MOLASSES (LASSIE) BUNS
I brought this recipe home from Newfoundland, where my family was vacationing. It's a very robust soft cookie (not really buns) recipe and reflects the robust life on the big island. It is especially good eaten warm right out of the oven, but keeps well. Great for the winter holidays (lots of spice). If you like ginger snaps,...

Steps:
- 1. Mix all dry ingredients. Cut in butter and mix until lumps of butter have been broken up and well-distributed. Make a well in the middle of the mixture and add the molasses. Mix well, adding the warm water as needed.
- 2. Flour a cutting board or flat countertop and roll dough out to desired thickness (I usually roll it out to about 3/8" thick.) Take a large glass and, using the rim, cut out large circles. Turn them onto a greased cookie sheet.
- 3. Bake for 15-20 minutes at 400 degrees F. (Time depends on the oven. I never go over 15 minutes and cookies remain soft). Recipe makes about 4 dozen large cookies. I generally halve all the ingredients to make a smaller batch.

MELISSA'S GRANDMA'S GINGER LACE COOKIES
If you've ever wondered why our pastry chef Melissa is so good, you need only dig into her family history to realize that she comes from a long line of talented bakers. This recipe from her great-grandmother Formanek dates from the WWI era, hence no butter. These freeze well.

GINGER MANGO LASSI
Steps:
- To remove the flesh of the mango, cut the flesh away from the pit in 2 large pieces. Use a paring knife to cut through the flesh (but not through the peel) in a crisscross grid pattern. Use your thumbs to press against the skin side and pop the mango cubes up. Cut across the bottom, along the peel and add the cubes to the blender.
- Peel ginger. Grate ginger finely into bowl. Use fingers to squeeze juice out of gratings. Discard juiced gratings.
- Put ginger and remaining ingredients in the blender and blend until thick and smooth.
- If you don't have a blender you can still make the drink: Just whisk everything but the ice together in a mixing bowl. Fill glasses with ice and pour the mixture on top.

- First, toast the pecans at 350 degrees F so that they can cool to room temperature while you prepare the rest of the recipe.I toast whole pecans on a baking sheet for 10-12 minutes tossing them at the half way point. I then cool them and break each one into 2-4 pieces by hand. This little extra effort ensures nice big crunchy bits of pecan in every bite.
