PORK TENDERLOIN WITH SOY, GINGER, AND LIME

Pork Tenderloin with Soy, Ginger, and Lime image

This Asian-style marinade transforms a mild cut of pork into an exotic dish. Serve it with a mix of summer vegetables, such as Sauteed Snap Peas with Scallions and Radishes.

HONEY-SOY BRAISED PORK WITH LIME AND GINGER

Honey-Soy Braised Pork With Lime and Ginger image

This is a wonderfully simple and hands-off way to prepare a flavorful hunk of meat, equally suited to a weeknight or a dinner party. There is no need to brown the pork first because the meat gets appealingly dark and caramelized while braising in the rich combination of soy sauce and honey. Fresh cilantro, scallions and a squeeze of lime added just before serving bring freshness. This meal is flexible: It works over rice or other whole grains, tossed with noodles or wrapped in lettuce leaves.

Provided by Sarah DiGregorio

Categories     dinner, weekday, meat, roasts, main course

Time 4h

Yield 6 to 8 servings

Number Of Ingredients 10

3 to 4 pounds boneless, skinless pork shoulder, trimmed of big hunks of fat and cut into 2 pieces
8 large garlic cloves, smashed and finely chopped
3 tablespoons minced fresh ginger (from one 3-inch piece)
1 teaspoon red-pepper flakes, plus more to taste
2 teaspoons finely grated lime zest and 2 tablespoons juice (from 1 lime), plus more lime wedges for serving
1 cup tamari or low-sodium soy sauce (see Tip)
1 cup honey
1 tablespoon toasted sesame oil
Cooked rice, noodles or lettuce cups, for serving
Toasted sesame seeds, sliced scallions and chopped cilantro, for topping

Steps:

  • Heat the oven to 325 degrees. Place the pork in a large Dutch oven that has a lid. Scatter the garlic, ginger, red-pepper flakes and lime zest over the top. In a measuring cup, whisk together the tamari, honey and sesame oil, then pour it over the pork. Using tongs, turn to coat all sides of the pork in the sauce, and spoon some over the top so that some of the garlic and ginger is on top of the pork. Cover, transfer to the oven and cook for 2 hours.
  • Uncover the pot and flip both chunks of pork. Cover the pot and braise until the pork shreds easily with a fork, about 1 more hour. Transfer to the stovetop.
  • Using tongs, transfer the pork to a serving platter or a large shallow serving bowl. Using a ladle, skim and discard the excess fat off the surface of the cooking liquid remaining in the Dutch oven, if desired. Bring the sauce to a boil over medium-high heat and let it simmer until reduced and slightly syrupy, about 8 minutes.
  • While the sauce simmers, coarsely shred the pork using two forks. Sprinkle the lime juice over the top of the meat. Drizzle about half the sauce over the top of the shredded meat, then toss to combine. Serve over rice or noodles or in lettuce cups. Top with sesame seeds, scallions and cilantro. Pass the remaining sauce at the table, if desired, as well as extra lime wedges and red-pepper flakes.

GINGER LIME PORK CHOPS

Ginger Lime Pork Chops image

I was looking through one of my old cookbooks for some new inspiration and came across this recipe. Since I had some beautiful fresh limes, I gave it a go. The meat comes out so beautifully tender and flavourful. The minimum marinating time is 1 hour but if you can marinate the chops longer, by all means do so. Marinating time is included in the prep time.

Provided by Irmgard

Categories     Lime

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 6

4 pork loin chops, around 1-inch thick
2 limes
1/4 cup vegetable oil
1 tablespoon fresh ginger, grated
1 teaspoon ground coriander
1/2 teaspoon ground cumin

Steps:

  • Trim the fat from the pork chops.
  • Place in a single layer in a dish.
  • Grate the zest and squeeze the juice from the limes.
  • Combine the juice and zest with the oil, ginger, coriander and cumin and mix well.
  • Pour over the chops, cover and refrigerate for at least 1 hour, or preferably over night, turning occasionally.
  • Barbeque over medium hot coals about 8 to 10 minutes on each side or until faintly pink on the inside, basting often with the marinade.

GINGER-LIME CHICKEN

Ginger-Lime Chicken image

Though this may look like regular old chicken, don't be fooled: It's buzzing with the bright flavors of ginger and lime. Mayonnaise is the secret ingredient in this recipe, which is a trick J. Kenji López-Alt has written about. When slathered on boneless chicken and cooked, the beloved condiment carries flavor, sticks to the meat well, encourages browning and prevents the pieces of lime zest and ginger - or whatever seasonings you choose - from burning. Try this technique first with ginger and lime zest, then experiment with grated garlic, jalapeño, lemon, Parmesan and whatever else you can imagine. Serve with a pile of white rice and a fresh green salad topped with thinly sliced avocado.

Provided by Ali Slagle

Categories     dinner, weekday, poultry, main course

Time 15m

Yield 4 servings

Number Of Ingredients 5

1 1/2 to 2 pounds boneless, skinless chicken thighs or breasts
Kosher salt and black pepper
1/3 cup mayonnaise
1 tablespoon lime zest (from about 2 limes), plus lime wedges, for serving
1 tablespoon finely grated fresh ginger (from a 3-inch piece of peeled ginger)

Steps:

  • Pat the chicken dry and season all over with 1 1/2 teaspoons salt. In a medium bowl, stir together the mayonnaise, lime zest and ginger; season with salt and pepper. Add the chicken to the mayonnaise mixture and stir to coat. (The chicken can sit in the marinade for up to 8 hours in the fridge. Let come to room temperature before cooking.)
  • To grill: Heat a grill to medium-high. Grill the chicken over direct heat until cooked through and juices run clear, about 5 minutes per side for thighs and about 4 minutes per side for breasts, turning as necessary to avoid burning.
  • To cook in a skillet: Heat a large skillet over medium-high. Cook the chicken until juices run clear, about 5 minutes per side for thighs and about 4 minutes per side for breasts.
  • Serve chicken with lime wedges, for squeezing on top.

GINGER LIME PORK TENDERLOIN

Ginger Lime Pork Tenderloin image

I made this up one night with garlic mashed potatoes and my husband made me swear to include it in the rotation. It originated from a marinade my mother had for moose meat, but the lime and chili garlic sauce adds a fresh twist. Warning: I didn't measure; it's all approximations to your taste!

  • Start by prepping all of your fresh ingredients -- removing the stems from the cilantro, juicing the limes, and slicing the green onions, shallots, and ginger. For the green onions, you're going to use the whole onion - the white bulb will be sliced and sautéed while the green part will be sliced and served as garnish. For the ginger, it's easiest to peel with a carot peeler, then slice into smaller pieces to add to a food processor to mince and/or slice thinly for the garnish. I have some great tips about ginger in the video below. Once you're ingredients are prepped, the recipe comes together really fast.
  • Heat the oil in a medium sized sauté pan, then add the sliced white bulbs from the green onions, garlic, and minced ginger and sauté until translucent.
  • Next, add the pork or chicken and cook thoroughly. When it's about half way done cooking, add the fish sauce and half the lime juice. Save the other half cup.
  • Once the pork is done cooking, add it to a large mixing bowl, pour the remaining lime juice on top and stir together.
