1 cup water
1 cup white sugar
2 cups fresh cranberries
1 (1 inch) piece fresh ginger, peeled
1 cinnamon stick

Steps:

  • Bring water and sugar to a boil in a pot over medium heat; boil for 5 minutes stirring occasionally. Add the cranberries, ginger, and cinnamon stick; return the mixture to a boil and cook until the cranberries start popping, about 5 minutes. Transfer the sauce to a shallow container; chill in refrigerator until cold, about 3 hours.

1 cup maple syrup
1 (12 ounce) bag fresh cranberries
1 tablespoon brown sugar
1 dash lemon juice
1 tablespoon brandy

Steps:

  • Combine water and maple syrup in a saucepan; bring to a boil. Add cranberries to syrup mixture and cook at a boil until berries pop, 10 to 15 minutes. Stir brown sugar and lemon juice into cranberries until brown sugar is completely dissolved. Mix in brandy.

It's just not Thanksgiving without cranberry sauce. More of a jam than a sauce, this one is cooked low and slow, with aromatic kicks from ginger, orange zest, and maple syrup. Clearly, it's destined for turkey, but we'd also pair it with cheese, or even drizzle it over ice cream.

1 1/2 pounds cranberries
2 tablespoons orange zest
2 tablespoons ginger, peeled and chopped
1 1/2 cups dark brown sugar, packed
1/2 cup maple syrup
1/4 cup red wine vinegar
1 1/2 teaspoons fine sea salt
1/2 cup sugar
1 whole nutmeg

Steps:

  • Combine cranberries, orange zest, ginger, brown sugar, maple syrup, vinegar, salt, and sugar in a saucepan, and bring to a simmer over medium heat. Reduce heat to low and cook uncovered, stirring occasionally, until sauce is thick and jammy, 1½-2 hours.
  • Remove from heat when the sauce is thick on a spoon and doesn't want to shake off. Stir in freshly grated nutmeg. Allow to cool at room temperature, then refrigerate. Sauce will keep airtight in the refrigerator or freezer for at least 2 weeks.

1/2 cup organic maple syrup
1/2 cup balsamic vinegar
1 1/2 ounces fresh organic ginger, grated
1/4 tsp Himalayan sea salt
3 organic firm pears, sprialized or sliced thin
zest of 1 organic lemon
juice of 2 organic lemons
zest and juice of 1 organic orange
20 ounces fresh organic cranberries, picked over

Steps:

  • In a non-reactive large saucepan, combine maple syrup, vinegar, ginger, and sea salt. Bring to a gentle boil over medium heat. Add the pears, cover and cook until crisp tender, about 5 minutes. Add the citrus zests, juices, and cranberries to the pot. Simmer over medium heat, stirring often, until cranberries begin to pop - about 10-15 minutes. Return pear mixture to cranberries and cook for 5 minutes more. At this point you can use an immersion blender to break up the cranberries some or leave them "whole" style. For canning: Pour, while hot, into prepared hot jars, leaving ¼-inch head space. Adjust caps. Process 10 minutes in boiling water bath. Let cool overnight before checking seals. For refrigeration: Transfer to Mason jars and let them come to room temperature before covering and refrigerating.
