LEMON GINGER SHRIMP
Barbequed shrimp marinated in lemon and ginger with a hint of sesame.

Steps:
- In a blender or food processor, process the olive oil, sesame oil, lemon juice, onion, garlic, ginger, cilantro, paprika, salt, and pepper until smooth. Reserve a small amount for basting. Pour the remaining mixture into a dish, add shrimp, and stir to coat. Cover, and refrigerate for 2 hours.
- Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
- Lightly oil grill grate. Grill shrimp for 2 to 3 minutes per side, or until opaque. Baste with reserved sauce while cooking.

GRILLED LEMON GINGER CHICKEN
Steps:
- Place the chicken breasts in a large resealable plastic bag.
- Combine the remaining ingredients and pour them over the chicken.
- Seal the bag and allow it to marinate in the refrigerator for 30 minutes to 1 hour.
- Preheat the grill for medium heat.
- Remove the chicken from the bag and reserve the marinade.
- Place chicken on a lightly oiled grill grate and brush with marinade two to three times during the first half of the cooking time.
- Cook the chicken breasts for 20 minutes or until temperature reaches 165 F/75 C at the center (or thickest) part of the breast.

REFRESHING LEMON-GINGER DRESSING
This dressing is wonderfully light and tangy; serve over salad. It goes perfect with my squished kale salad (see my recipe box for this). Made as directed, this recipe is gluten free, wheat free, soy free, dairy free, and corn free. I use my Vitamix® to blend the dressing together. Enjoy!

GINGER AND LEMON MARINADE
This is really easy with my microplane--I just grate the ginger and garlic into a measuring cup, add the rest of the ingredients and nuke it in the microwave til it's all melted. This is good with any kind of fish, chicken or pork tenderloin, too.

- Mix all the ingredients in a small saucepan over moderate heat and stir until the butter is melted, or use the microwave.
- Marinate seafood or meat 30 minutes to 2 hours (any more and the lemon starts to "cook" the meat.

LEMON GINGER SALMON
Our favourite fish recipe from Johanna Burkard (author of The Comfort Food Cookbook, 300/400 Best Comfort Food Recipes - my favourite cookbooks). I often use steelhead trout instead of the salmon, chives instead of the green onions and bottled ginger instead of the fresh but never omit the lemon juice and zest, or the sesame oil.

Steps:
- Chop green onions. Reserve green tops for garnish.
- In a bowl, combine white part of onions, ginger root, garlic, soy sauce, lemon juice, lemon zest, sugar and sesame oil.
- Place salmon fillets in a single layer in a shallow baking dish. Pour marinade over; let stand at room temperature for 15 minutes or in the fridge for 1 hour.
- Preheat oven to 425°F.
- Bake, uncovered, for 13-15 minutes or until salmon turns opaque.
- Garnish with reserved green onions. Sesame seeds also make a nice garnish.
- Salmon could be grilled or microwaved instead of baking in the oven.
GINGER-LEMON SAUCE

- Using a Japanese ginger grater or very fine holes on grater, grate ginger to make 2 teaspoons ginger shreds and juice. In a small bowl mix ginger with remaining ingredients. Let stand 10 minutes. Pour sauce through a fine strainer and serve with pan-fried scallops.;
GINGER LEMON MARINADE

- n a small bowl or measuring cup whisk together lemon juice, soy sauce, oil, sugar and ginger. Set aside 1/3 of the mixture in a small bowl. Place salmon in a shallow dish and pour the rest of the marinade over the top. Let marinate at room temperature for 20 minutes, turning once or twice. Grill or broil salmon over medium heat, turning once with a wide spatula and brushing with excess marinade until salmon is cooked to your liking (about 10 minutes depending on thickness.) Sprinkle with pepper and serve with reserved marinade for drizzling. Makes 4 to 6 servings.

- In a bowl mix the olive oil, garlic, ginger, lemon juice, dijon, salt and pepper. Stir a few times to melt the salt and blend the dijon. Pour the mixture in a ziplock bag or tupperware, and add the salmon. Close the tupperware (or seal the bag) and shake a few times to coat the salmon (work the marinade around with your hands if it’s in a ziplock bag). Put in the fridge and marinate up to 10 hours (or at least 2 hours).
- The rest is up to you, you can grill or pan fry your fish. If you are cooking your fish in a pan, do it on medium/high heat and keep an eye on the ginger and garlic as they will burn if cooked for too long.
- This recipe won’t give you crispy skin even if you begin cooking the salmon in a really hot pan, so discard of the skin once done eating. Cook the fish 3-4 minutes on each side. Sprinkle with fresh parsley, season with salt and pepper and serve (a spinach salad pairs really well this dish).
