OLD FASHIONED SCOTTISH APPLE AND GINGER CHUTNEY



Old Fashioned Scottish Apple and Ginger Chutney image

A delightful apple chutney with the added kick of ginger. I make this every autumn when I harvest my apples from the garden - you can use windfall apples too. Chutney is such an interesting preserve as it combines sweet and savoury flavours, making it an ideal accompaniment for a range of dishes such as cold meats, salami, ham, pasties, pies and is essential in a traditional Ploughman's Lunch! I also add chutney to my curries, tagines and winter stews. The word chutney is derived from the Hindu word "chatni" meaning strongly spiced. Try to use good cooking apples with plenty of flavour and taste for the best results. This is based on a family recipe and is a mellow and mild type of chutney.

1 lb onion, weight is for onions when peeled and finely chopped
2 lbs cooking apples, weight is for apples when peeled, cored and roughly chopped
4 ounces sultanas
1 ounce fresh gingerroot, grated
1 teaspoon dried ginger powder
2 teaspoons mixed spice
1 lb soft brown sugar
1/2 pint malt vinegar
1/2 pint cider apple cider vinegar
1/2-1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place all the prepared onions and apples into a large preserving pan and add the remaining ingredients.
  • Bring slowly to the boil and then lower the heat so that chutney cooks at a rolling boil.
  • Stir the chutney regularly and make sure it does not "catch" and burn on the base of the preserving pan.
  • Keep on cooking until the chutney is the consistency of a thick jam and all the liquids have dissolved.
  • (A trick to check if it is cooked is to draw your wooden spoon across the chutney, if the space that is left fills up with liquid, the chutney is not ready yet!).
  • Spoon the hot chutney into hot and sterile jars and seal immediately.
  • Makes about 4 lbs chutney.
  • Store in a dark and cool place and leave to mature for at least 2 weeks.
  • Will keep in ideal storage conditions for up to 2 years+.

1 medium fuji apple, chopped
1/2 yellow onion, chopped
1 garlic clove, minced
1/2 cup walnuts, chopped
1 tablespoon bacon fat or 1 tablespoon oil
1/4 cup raisins
1/4 cup maple syrup
1/2 teaspoon ground ginger
1/4 teaspoon fresh ground pepper
salt, to taste
1 dash ground cayenne pepper (optional)

Steps:

  • Heat fat or oil in cast iron skillet over med-low heat. Saute apple, onion, garlic, walnuts, and raisins for several minutes until onion becomes translucent. Add spices. Add syrup, a spoonful at a time, stirring frequently until hot and well-blended. Eat with a spoon or serve with meat or fish.

This is a spicy spin on the old classic, pork chops & apple sauce! Chutney can be made several days in advance and refrigerated, or frozen and served any time. Variation: If you like it spicy, try using habaneros instead of jalapenos!

4 -6 pork chops
salt
pepper
4 -6 teaspoons minced garlic
4 -6 teaspoons olive oil
2 granny smith apples
fresh ginger
2 tablespoons minced garlic
1 -2 fresh jalapeno pepper
2 chopped green onions
2 tablespoons lemon juice
1/4 cup apple cider vinegar
1/8 cup golden raisin
1 1/4 cups sugar

Steps:

  • Place pork chops in baking dish.
  • Salt and pepper both sides.
  • Drizzle about 1 tsp per chop over top and spread minced garlic thinly over top.
  • Cook at 375°F for about 45 minutes.
  • Peel, core, and chop apples into 1 inch pieces.
  • Place apples in saucepan with lemon juice, garlic, sugar and vinegar.
  • Peel ginger. You want about as much as the size of the top digit of your thumb. Mince it finely and add to pot.
  • Mince jalapeños and onions and add to pot.
  • Bring mixture to a boil. Then cover and simmer on low, stirring frequently.
  • When apples start to become soft (about 30 min), add in raisins.
  • Simmer over medium heat until apples are very soft. Turn off heat and mash with a potato masher. Leave it pretty chunky.
  • Serve pork chops with about 1/8-1/4 cup of the apple chutney over the top.

4 large Granny Smith apples, peeled, cored, and chopped
2 cups minced onion
1 1/2 cups cider vinegar
1 1/2 cups firmly packed dark brown sugar
1 cup golden raisins
1/4 cup minced peeled fresh gingerroot
1 red bell pepper, minced
3/4 teaspoon dry mustard
3/4 teaspoon salt
1/2 teaspoons dried hot red pepper flakes

Steps:

  • In a large saucepan combine the apples, the onion, the vinegar, the brown sugar, the raisins, the gingerroot, the bell pepper, the mustard, the salt, and the red pepper flakes, bring the mixture to a boil, stirring, and cook it over moderate heat, stirring occasionally, for 40 minutes, or until it is thickened. Spoon the chutney into glass jars with tight-fitting lids. The chutney keeps, covered and chilled, for 2 weeks.

Cooking spray
1/4 cup chopped red onion
1 medium garlic clove, minced
2 medium Granny Smith apples, peeled and chopped
1/4 cup fresh orange juice
1 tablespoon plus 1 teaspoon light brown sugar
2 teaspoons minced peeled gingerroot
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1/8 teaspoon pepper

Steps:

  • Lightly spray a small saucepan with cooking spray. Cook the onion and garlic over medium heat for about 3 minutes, or until the onion just softens, stirring frequently.
  • Stir in the remaining ingredients. Bring to a simmer. Reduce the heat and simmer for 20 minutes, or until the apples are tender and the liquids have reduced to 1 to 2 tablespoons, stirring occasionally. Serve warm or transfer to an airtight container and refrigerate for about 1 hour to serve chilled. Refrigerate any leftovers for up to three days.

3 cups prepared granny smith apples, about 5 large or 1 red bell pepper, seeded and chopped
2 cups chopped onions
2 cups dark brown sugar, lightly packed
1 1/2 cups cider vinegar
1 cup golden raisin
1/4 cup ginger, root (peeled and minced)
3/4 teaspoon ground mustard
3/4 teaspoon salt
1/2 teaspoon red pepper flakes

Steps:

  • Prepare jars, lids and bands.
  • Peel, core and coarsely chop apples. Measure 3 cups.
  • Combine prepared apples and remaining ingredients in a large stainless steel saucepan. Bring to a boil, stirring constantly.
  • Boil gently, uncovered, stirring occasionally for 40 minutes. Remove from heat.
  • Ladle chutney into prepared jars leaving a 1/2 inch headspace. Using nonmetallic utensil, remove air bubbles and adjust headspace, if required, by adding more chutney.
  • Process filled jars for 10 minutes in a boiling water bath. Adjust time
