Soy Ginger Glazed Salmon with Broccoli image

This sheet pan soy ginger glazed salmon with broccoli is an easy and healthy weeknight meal the whole family will love.

1½ lbs salmon filets
¼ cup oil
⅓ cup soy sauce
¼ cup honey
1 tbsp mirin
2 cloves garlic (minced)
1 tbsp ginger (grated)
1 tsp sesame seeds
1 lb broccoli crowns (cut)
2 tbsp light olive oil
1 tsp kosher salt

Steps:

  • In small bowl add all ingredients except for salmon and whisk to combine
  • Put salmon into gallon size plastic bag and top with half of marinade. Seal bag and refrigerate. Let salmon marinate for at least 30 minutes, turning occasionally
  • Cut broccoli into bite size pieces and toss with olive oil and salt
  • Preheat oven to 400 degrees. Line a baking sheet with foil and coat with cooking spray.
  • Place salmon on baking sheet skin side down and cook for 15-20 minutes
  • While salmon cooks heat remaining marinade in small pan over medium heat. Bring to simmer and reduce heat to low. Allow sauce to thicken slightly then remove from heat. About 4-5 minutes
  • Remove salmon from oven and top with glaze

A healthy sheet-pan dinner that comes together in just 20 minutes? Sign us up. Brushing a simple sesame-ginger glaze onto the salmon before it roasts promotes caramelization on the fish, a feat not easily accomplished when roasting salmon fillets. The garnishes give this dinner a professional finish: A squeeze of lime juice, a sprinkle of sesame seeds, and a handful of thinly sliced scallions make for a beautiful plate.

4 tablespoons toasted sesame oil
2 tablespoons soy sauce or tamari
1 tablespoon rice vinegar
1 tablespoon honey
1 (2-inch) piece fresh ginger, peeled and finely grated (about 1 tablespoon)
1 garlic clove, finely grated
1 pound broccoli, trimmed and cut into florets, thick stems discarded
2 scallions, trimmed and cut diagonally into 1 1/2-inch segments, plus thinly sliced scallions for garnish
1 tablespoon olive oil, plus more for brushing the salmon
Kosher salt and black pepper
4 (6-ounce) skin-on salmon fillets
1/2 lime, for serving
Sesame seeds, for serving

Steps:

  • Heat the oven to 425 degrees. In a small bowl, whisk 3 tablespoons sesame oil with the soy sauce, vinegar, honey, ginger and garlic until smooth. Set the glaze aside.
  • Place the broccoli florets and 1 1/2-inch scallion segments on a sheet pan. Drizzle with 1 tablespoon olive oil and the remaining 1 tablespoon sesame oil. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper, toss well and roast for 5 minutes.
  • While the broccoli and scallions roast, place the salmon fillets on a plate and pat dry with paper towels. Brush all over with olive oil and sprinkle with salt and pepper.
  • Toss the broccoli and scallions and move to the edges of the pan, clearing spaces in the center for the salmon fillets. Place the salmon fillets, evenly spaced, on the center of the pan. Brush the fillets generously with the glaze.
  • Return the pan to the oven and roast until the salmon is cooked through but still slightly rare in the center, about 12 minutes.
  • Squeeze the lime over the broccoli and sprinkle with salt. Scatter the sliced scallions and sesame seeds over the salmon, and serve hot.

1/2 cup thinly sliced green onions, divided
1/3 cup reduced-sodium soy sauce
1/4 cup packed brown sugar
1/4 cup honey
2 tablespoons sesame seeds, divided
2 tablespoons rice vinegar
3 garlic cloves, chopped
1 tablespoon sesame oil
1 teaspoon crushed red pepper flakes
1 teaspoon minced fresh gingerroot
1 salmon fillet (2 pounds)
4 cups fresh broccoli florets
3 medium zucchini halved lengthwise and cut into 1/2-inch slices (about 4 cups)
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
Hot cooked rice, optional

Steps:

  • In a large bowl, whisk 1/4 cup green onions, soy sauce, brown sugar, honey, 1 tablespoon sesame seeds, vinegar, garlic, sesame oil, pepper flakes and ginger until blended. Pour 1/2 cup marinade into a shallow dish. Add salmon; turn to coat. Refrigerate, covered, 2-3 hours. Cover and refrigerate remaining marinade., Preheat oven to 400°. Drain salmon, discarding marinade in dish. Place salmon on a greased rimmed baking sheet. Toss broccoli and zucchini with oil, salt and pepper; arrange in a single layer around salmon. Bake until salmon just begins to flake easily with a fork and vegetables are crisp-tender, 20-25 minutes., Meanwhile, transfer reserved marinade to a small saucepan. Bring to a boil; cook until liquid is reduced by half, 10-12 minutes. Serve sauce with salmon, vegetables and rice, if desired. Top with remaining 1/4 cup green onions and 1 tablespoon sesame seeds.

  • In a small saucepan, stir together the soy sauce, rice vinegar, garlic, and ginger. Bring to a simmer over medium high, then remove from heat and stir in the honey and chili paste. Remove a few spoonfuls of the cooked glaze in a separate bowl for serving.
  • Drizzle the salmon with the olive oil and brush so that it is evenly coated. Place the salmon skin-side up on the hot skillet. Let cook for about 3 minutes, totally undisturbed, until the salmon forms a nice crust. When the salmon turns opaque on the sides and starts to turn opaque on top, use a flexible spatula to flip the salmon so that it is skin-side down. Brush or spoon the remaining glaze in the saucepan all over the top. Place the skillet immediately into the oven and let cook for 6 minutes (the salmon will appear a little undercooked in the center but will finish cooking as it rests).
