GINGER HONEY DRUNK CHILI



Ginger Honey Drunk Chili image

My unique chili recipe starts each bite with a somewhat-sweet ginger overtone which then melds into a full bodied chile spice. This recipe is the stove-top version but it can easily be done in slow cooker as well (starting with step 4).

¼ cup bacon drippings
1 carrot, minced
1 cup chopped red bell pepper
1 cup chopped green bell pepper
1 poblano pepper, diced
2 jalapeno peppers, minced
1 habanero pepper, minced
2 cups chopped onion
6 cloves garlic, minced
3 pounds ground beef
2 cups tomato paste
1 cup tomato sauce
1 cup dark beer (such as Negra Modelo®)
2 fluid ounces tequila
1 cup chicken broth
3 tablespoons chili powder
2 teaspoons hot paprika
2 teaspoons ground cumin
1 teaspoon ground coriander
2 teaspoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
2 teaspoons white pepper
¾ cup honey
3 tablespoons finely grated ginger, or more to taste

Steps:

  • Heat bacon drippings in a heavy-bottomed stockpot over medium heat. Cook and stir carrot in the hot drippings for about 3 minutes.
  • Stir the red bell pepper, green bell pepper, poblano pepper, jalapeno pepper, habanero pepper, and onion with the carrot; cook and stir until tender, 3 to 4 minutes.
  • Stir in garlic and beef; cook and stir until beef is browned, about 10 minutes. Drain excess grease from the pot.
  • Stir tomato paste and tomato sauce into the beef mixture. Increase heat to medium-high heat; cook and stir for 2 minutes.
  • Pour in dark beer, tequila, and chicken broth; bring to a boil.
  • Reduce heat to medium-low; stir in chili powder, paprika, cumin, coriander, salt, cayenne pepper, black pepper, white pepper, and honey. Simmer for 45 minutes to 2 hours.
  • Stir grated ginger into the chili about 15 minutes before serving.

Chilli Chicken With Ginger and Red Peppers image

This is a fantastic recipe, I always serve it with egg noodles. Try it once and you will be hooked. You can also make this with steak.

Number Of Ingredients 12

1 tablespoon cornflour (Cornstarch)
55 ml light soy sauce
1 tablespoon honey
1 teaspoon sweet chili sauce
2 tablespoons vegetable oil
1 tablespoon sesame oil
1 chili, seeded and thinly sliced (Red for colour)
1 clove garlic, finely chopped
1 large red pepper, cut into strips
1 onion, thinly sliced
1 piece fresh ginger, peeled and cut into strips.
2 chicken breasts, cut into strips

Steps:

  • Combine cornflour with 55ml water in a small jug or bowl.
  • Stir in the soy sauce, honey and chilli sauce, mix well and set aside.
  • Heat Vegetable Oil in wok, and stir fry chicken for 5 minutes until cooked, remove and keep warm.
  • Add Sesame oil to wok with chopped chilli and garlic, stir fry for 30 seconds.
  • Add peppers, onions and ginger and stir fry for a further 2- 3 minutes.
  • Return chicken to wok, add cornflour mix and stir until the sauce begins to thicken and chicken is hot.
  • Serve immediately with noodles.
  • If you want to save a few calories you could grill (broil) chicken or steak.
  • This should save 1.5 tbsp of Vegetable Oil.

SOUTHWEST CHILI PEPPER BURGERS

2 large poblano chilis
4 Grillers® Vegan Veggie Burgers or Grillers Prime® Veggie Burgers
1/4 teaspoon pepper
2 slices (1 1/2 oz.) fat-free Cheddar cheese, Monterey Jack cheese, or soy cheese, halved diagonally
3 tablespoons salsa

Steps:

  • 1. Broil chilis on foil-lined broiler pan for 10 to 14 minutes or until charred, turning once. Wrap in foil. Let stand for 5 minutes. Remove skin and seeds from chilis. Cut into strips.
  • 2. Place burgers on baking sheet. Sprinkle with pepper. Bake at 350 degrees F for 8 minutes. Turn. Bake for 10 minutes more. Top with pepper strips and cheese. Bake for 1 to 2 minutes more or until cheese melts. Serve with salsa.
  • ON THE GRILL:
  • Preheat grill
  • Use a food thermometer to be sure patties reach minimum internal temperature of 165 degrees F.
  • Helpful Hints: Poblano (po BLAH no) peppers have long, irregular bell-pepper shapes and a deep green color. Their medium hotness and deep, complex flavors make them perfect for roasting. Most groceries carry poblano peppers in the produce section.

Make well ahead of time, even days. Just make sure to keep tightly covered or sealed in plastic bag so no freezer flavors are absorbed.

1 jalapeno, halved lengthwise
1 cup whole milk
3/4 cup superfine sugar
2-inch piece ginger
2 cups heavy cream
1 teaspoon vanilla extract

Steps:

  • Line a small loaf pan or other mold with plastic wrap, leaving some plastic wrap hanging over the edges.
  • Combine jalapeno, whole milk and 1/2 cup of the sugar in a saucepan and heat until steaming, stirring often. Remove milk from heat and let cool to room temperature.
  • Peel and grate ginger and squeeze the gratings to release ginger juice. Stir into milk mixture.
  • Combine heavy cream, remaining sugar and vanilla extract and whip to soft peaks. Fold into milk mixture.
  • Transfer to prepared pan and freeze until set.
  • Remove semifreddo by pulling evenly on opposite ends of the plastic wrap lining.
