Although Ginger Rogers was a teetotaler, the actress and dancer inspired many ginger-flavored cocktails. This version is fairly modern - it was invented in the '90s at Zefiro, a popular Portland, Ore., restaurant.

Put 10 mint leaves in a tall glass; add 1/2 ounce ginger syrup and muddle with a wooden spoon. Fill the glass with ice and add 1 1/2 ounces gin and 1/2 ounce fresh lime juice. Top with ginger ale and stir to combine. Garnish with a lime wedge.

To make the ginger syrup, combine sugar, water, and ginger in a small saucepan over low heat. Simmer for 10 minutes, then strain out ginger pieces and allow to cool to room temperature.
In a cocktail shaker with ice, combine 1/2 oz ginger syrup, grapefruit juice, lemon juice, and gin. Shake well.
Pour soda water into a collin’s glass over ice. Pour in cocktail ingredients, stirring gently. Garnish with rosemary.
