This soup highlights some of fall's best ingredients: fresh apples and sugar-sweet squash. It's delicious made with pears instead of apples, too. Partially cooking a hard-shell squash makes it easier to peel. Pierce the gourd in several places with a fork, microwave on HIGH for 6 to 10 minutes, depending on size, and then peel. If you prefer your soup on the thicker side, do not add all of the broth. Serve this soup with a Brussels sprouts salad or as a starter for your holiday dinner or fall entertaining. Garnish with bay leaves.

1.5 Tbsp Ginger root fresh, grated
1 medium Uncooked leek(s) white part only, coarsely chopped
4.75 oz Frozen apple juice concentrate (undiluted) about 1/2 cup
3 large Fresh apple(s) Golden Delicious, peeled, cored and cut into eighths
3 pound(s) Uncooked butternut squash peeled, seeded, cut in chunks (about 1 large squash)
4 cup(s) Canned chicken broth divided (or vegetable broth)
0.5 tsp Table salt
0.5 tsp Black pepper
0.5 cup(s) Fat-free half-and-half

Steps:

  • Combine ginger, leek and apple juice concentrate in a large pot; cover and simmer until leeks are tender, about 10 minutes. Add apples, squash and 1 cup broth; cover and simmer until very tender, about 1 hour.
  • Purée soup in pot using a hand-held immersion blender. Or purée soup in a blender in small batches (be careful not to splatter hot liquid) and return puréed soup to pot.
  • Add remaining 3 cups broth, salt and pepper; simmer until heated through, about 10 minutes. Stir in half and half and serve. Yields about 1 cup per serving.

Number Of Ingredients 10

2 small butternut squash (2 1/2 lb in total)
3 tablespoons unsalted butter
3 small granny smith apples, cored,peeled and chopped
1 1/2 cups finely chopped yellow onions
3 tablespoons minced peeled fresh ginger
2 cloves garlic, peeled and chopped
6 cups vegetable stock
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup whipping cream (optional)

Steps:

  • Position a rack in the middle of the oven and preheat to 450*F.
  • Line a jelly roll pan with tinfoil.
  • Halve the squash lenghtwise and with a sharp metal spoon scrape out and discard all the seeds and fibres.
  • Lay the squash halves, cut side down, on the pan and bake them until they are very tender when pierced with a fork-- about 40 minutes.
  • Remove the pan from the oven and when the squash is cool enough to handle, scoop out the flesh, including any well browned edges.
  • Chop and reserve the flesh.
  • In a large pot over medium heat, melt the butter.
  • Add the apple, onion,ginger and garlic and cook, uncovered, stirring once or twice until lightly browned.
  • (15 to 20 minutes) Add the stock, reserved squash, salt and pepper and bring to a simmer.
  • Partially cover the pan and cook the soup, stirring occasionally until the apples are very tender, about 30 to 35 minutes.
  • Remove from heat and cool slightly.
  • Puree the soup in batches in a food processor or blender, or force it through a food mill.
  • This soup can be prepared up to 3 days in advance, and will taste the better for it.
  • Cool, cover and refridgerate.
  • To serve, return soup to the pan.
  • Add the cream if you are using it, and heat, stirring often, until steaming, about 5 minutes.
  • Adjust the seasoning and ladle into bowls.
  • NOTE: A spoonful of sweetly caramelized apples and a dollop of ginger cream will transform this simple country soup into a dazzling starter.
  • Or, sprinkle it with crumbled Gorgonzola (about 1 cup), diced raw red apple (about 3/4 cup) and chopped pistachios or toasted pumpking seeds (about 1/2 cup) For Carmelized apples: melt 3 TBS unsalted butter.
  • Add 2 medium-large cored, peeled and diced Granny Smith apples and cook stirring often until lightly browned.
  • Add 1 TBS packed golden brown sugar, a pinch of salt and a generous grinding of black pepper and cook, stirring another 5 minutes until the apples are well browned and glazed.
  • Use hot.
  • For Ginger Cream: In a small bowl, whisk 1/3 cup chilled whipping cream into soft peaks.
  • Stir in 1 TBs fresh ginger juice, made by finely shredding the ginger on a grater and pressing it through a seive set over a small bowl.

  • Combine leek, ginger and apple juice concentrate in a large pot. Cover and simmer for 10 minutes or until leeks are tender. Add apples, squash, 1 cup of broth and 1 tsp splenda. Cover and simmer 1 hour or until very tender.
  • Puree soup using a hand-held immersion blender or in small batches in a regular blender.
  • Add remaining 3 cups of broth, salt and pepper. Simmer 10 minutes or until heated through. Stir in half and half. Serve and enjoy.

1 small onion, chopped
1 tablespoon butter
1 garlic clove, minced
6 cups cubed peeled butternut squash
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth
1 large apple, peeled and chopped
1/2 cup water
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1 teaspoon salt
1/2 cup half-and-half cream

Steps:

  • In a large saucepan coated with cooking spray, cook and stir onion in butter over medium heat until tender. Add garlic; cook 1 minute longer. Add the squash, broth, apple, water, thyme and salt. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until squash is tender. Cool slightly. , In a blender, process soup in batches until smooth. Return all to the pan; stir in cream and heat through (do not boil).
