2 tablespoons very finely chopped green onions

Steps:

  • Make ginger juice by grating the ginger and squeezing the gratings in a cloth to extract the juice. There should be about one tablespoon.
  • Mix ginger juice and all other ingredients in a bowl.

1 tablespoon olive oil
2 cloves garlic, minced
1 whole shallot, minced
1/2 tablespoon fresh ginger root, minced
1/4 cup sake
1 tablespoon sugar
Salt to taste
1 tablespoon Asian chile sauce
1 cup tomatoes, crushed

Steps:

  • Heat oil over medium heat in a saucepan. Add garlic, shallots and ginger. Saute for 30 seconds and add crushed tomatoes, sake, sugar and chile sauce. Simmer for 15 minutes. Remove sauce from heat and set aside. When cool, puree in blender until smooth. Reheat to serve.

This is a great marinade for steaks, and is wonderful for beef strips for stir-frys.

½ cup soy sauce
¼ cup real maple syrup
6 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon mustard powder
½ teaspoon sesame oil
¼ teaspoon hot pepper sauce
½ cup beer
4 (10 ounce) beef rib eye steaks

Steps:

  • In a medium size mixing bowl, combine soy sauce, maple syrup, garlic, ginger root, mustard powder, sesame oil, and Tabasco sauce; mix well to blend. Now add beer, and stir lightly to mix.
  • Prepare steaks by scoring any fatty outside areas on steak with a knife, (this prevents the steaks from curling when barbecuing). Place steaks in a casserole dish, and pour marinade over. Using a fork, punch holes in steaks so that the marinade penetrates into the steaks. Turn steaks over, and repeat punching holes.
  • Cover with clear wrap or foil, and let marinate in the refrigerator for at least 1 hour or longer. You can also refrigerate and marinate overnight.
  • Prepare and preheat barbecue to high heat. Place steaks directly on grill and sear one side for about 15 seconds. Turn steaks over and cook for about 5 minutes, then turn over and cook for another 5 minutes for medium-rare, depending on thickness. Test for doneness by cutting into the middle of the steak.

⅔ cup mirin (Japanese sweet rice wine)
1 cup soy sauce
4 ½ teaspoons rice vinegar
1 teaspoon sesame oil
⅓ cup white sugar
7 cloves garlic, minced
1 tablespoon minced fresh ginger
1 dash red pepper flakes
black pepper to taste

Steps:

  • Bring mirin to a boil in a saucepan over high heat. Reduce heat to medium-low, and simmer for 10 minutes. Pour in soy sauce, rice vinegar, sesame oil, and sugar. Season with garlic, ginger, pepper flakes, and black pepper; simmer an additional 5 minutes. Store in a tightly sealed container in the refrigerator.

Amazing Ginger-Garlic Steak Marinade image

This marinade tenderizes the steaks and makes them absolutely delicious. You won't need steak sauce for this one! I will sometimes use it on a big London broil which I'll slice against the grain. The result is tender and really delicious. I never measure anything for this. It's hard to mess up. Prep time doesn't include time marinating in the fridge.

4 steaks, any cut
1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons garlic powder
1 teaspoon ground ginger or 1 tablespoon fresh ginger, minced
1 teaspoon toasted sesame oil
1 teaspoon Worcestershire sauce
1 teaspoon black pepper

Steps:

  • Throw all ingredients in a Ziplock bag with your steaks.
  • Refrigerate overnight (tastes best), or for at least two hours.
  • Cook your steaks however you want.
  • Some people will probably scream unsanitary, but I like to boil down the marinade until it thickens in the same pan I cook my steaks in, and serve it as a pan sauce. I'm not dead yet!
  • Enjoy!

This is a wonderfully simple marinade that adds a great Asian flavor to steak. This steak is great on its own, or sliced into thin strips and served over a salad.

2 tablespoons reduced sodium soy sauce
1 tablespoon fresh ginger, minced
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 tablespoon sesame oil
1 tablespoon lime juice
1 -1 1/2 lb sirloin steak

Steps:

  • Whisk together ingredients for marinade and pour into a zip lock bag.
  • Salt and pepper both sides of steak, to taste.
  • Add the steak to bag and marinate in the fridge for 20 minutes to 1 hour.
  • Preheat broiler.
  • (I like to bring the steak to room temperature before I cook it).
  • Remove steak from bag into a shallow baking dish along with extra marinade.
  • Cook steak under broiler until done to your liking (about 5 minutes per side for medium rare, 7-8 minutes for closer to medium).
  • Let steak rest under foil about 5 minutes before serving.

1/2 cup soy sauce
2 green onions, chopped
6 tablespoons olive oil, divided
2 tablespoons unseasoned rice vinegar
2 tablespoons sake or dry Sherry
1 tablespoon golden brown sugar
3 garlic cloves, chopped
24 deveined peeled uncooked large shrimp (about 1 1/2 pounds)
1 cup mayonnaise
1 tablespoon chopped peeled fresh ginger
Cooked white rice

Steps:

  • Combine soy sauce, green onions, 4 tablespoons oil, vinegar, sake, brown sugar, and garlic in 13x9x2-inch glass baking dish; whisk marinade to blend. Add shrimp and toss to coat. Refrigerate at least 30 minutes and up to 1 hour, turning shrimp occasionally.
  • Blend mayonnaise and ginger in food processor until smooth. Transfer ginger aioli to small bowl and refrigerate.
  • Drain marinade from shrimp into small saucepan; bring to boil. Whisk 2 tablespoons boiled marinade into ginger aioli; reserve remaining boiled marinade.
  • Heat remaining 2 tablespoons oil in heavy large skillet over medium-high heat. Add shrimp; sauté until just opaque in center, about 4 minutes. Mound rice in center of plates. Arrange shrimp around rice; drizzle with ginger aioli. Serve, passing reserved boiled marinade.

  • Heat the oil in a skillet or wok over high heat. Add the pork, and fry until brown. The pork should have a dark crispy look to it. Do not cook on low or medium heat, as the juices will not cook fast enough to get a crispy texture. Discard leftover marinade.
