GINGER BEER CONCENTRATE
Mix this fiery ginger beer concentrate with club soda to make homemade ginger beer. Adjust the amounts of sweetener, club soda and lime to suit your tastes. Preserve leftover concentrate by freezing it in ice cube trays.

- In a blender or food processor, liquefy the ginger and 1 cup of water for 3 minutes. Strain the juice into a large bowl or pitcher. Transfer the ginger pulp back to to the blender or food processor, add another 1/2 cup of water, and liquefy again. Strain again, adding the liquid to the first batch. Again transfer the pulp along with another 1/2 cup water, liquefy again, and add to the liquid. Press on the solids with the back of a big spoon to squeeze out as much of the juice as you can.
- Discard the mashed solids and rinse out your blender/food processor. Pour the liquid into the blender/food processor. Pour in the lime juice and 1 1/4 cups sweetener. Blend for 30 seconds. To taste for sweetness, pour about 2 ounces ginger concentrate into a glass along with about 8 ounces of club soda. If it's not sweet enough, blend in more sweetener until it reaches your preferred sweetness.
- Refrigerate up to 3 weeks. Shake before serving. Add a squeeze of fresh lime to your ginger beer before serving. Fresh mint and/or candied ginger make nice garnishes as well.

Fresh mint limeade is so delightful. You can whip up a batch in no time using limeade concentrate, or make the real deal with fresh lime juice.

- To make mint limeade with concentrate add mint leaves and ice to a large pitcher. Mash a little with a wooden spoon to muddle the mint. Add limeade concentrate and water according to package directions. Stir and serve garnished with lime and mint.
- To make mint limeade with fresh lime juice, crush mint leaves with ice in a pitcher, using a wooden spoon to muddle the mint. Pour in lime juice, sugar and water. Stir until sugar is dissolved. Pour through a strainer into ice-filled glasses. Serve garnished with lime and mint.
- Swap sparkling water for still water for a sparkling drink.

- Mix the 1 cup of water with the ginger and squeeze through a strainer to get ginger concentrate.
- Add sugar and lime juice.
- Stir until all the sugar is dissolved. (If you like it sweeter you can add more, to taste, at this point.).
- Pour into bottles and refrigerate. Chill well.
- When ready to serve, add a teaspoonful of concentrate to chilled water or sprite and mix well.
- Serve garnished with a mint leaf.

GINGER-LIMEADE CONCENTRATE

- To make ginger juice, liquify ginger in a food processor with about 4 tablespoons of lime juice; then using a ricer, cheesecloth, or by pressing (hard!) the pulp through a sieve with the back of a spoon over a measuring cup, extract all of the liquid from the pulp. You should have just about 3/4 cup of ginger or slightly more, or slightly less. Exact amount not necessary but try to have at least 3/4 cup of juice. Toss pulp. Squeeze limes. In a large bowl, pour boiling water over sugar, stirring to dissolve. Stir in ginger and lime juices. The recipe is easily halved, and leftover concentrate can be frozen for future use.

- Transfer cherry puree to a stainless steel saucepan over medium-high heat. DO NOT BOIL. Add lime juice and sugar and stir to combine.
