SPINACH DIP

This recipe came from our cookbook at the beauty shop where I work. We had many pot lucks, and every one wanted this and that recipe, so we all gave recipes and had our own book printed and sold them in the salon.

Number Of Ingredients 6

1 (10 ounce) package frozen spinach, thawed and drained
1 cup sour cream
1 cup mayonnaise (not Miracle Whip)
1 (1 ounce) package Knorr vegetable soup mix (or onion soup mix)
1 (8 ounce) can water chestnuts, drained and chopped (optional)
1/2 chopped onion

Steps:

  • Thaw and drain the spinach.
  • Squeeze the spinach with paper towels to remove excess water.
  • Mix all ingredients together in a bowl.
  • Let set in the fridge for a couple hours before serving.
  • I like to serve it inside a hollowed out round loaf of bread.
  • Scoop out the loaf and place dip inside.
  • I use what I scoop out for making croutons.
  • Serve with fresh vegetables.

ULTIMATE SPINACH DIP

This is the ultimate spinach dip! It is made from fresh spinach leaves and spring onions. I'm always asked to bring this along to major family events and, of course, during the holidays. It may be served at once, but tastes best when chilled for an hour. Serve with slices of sourdough baguettes.

1 bunch green onions
1 (8 ounce) can water chestnuts, drained and sliced
1 (8 ounce) container sour cream

½ (1 ounce) package dry onion soup mix

Steps:

  • In a medium bowl, toss together spinach, green onion stalks, and water chestnuts. Mix in the sour cream, mayonnaise, dry vegetable soup mix and dry onion soup mix.

You can create this quick and easy vegetarian spinach dip with just four very simple ingredients, and in less than five minutes.

1 cup sour cream
1/2 cup mayonnaise
1 packet onion soup mix

Steps:

  • Gather the ingredients.
  • Mix all ingredients thoroughly.
  • Chill for at least 1 hour before serving to allow flavors to mingle.
  • If you prefer a warm spinach dip, warm the ingredients up in a slow cooker and serve the dip whenever you're ready. Alternatively, serve in a hollowed-out bread bowl .

This easy, cheesy, Hot Spinach Artichoke Dip will be a hit at your next party, no one will know it's light!

13.75 oz artichoke hearts packed in water (drained)
10 oz frozen spinach (thawed and squeezed)
1/4 cup chopped shallots
1 clove garlic
1/2 cup fat-free Greek yogurt
1/2 cup light mayonnaise
2/3 cup good quality grated parmesan
4 oz shredded part-skim mozzarella cheese
salt and fresh pepper to taste
olive oil spray

Steps:

  • Preheat oven to 375°F.
  • In a small food processor, coarsely chop the artichoke hearts with the garlic and shallots.
  • Combine all the ingredients in a medium bowl.
  • Place in an oven-proof dish and bake at 375F for 20-25 minutes, until hot and cheese is melted. Serve right away.

I came across this recipe for a dip using FRESH spinach and decided to give it a go . . . it ended being the best dip that I'd had in a long time! And with only 5 ingredients, it's simple to throw together!

16 ounces sour cream (I used fat-free)
8 ounces cream cheese
10 ounces fresh spinach (washed and drained very well and shredded into smaller pieces)
1 (2oz) package dry Onion Soup Mix*
½ red onion (peeled and finely chopped)

Steps:

  • Mix all ingredients together, adding spinach very last. Cover and chill in the refrigerator until ready to serve. I found that it tastes best if you add make it a couple of hours ahead and let the flavors combine. This tastes great with vegetables and crackers.

1 shallot, finely chopped
1 clove garlic, chopped
2 tablespoons all-purpose flour
1 cup heavy whipping cream
1 (10-ounce) box frozen chopped spinach, thawed, drained and squeezed dry
1 (8-ounce) jar artichoke hearts, drained and chopped
1 (10-ounce) can diced tomatoes with green chiles (recommended: Rotel)
1 cup shredded 4 cheese blend
Tortilla chips and cut vegetables, for serving

Steps:

  • Melt butter in a medium saucepan over medium heat. Once it foams, add the shallot and garlic, and saute until softened, about 3 minutes.
  • Add the flour and cook while stirring until it becomes a light blonde color.
  • Slowly stir in the heavy cream, and the drained spinach, and simmer until it starts to thicken, about 5 minutes.
  • Stir in the artichoke hearts, tomatoes, and cheese and cook until the cheese is melted. Remove to a serving bowl and serve with tortilla chips.

1 -2 garlic clove, chopped
2 tablespoons all-purpose flour
1 cup heavy whipping cream (or half and half)
1 (10 ounce) box frozen chopped spinach, thawed, drained and squeezed dry
1 (8 ounce) jar artichoke hearts, drained and chopped
1 (10 ounce) can diced tomatoes and green chilies (recommended, Rotel)
1 cup shredded four cheese blend
tortilla chips
cut vegetables, for serving

Steps:

  • Melt butter in a medium saucepan over medium heat. Once it foams, add the shallot and garlic, and saute until softened, about 3 minutes.
  • Add the flour and cook while stirring until it becomes a light blonde color.

GINA'S CROCK-POT SPINACH AND ARTICHOKE DIP

4 pkg (8 oz. each) Philadelphia Cream Cheese
16 oz bowl sour cream
1 small container whipping cream
1 pkg frozen chopped spinach, thawed and drained
1 can (14 oz.) artichokes drained and chopped
1 Tbsp basil
1 Tbsp rosemary
1 Tbsp secret blend (your favorite pepper, salt, etc..)
Round loaf sourdough
Paprika sprinkled on top when done

Steps:

  • Put all ingredients in crock-pot on high, and stir occasionally till well mixed. Turn on low stirring at least every 20 minutes.
  • Cut top 1/2" of bread off. Hollow it out to 1", slice bread in 1" cubes and place toothpicks in each. If it is too thick, add some whipping cream or heavy cream or milk to make it dipping consistency.
  • Scoop dip into bread bowl and sprinkle with paprika or your favorite top seasoning... keep it full so guests will be pleased!

Cook stirring often, for 2 minutes or until fragrant and the garlic is just beginning to brown. Add the spinach and remaining salt and cook an additional 2 minutes or until the spinach is wilted. Drain in a strainer squeezing out any excess liquid. Allow to cool slightly for about 5 minutes or until cool enough to handle. Roughly chop the spinach and set aside. Wipe out the pan with a paper towel and set aside.
  • Lay out 4 slices of bread. Sprinkle each slice of bread with 1/2 cup mozzarella cheese. Divide the spinach evenly over the slices. Place the remaining slices of bread on top. Spread the top slices of bread evenly with half of the butter or mayonnaise. Sprinkle each buttered sandwich with 1 tablespoon parmesan cheese.
  • Heat the large skillet over medium low heat. Add the sandwiches to the hot pan, butter and cheese side down. You may have to do this in two batches. Cover the sandwiches with a lid slightly smaller than the pan so you can press down on the sandwiches. Allow to cook for 3 to 4 minutes or until golden brown and crispy and the mozzarella is beginning to melt. Remove the lid and butter and cheese the top pieces of bread. Flip the sandwiches and cook an additional 3 minutes or until the bread is golden brown and crispy and the cheese is melted. Remove from the pan and allow to sit for 3 minutes before slicing in half and serving warm. Continue with remaining sandwiches if cooking in batches.
