GARLIC-GINGER PORK LETTUCE WRAPS



Garlic-Ginger Pork Lettuce Wraps image

Make succulent pork to fill lettuce wraps at home using your pressure cooker or your slow cooker, we've got directions for either! Add all your favorite lettuce wrap toppers or set out dishes for each so everyone can pick and choose their toppers.

0.25 cup reduced-sodium soy sauce
2 tablespoon packed brown sugar
2 tablespoon sherry or apple juice
1 tablespoon minced garlic
2 teaspoon grated fresh ginger
2 tablespoon vegetable oil
2 - 2.25 pound boneless pork loin chops (8), trimmed and cut into 1-inch cubes
1 cup chopped onion
1 8 ounce can water chestnuts, drained and finely chopped
2 teaspoon chili garlic sauce (sambal olek)
1 large head butterhead (Boston or Bibb), cored and separated into leaves
Toppings, such as shredded carrots, sliced radishes, chopped peanuts, sliced green onions, and/or chopped fresh cilantro

Steps:

  • In a small bowl stir together soy sauce, brown sugar, sherry, garlic, ginger, and chili garlic sauce. Set aside. Prepare as directed using desired cooker, below. Fast 6 minute cook time
  • For a 6 qt. electric pressure cooker use the saute setting to cook pork in hot oil, in batches if necessary, 4 minutes or until lightly browned. Add onion and water chestnuts. Pour soy sauce mixture over pork mixture. Lock lid in place. Set an electric cooker on high to cook 6 minutes. For stove top cookers, bring up to pressure over medium-high heat; reduce heat enough to maintain steady (but not excessive) pressure. Cook 6 minutes. Remove from heat. For both models, quickly release pressure. Open lid carefully. Using a slotted spoon, divide pork among lettuce leaves. Add desired toppings. Slow 4 hour low or 2 hour high cook time
  • In an extra-large skillet cook pork in hot oil over medium-high heat, in batches if necessary, 4 minutes or until lightly browned. Transfer to a 3 1/2- or 4-quart slow cooker. Add onion and water chestnuts. Pour soy sauce mixture over pork mixture in cooker. Cover and cook on low 4 hours or high 2 hours until pork is tender. Using a slotted spoon, divide pork among lettuce leaves. Add desired toppings.

1/2 cup white vinegar
1/4 cup sugar
1/8 teaspoon salt
2 medium carrots, julienned
1/2 medium onion, cut into thin slices
FILLING:
1 pound ground pork
1 tablespoon minced fresh gingerroot
1 garlic clove, minced
2 tablespoons reduced-sodium soy sauce
1 tablespoon mirin (sweet rice wine)
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon fish sauce, optional
ASSEMBLY:
8 Bibb lettuce leaves
1/2 English cucumber, finely chopped
1 small sweet red pepper, finely chopped
3 green onions, chopped
1/2 cup each coarsely chopped fresh basil, cilantro and mint
1 jalapeno pepper, seeded and finely chopped
1/4 cup salted peanuts, chopped
Hoisin sauce
Lime wedges

Steps:

  • In a small bowl, mix vinegar, sugar and salt until blended. Stir in carrots and onion; let stand at room temperature 30 minutes., In a large skillet, cook pork, ginger and garlic over medium heat 6-8 minutes or until pork is no longer pink, breaking up pork into crumbles; drain. Stir in soy sauce, mirin, salt, pepper and, if desired, fish sauce., To serve, drain carrot mixture. Place pork mixture in lettuce leaves; top with cucumber, red pepper, green onions, carrot mixture and herbs. Sprinkle with jalapeno and peanuts; drizzle with hoisin sauce. Squeeze lime juice over tops. Fold lettuce over filling.

1 1/4 cups white rice
2 teaspoons vegetable oil, plus more for brushing
1/4 cup low-sodium soy sauce
1 tablespoon Sriracha (Asian chile sauce), plus more for drizzling
1 1/2 teaspoons grated peeled ginger
1 large pork tenderloin (about 1 1/4 pounds), halved lengthwise
2 carrots, diced
1/2 English cucumber, diced
2 tablespoons fresh lime juice, plus wedges for serving
2 teaspoons packed light brown sugar
12 large Bibb or Boston lettuce leaves
Chopped fresh cilantro, for topping

Steps:

  • Combine the rice and 1 1/2 cups water in a medium saucepan; bring to a simmer over medium-high heat and cook until most of the water is absorbed, about 4 minutes. Reduce the heat to low; cover and continue cooking until all of the water is absorbed, about 12 more minutes. Uncover and transfer to a large bowl to cool slightly.
  • Preheat a large grill pan or grill over medium heat and brush with oil. Combine 2 tablespoons soy sauce, the vegetable oil, 1 1/2 teaspoons Sriracha and 1 teaspoon ginger in a bowl; rub all over the pork. Transfer the pork to the grill pan; cook about 8 minutes per side for medium doneness. Transfer to a cutting board and let rest 5 minutes; thinly slice.
  • Stir the remaining 2 tablespoons soy sauce, 1 1/2 teaspoons Sriracha and teaspoon ginger into the rice. Add the carrots, cucumber, lime juice and brown sugar and toss. Serve the rice and pork in the lettuce leaves; top with cilantro and drizzle with more Sriracha. Serve with lime wedges.

3/4 lb ground pork
1 red bell pepper, finely diced
1 garlic clove, minced (or 1 tsp. minced garlic)
1 tablespoon crushed ginger (from a jar)
1 tablespoon thai sweet chili sauce
1 tablespoon fish sauce
1 tablespoon sesame oil
1 (8 ounce) can water chestnuts (drained and diced)
2 scallions (thinly sliced)
2 tablespoons cilantro, chopped
1 head boston lettuce (leaves separated and rinsed)

Steps:

  • 1. Combine first 7 ingredients.
  • 2. Stir-fry mixture over high heat, breaking up pork, and cooking through until brown (about 8 minutes).
  • 3. Stir in remaining ingredients and remove from heat.
  • 4. Serve family style with pork mixture in a bowl and lettuce leaves stacked on a plate.
