SOY GINGER SALMON
Salmon is marinated in soy, brown sugar, juice, spices, and fresh ginger; then broiled to perfection! My family and friends rave about this fish with every bite. Even my husband, who wouldn't eat salmon, now asks when we're having it again. Please try, for you and your family's health!

GINGER-DILL SALMON
Salmon, gently roasted to a buttery medium-rare, stars in this make-ahead-friendly dish. Fruity citrus and dill join spicy radishes and ginger, and the result is a refreshing, jostling mix of juicy, crunchy, creamy, spicy and sweet. Both the salad and the salmon can be made two days ahead, and everything is good at room temperature or cold. To embellish further, consider baby greens, thinly sliced cucumbers or fennel, roasted beets, soba noodles, tostadas, furikake or chile oil.

Steps:
- Heat oven to 325 degrees. Line a sheet pan with parchment paper. Pat the salmon dry, then place on the tray skin-side down (if there is skin) and season with salt and pepper.
- In a medium bowl, stir together the dill, ginger and olive oil until combined. Season with salt and pepper. Spread half of the dill-ginger mixture over the top of the salmon. (Reserve the remaining dill-ginger mixture.) Bake until cooked through, 15 to 20 minutes. (You'll know the salmon is done when the fish flakes or an instant-read thermometer inserted into the thickest part is 120 degrees.)
- As the salmon cooks, cut off the top and bottom of the grapefruit and set the grapefruit down on one of the cut sides. Follow the curve of the fruit to cut away the peel and pith. Squeeze the peels into the remaining dill-ginger mixture to get out any juice. Cut the fruit in half from top to bottom, then slice into 1/4-inch-thick half-moons and remove the seeds. If your pieces are especially large, halve them again. Transfer the fruit and any juice on the cutting board to the bowl. Repeat with the oranges. Add the radishes, season generously with salt, and stir gently to combine.
- Break the salmon into large pieces, and divide across plates with the citrus salad. Peel and pit the avocado, then quarter lengthwise and add to plates. Season with salt. Spoon the juices from the bowl over top, and season with black pepper, another drizzle of olive oil, and flaky sea salt, if using.

- Make sesame cucumbers: Put the sesame seeds in a small dry skillet over medium heat. Cook, tossing, for 2 to 3 minutes, until toasted. Let cool. In a medium bowl, combine the cucumber, jalapeño, lemon juice, oil, and salt. Stir in dill and sesame seeds.Put the whole salmon fillet in a large ziptop plastic bag. In a small bowl, combine the soy sauce, honey, orange juice, and ginger. Reserve 3 tablespoons of the mixture and set aside. Pour the remaining mixture over the salmon. Squeeze out the air and seal the bag. Refrigerate for 15 minutes to let marinate (flip the salmon over halfway through so both sides marinate evenly).
- Preheat the broiler (with the oven rack about 4 inches from the top). Line a rimmed sheet pan with aluminum foil. Place the salmon on the prepared pan and discard the marinade. Broil for about 5 minutes, or until the top of the salmon begins to char. Pull the pan out and spoon half of the reserved soy sauce mixture over the salmon. Broil for 1 minute, then add the remaining soy mixture and broil for 1 minute more. The top should be nice and charred but not burned.
- You can check for doneness by inserting the tip of a paring knife into the thickest part of the salmon. If the salmon flakes easily but still has a slightly darker orange center (medium-rare to medium), then it’s done. If not, or if you like your salmon cooked more, then broil 1 to 2 minutes more. Cut into 4 pieces and serve with the sesame cucumbers.

- SALMON: Add everything from the ‘honey’ to the ‘sesame oil’ under the ‘salmon’ section to a shallow dish and whisk. Add salmon skin side down, flip, and let marinate flesh side down for at least 20 minutes. If time permits, 2-3 hours in the refrigerator works best. Remove from refrigerator 30 minutes before grilling. Soak the cedar plank (if using) in a rimmed baking sheet filled with water while the salmon marinates.
- DRESSING: Heat sesame oil in a skillet over medium heat. Add the ginger and garlic and sauté for 1 minute. Remove from heat. Add to a mason jar. Add the remaining ingredients for the dressing and shake the jar to combine. Taste and add a pinch of salt if desired.
- GRILL: Preheat grill to 400ºF. Drizzle romaine lightly with oil and sprinkle with a small pinch of salt and pepper. Remove the salmon from the marinade and place it on the cedar plank. Place plank on the grill, cover, and cook for 12-18 minutes or until the salmon is done (reaches 145ºF on a meat thermometer.) Check on the salmon often; spritz any flareups with water. When 4 minutes remain, add the romaine halves to the grill and cook them for about 30-60 seconds on each side. Remove plank carefully with tongs to a baking sheet.
- ASSEMBLE: Remove the romaine from the stem and chop. Add to a large bowl along with the cucumbers. Toss with dressing, start with ½ and add more as needed. Flake the salmon using two forks and add it to the bowl. Top with chopped almonds and toasted sesame seeds!
