2 large baking apples
2 tablespoons crystallized ginger, chopped
1 tablespoon butter, melted
6 tablespoons water
1 1/2 tablespoons sugar
1 1/2 teaspoons fresh lemon juice
3/4 teaspoon lemon peel, grated
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375ºF. Coat a casserole dish (big enough to hold 2 apples) with nonstick cooking spray.
  • Peel apples halfway down from stem end. Core apples without cutting through the bottom.
  • Place in casserole.
  • Mix ginger and butter in small bowl. Spoon half of the mixture into each apple.
  • Stir all remaining ingredients in small saucepan over medium heat until sugar dissolves and syrup boils.
  • Pour over apples.
  • Bake 30-40 minutes.
  • Serve with whipped cream, if desired.
  • NOTE: May be covered loosely with plastic wrap and done in microwave (on high about 6 minutes) and then remove plastic wrap and put apples under preheated broiler for about 2 minutes.

Very common to many cooks to make applesauce in the crock-pot but when my sister Linda saw that I had posted a picture of my applesauce on Facebook she asked me for the recipe. So, I decided I...

1 peck of apples, ginger gold
1/4 c lemon juice
4 - 6 medium cinnamon sticks
1 - 1 1/2 c brown sugar, dark
1/4 c water
2 tsp salt

Steps:

  • 1. I used two bags of Ginger Gold apples only that equaled a peck.
  • 2. It was my first time trying the Ginger Gold and though they are gone now for the year, I will look forward to making more applesauce with them next year. They are a good one for the sauce making.
  • 3. Peel, core, and slice your apples. Place them in the crock pot. I always sprinkle the lemon juice in over the apples while I'm cutting them up. --- (Not all apples fit at first. After they cooked for awhile I was able to add the rest of the apples from the 2 bags.)
  • 4. I put the crockpot on low for 8 to 10 hrs. Stirring occasionally. About, 1/2 way through cooking I add my brown sugar....just about 1/2 cup. Then, when they are cooked down where they are nice and soft I remove the cinnamon sticks & blend with my emulsion blender till smooth. I taste and then add more brown sugar if necessary & my salt at this point.
  • 5. I then ladle out the applesauce into my Tupperware freezer containers and let cool before putting them in freezer. My favorite way to taste & eat applesauce is on a slice of toasted homemade bread. (I suppose because my Grandmother Roberta Campbell used to make her own bread and applesauce and this is how we always ate it.) Many of you already make applesauce, but my Sissy asked if I would give her the recipe so I thought I would post it in here for others who may not know how to make in the crock-pot & that way I could also give to my sister.

1/3 cup brown sugar
3/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
3 tablespoons flour
1/4 cup butter
1/3 cup finely chopped walnuts
2-1/4 cups flour
1/2 teaspoon ground ginger
Pinch ground nutmeg
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup finely chopped crystallized ginger
6 tablespoons butter, at room temperature
3/4 cup dark brown sugar
1/2 cup sugar
2 teaspoons vanilla extract
3 eggs
1-1/4 cups buttermilk
1 medium Granny Smith or Golden Delicious apple, peeled, cored and coarsely chopped
Powdered sugar for dusting

Steps:

  • Heat the oven to 350°F. Butter and flour a 10-cup bundt pan and set aside.
  • For the streusel, mix together the brown sugar, ginger, cinnamon, flour, and butter with your fingers to make large crumbs. Mix in the walnuts and refrigerate until ready to use.
  • To make the cake, whisk together the flour, ground ginger, nutmeg, baking powder, baking soda, and salt into a large bowl. Stir in the crystallized ginger and set aside. In a large mixing bowl, beat the butter with an electric mixer until light and fluffy.
  • Gradually add the sugars, continuing to beat until very light. Add the vanilla and then the eggs one at a time, beating each one in well before adding the next. Alternately stir in the flour and the buttermilk, until the batter is just mixed. Do not over mix. Gently stir in the chopped apple.
  • Pour half the batter into the prepared pan. Sprinkle with a third of the streusel. Pour in the remaining batter and top with the remaining streusel.
  • Bake until the top of the cake is firm (a skewer inserted in the center should come out clean), about 40 to 45 minutes. Cool for 15 minutes in the pan, then invert the cake onto a serving platter, dust with powdered sugar, and serve slightly warm or at room temperature.

A fun twist on the standard apple crisp, this apple crisp with ginger is going to delight your taste buds and have you coming back for more and more!

6 cups chopped apples ((about 6 medium sized apples))
2 tablespoons peeled and finely chopped fresh ginger root
1/2 teaspoon lemon zest
1 teaspoon lemon juice ( (zest the lemon before juicing!))
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 cup rolled oats ((quick or old-fashioned, not steel-cut))
1 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg ( (use already ground if you have to))
2/3 cup packed brown sugar
6 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 350°F. Lightly spray a 10 by 8 inch baking pan with cooking spray. Set aside.
  • In a large bowl, mix ginger root, lemon zest, lemon juice, sugar, and cinnamon. Add apple chunks and mix thoroughly. Make sure the zest and ginger root are distributed equally throughout the apples. Put into baking dish.
  • In the same bowl that you used for the apple mixture, mix flour, oats, cinnamon, nutmeg, and brown sugar. Add the softened butter, and use two knives held together in your hand (or a pastry cutter or fork) to cut the butter into the dry ingredients. The mixture should hold together in large clumps.
  • Using a large spoon or your hand, sprinkle the crisp topping over the apple mixture. Put into preheated oven and bake 1 hour and 10 minutes, or until apples are soft and crisp is lightly browned on top. Cool slightly, and serve warm with ice cream, if desired.

2 1/2 tablespoons firmly packed brown sugar

2 tablespoons finely chopped pecans or walnuts
2 tablespoons raisins, chopped
two 1/2-pound Golden Delicious apples
1/2 lemon
vanilla ice cream as an accompaniment if desired

Steps:

  • In a bowl stir together the butter, the brown sugar, the ginger, the pecans, and the raisins. Core the apples, peel the top third of them, and rub the peeled flesh with the lemon. Spoon the ginger mixture into the apple cavities, mounding it, arrange the apples in a deep microwave-safe dish, and microwave them, covered, at high power (100%), rotating the dish halfway through the cooking, for 8 minutes. Transfer the apples to 2 plates, spoon the cooking liquid over them, and serve the apples with the ice cream.

1 1/2 cups water
1/4 cup lemon juice
8 pounds firm pie apples
1 cup sugar
1/4 cup crystallized ginger

Steps:

  • In large non-aluminum kettle, combine water and lemon juice. Peel and core apples; cut into eighths and place immediately into lemon water.
  • Add sugar and ginger; bring mixture to boiling over high heat, stirring constantly. Reduce heat to low and cook, uncovered, 10 minutes, stirring constantly.
  • Meanwhile, sterilize 2 quart or 4 pint jars and the necessary lids, and bands, according to manufacturer's directions. With slotted spoon, divide apples and ginger among sterilized jars. Fill with hot syrup leaving 1/2 inch space at top of jar. Wipe rims of jars to remove any syrup and seal with lids and bands.
  • Process jars in boiling water bath for 20 minutes (both quarts or pints). Remove jars from water bath, tighten lids immediately, and set aside to cool completely. Label jars and store in cool, dry place

1/4 cup apple cider vinegar
2 tablespoons extra-virgin olive oil
2 teaspoons minced ginger
1 teaspoon minced garlic
2 tablespoons fresh lemon juice

1 teaspoon pepper
1/4 cup white wine
1 cup sliced (1/4-inch) yellow onions
2 cups cored and sliced (1/4-inch) Granny Smith apples
1/2 cup raisins
2 tablespoons butter

Steps:

  • In a resealable plastic bag, add the chops, apple cider vinegar, 1 tablespoon extra-virgin olive oil, ginger, garlic, lemon juice, salt and pepper. Marinate for 30 minutes
  • Preheat oven to 350 degrees F.
  • In a large saute pan heat 1 tablespoon extra-virgin olive oil to almost smoking, then add pork chops, shaking off excess marinade. Brown on both sides, then place on a sheet pan and put in the oven for 20 minutes or until internal temperature reaches 135 degrees F.
  • In the same saute pan deglaze with wine then add onions, apples and raisins and cook until apples are soft and onions are translucent. Add butter salt and pepper, to taste, and keep warm.
  • Remove chops from oven and add to the apple mixture. Serve hot.
