SLOW-COOKED GINGERED PEARS

- In a small bowl, combine the ginger, brown sugar, pecans and lemon zest. Using a melon baller or long-handled spoon, core pears to within 1/4 in. of bottom. Spoon ginger mixture into the center of each. , Place pears upright in a 5-qt. slow cooker. Top each with butter. Cover and cook on low for 4-5 hours or until tender. Serve with ice cream and caramel topping if desired.

EASY POACHED PEARS
Bosc pears, available through April, become tender yet hold their shape well when poached. A spice-infused syrup gives them a pie-like flavor.

- In a large saucepan, combine lemon zest, cinnamon stick, allspice, ground pepper, apple cider, and water.
- Add pears. Cover with waxed paper to prevent discoloring. Bring to a simmer. Cook, turning pears occasionally, until easily pierced with the tip of a paring knife, but not falling apart, about 20 minutes. Remove pears from liquid; transfer to large bowl.
- Raise heat to high; boil cider mixture until reduced to a syrup, about 15 minutes. Discard cinnamon. Pour syrup over pears; refrigerate. To serve, slice off a sliver from the bottom of each pear (so it stands upright). Serve pears with lemon sorbet, if desired.

GINGER POACHED PEAR
Steps:
- Preheat oven to 400 degrees F.
- Bring ginger ale and white wine to 160 degrees F in medium saucepan. Add pear and poach for 15 to 20 minutes until the pear is fork tender.
- Cut philo in half and brush with butter, sprinkle with sugar, and bake until golden brown.
- Place ice cream on each piece of philo dough, then a pear half and drizzle with chocolate sauce.
GINGER-POACHED PEARS WITH RICOTTA AND BLUEBERRIES
This dish is so simple, yet it could be served at any elegant dinner party. It is equally good warm or cold and makes a great addition to a Sunday brunch.

- In a saucepan, bring the water, ginger, sugar, and lemon zest to a boil over medium-high heat. Add the pears, and when the pot returns to a boil, reduce the heat to medium-low to maintain the simmer. Cook the pears until very soft when pierced with a knife (but not falling apart), 12 to 15 minutes. Remove the pan from the heat and, using a slotted spoon, divide the pears among 4 dessert cups or ice cream dishes.
- Add the ricotta and cinnamon to the warm syrup and stir gently until very smooth. Top the pears with the warm cheese mixture, then tumble some fresh blueberries over each serving.

- Peel the pears and cut them in half lengthwise. Scoop out the cores with a teaspoon. Make sure you cut away the hard remains of the flower at the bottom of the pear. Arrange the pears in a circle inside the pan, cut sides up, thin ends towards the center.
- Mix the sugar, ginger root and water together in a pan. Bring to a boil. When the sugar has dissolved, pour the liquid and ginger slices over the pears.
- Bring the pears to a simmer over medium-high heat. Cover the pan, turn the heat down to low, and gently poach until the pears are tender, about half an hour. Paste the pears with the syrup from time to time. About 15 minutes into the cooking, flip the pears over, cut sides down, for even cooking. Check the liquid for sweetness. Add sugar to taste, plus a little more water if the pears look dry. The syrup should be light, not thick and sticky.
- When the pears are just tender, turn the heat off and, leaving the lid on, let the pears cool in the pan. They will continue cooking and give out more of their juices as they steam.
