garlic and cook 1 minute. Add the chicken back to the pot and add the soy sauce, sweet soy sauce, white pepper, sesame oil, and water. Bring to a boil. Reduce heat to a simmer and simmer about 20 minutes until chicken is done. Remove chicken to a plate and keep warm.

- Dry the skin of each thigh with paper towels and season the flesh side with salt and pepper. I can’t tell you how much to add here, because it depends if you’re using regular soy sauce or low sodium, as well as your personal preference. When in doubt, use a little less, because you can always add more at the end if needed. Pour 1 tablespoon of oil (olive, canola, or vegetable) in a large skillet or braising pan. Arrange the chicken so that there’s just a little space between them and they’re not crammed. Season the dried skin side with salt and pepper, set aside.
- In a large measuring cup or medium sized bowl, add the soy sauce, garlic chili paste (Sambal), garlic paste, ginger paste, rice wine vinegar, honey, brown sugar, dark soy sauce (if using), toasted sesame oil, and chili oil. Whisk until the sugar is dissolved. Taste this mixture. If you want it sweeter, add more brown sugar. If you want it spicier, add more Sambal or chili oil. When it’s perfectly balanced for your tastes, set aside.
- Place the chicken in the oven and roast for 15 minutes. Remove, and pour in the soy braising liquid in until it goes up the sides of the chicken, but not too much — because this mixture boils in the oven and rises quite a bit. Please use my photo as a reference as to how much to put in. Pop it back in the oven and continue to cook until the internal temperature of the chicken registers 175 degrees on an instant-read thermometer, about 25-30 minutes longer. The sauce should be thickened slightly and sticky, but easily pourable.
