For variety and color, I like to combine at least two types of vegetables in this fried rice recipe. It's a flexible dish, limited only by what's in the fridge and your imagination. -Becky Matheny, Strasburg, Virginia

2 teaspoons canola oil, divided
1 egg, lightly beaten
1/4 cup chopped sweet red pepper
1 tablespoon chopped green onion
1 garlic clove, minced
1 cup cold cooked instant rice
1/4 cup cubed cooked chicken
1 to 2 tablespoons soy sauce
1/2 teaspoon ground ginger
1 tablespoon shredded carrot

Steps:

  • In a large skillet, heat 1 teaspoon oil over medium-high heat. Pour egg into skillet. As egg sets, lift edges, letting uncooked portion flow underneath. When egg is completely cooked, remove to plate. Set aside., In the same skillet, saute pepper and onion in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the rice, chicken, soy sauce and ginger. Chop egg into small pieces; stir into skillet and heat through. Garnish with carrot.

3 cups basmati rice
1 teaspoon kosher salt
1 tablespoon unsalted butter
1/4 teaspoon grated fresh ginger
1/4 teaspoon lemon zest
1/4 cup chopped fresh cilantro, for garnish

Steps:

  • Place the rice in a large pot and rinse under cold running water until the water runs clear. Drain well and add 4 1/2 cups water to the pot. Sprinkle with the salt and add the butter, ginger and lemon zest. Bring to a boil, then reduce heat to a simmer. Cover and cook 15 minutes without removing the lid.
  • Remove the lid and fluff the rice with a fork. Cover again and keep warm until ready to serve. For drier rice, leave the lid off after fluffing. Sprinkle with the chopped cilantro before serving.

  • Rinse rice with water until water runs clear.
  • Heat butter or oil in pan over medium to low heat. Saute garlic, ginger & salt for about a minute at most or until fragrant. Add rice and stir well.
  • Add liquid. Bring to a boil.
  • Cover, reduce heat, simmer about 15 minutes or until water is absorbed and rice tender.

3 tbsp sunflower oil
100g ginger, finely sliced
50g garlic, finely sliced
100g small peeled cooked prawn
bunch spring onions, whites and greens separated and sliced
3 eggs, beaten
600g cooked rice (300g/11oz uncooked)
50ml rice wine or dry sherry
50ml light soy sauce

Steps:

  • Heat the oil in a wok. Add the ginger and garlic, then stir-fry briefly until just coloured. Add the prawns and the whites of the spring onions, and cook for a further 3 mins. Pour in the beaten egg, let it set for a couple of secs, then break it up and stir well to scramble. Add the cooked rice and stir-fry everything together for 10 mins. Add the rest of the spring onions, rice wine and soy, then toss everything together well. Serve immediately.

Easy, aromatic and perfect for dinner. This easy ginger chicken and rice recipe served with simple soy dressing is a weeknight dinner dream.

4 chicken thighs
2 tsp flaky sea salt
1 tsp cracked black pepper
2 tbsp vegetable oil
3 garlic cloves (crushed )
2 tsp crushed ginger
2 cups rice
4 cups water
½ cup soy sauce
1 tbsp rice vinegar
cucumber (sliced )
fresh cilantro / coriander
fresh mint

Steps:

  • Season chicken generously with salt and pepper.
  • Place a large, deep pan over medium heat, add a splash of oil and add the chicken thighs, skin-side down.
  • Allow to brown for 5-7 minutes until deep golden brown. Carefully turn over and cook for another 5 minutes. Remove from the pan and set aside.
  • In the same pan, add the ginger and garlic and cook for 30 seconds. Add the rice and stir to coat the rice in the oil.
  • Pour in the water and bring to a simmer. Place the chicken thighs on top of the rice then cover and allow to simmer gently for 10-15 minutes until the water has been absorbed and the rice and chicken are fully cooked.
  • Combine the soy sauce and rice vinegar and set aside.
  • Serve the ginger chicken and rice with sliced cucumber and fresh herbs. Drizzle the dressing over the chicken and rice.

Ginger Rice is one of my favorite jasmine rice recipes. It pairs perfectly with many Asian dishes and adds much more flavor to meals than traditional white rice.

2 1/4 cup water
1 cup jasmine rice (not instant)*
1 tablespoon ginger (, grated)
1 clove garlic (, minced)
1 tablespoon butter
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons scallions

Steps:

  • In a colander, rinse rice well, shaking off excess water.
  • Combine water, rinsed rice, fresh ginger, garlic, butter, kosher salt and pepper in a medium sauce pan.
  • Bring to a boil and then lower heat to a low simmer.
  • Cover and allow to cook for 20-25 minutes.
  • Fluff with a fork and serve.
  • Top with scallions or serve with your favorite meal.

3 tablespoons oil (peanut or sesame are good)
3 scallions, sliced
1 garlic clove (my addition) (optional)
2 tablespoons crystallized ginger, diced
3 cups cooked jasmine rice or 3 cups cooked basmati rice
salt

Steps:

  • Cook the rice and set aside.
  • Heat up the oil in a wok or saute pan on medium-high.
  • Lightly saute the scallions and garlic for about 30 seconds. DO NOT burn! Lower heat if necessary.
  • Using a sharp knife, cut up the crystallized ginger into very small pieces.
  • Toss the scallions, garlic and ginger with the rice. Season with salt to taste.

  • Heat 1/4 cup olive oil in large skillet over medium heat. Add green onions, shredded carrots, eggs, ginger paste, minced garlic, and salt. Stir gently until eggs are cooked through, 4 to 5 minutes. Transfer to a bowl.
  • Pour remaining 1/4 cup into the same skillet and add rice. Fry for 2 minutes. Add soy sauce, oyster sauce, Sriracha sauce, and sesame oil; stir to combine. Add egg mixture back into the skillet and stir gently to combine. Cook for 2 minutes more.
