BACON WRAPPED GINGER SOY CHICKEN

Boneless, skinless chicken thighs are wrapped in smokey bacon and marinated in a delicate blend of honey, ginger, garlic and soy for a deliciously easy weeknight meal!

6 boneless skinless chicken thighs
6 slices uncooked bacon
1/4 cup chicken broth
1/2 teaspoon ginger
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
1/2 teaspoon salt
2 tablespoons soy sauce
2 tablespoons honey
2 tablespoons brown sugar

Steps:

  • Combine all ingredients for marinade except bacon and chicken in a shallow baking dish, about 11"x8".
  • Rinse and pat chicken dry. Keep folded and wrap with bacon slices. Secure with toothpicks if desired (just remove them before putting chicken in the oven so they won't burn). Place bacon wrapped chicken pieces into the marinade for 20-30 minutes, flipping halfway through to marinate both sides.
  • Preheat oven to 400 degrees. Heat 1-2 tablespoons olive oil in a heavy bottomed, oven safe pan over medium heat. Cook chicken pieces until bacon starts to crisp, about 3 minutes per side. Poor remaining marinade over the chicken and slide the pan into the oven. Cook for about 10 minutes, or until chicken is no longer pink.
  • Serve immediately.

3/4 lb boneless skinless chicken breast
1/4 cup orange marmalade
2 tablespoons soy sauce
1/2 teaspoon ginger
1/8 teaspoon garlic powder
12 slices bacon
1 (8 ounce) can water chestnuts, drained,cut in half

Steps:

  • Cut chicken into 24 bit sized pieces.
  • Combine marmalade, soy sauce, ginger and garlic powder in a mixing bowl.
  • Add the chicken and marinate for 30 minutes.
  • Partially cook the bacon, so that it is still limp, not crisp.
  • Cut slices in half.
  • Drain marinade from the chicken pieces.
  • Wrap bacon strip around 1 chicken chunk and 1/2 water chestnut, securing with a wooden pick.
  • Place on broiler pan.
  • Broil for 3 to 5 minutes.
  • I always brush them with additional melted marmalade before serving.

3 -4 chicken tenderloins
6 -10 slices bacon (approx.)
1 teaspoon salt
1 teaspoon pepper
2 tablespoons grated parmesan cheese
1/4 teaspoon onion powder

Steps:

  • In a pan or skillet, fry chicken in butter or oil until cooked on both sides, but slightly pink in the middle.
  • Take pan off heat and place chicken strips on clean surface.
  • Mix the seasonings together, and sprinkle on both sides of chicken strips.
  • Wrap bacon around chicken strips until no chicken is visible.
  • Fry on med-low heat until bacon is cooked through.
  • If chicken is still slightly pink inside, longer cooking time may be needed.

12 bacon strips, halved
10 ounces boneless skinless chicken breasts, cut into 24 cubes
1 can (8 ounces) sliced water chestnuts, drained
1/2 cup orange marmalade
1/4 cup soy sauce
2 garlic cloves, minced
1 teaspoon grated fresh gingerroot
Sweet-and-sour sauce, optional

Steps:

  • Place bacon on a broiler rack. Broil 4 in. from the heat for 1-2 minutes on each side or until partially cooked; cool. , Wrap a piece of bacon around a chicken cube and water chestnut slice; secure with a toothpick. In a large resealable plastic bag, combine the marmalade, soy sauce, garlic and ginger. Add wrapped chicken; seal and carefully turn to coat. Refrigerate for 2 hours., Drain and discard marinade. Broil chicken for 3-4 minutes on each side or chicken is no longer pink and bacon is crisp. Serve warm with sweet-and-sour sauce if desired.
