STRAWBERRY-CHERRY LEMON LIMEADE

4 pints strawberries, hulled and halved
4 cups sugar, plus more if desired
3 cups lemon juice
1 cup lime juice
2 jars maraschino cherries with their juice

Steps:

  • Blend the strawberries with 2 cups of the sugar and 2 cups water in a blender.
  • To a large vessel, add the remaining 2 cups sugar and 5 1/2 quarts (22 cups) water and mix to dissolve the sugar. Add the lemon juice, lime juice, strawberry puree and cherries with their juice and mix; add more sugar if desired. Chill thoroughly.
  • To serve: Fill glasses with ice and top up with the strawberry-cherry lemon limeade.

  • Muddle 2 lime wedges and some mint leaves in each glass and add ice. Mix 2 cups simple syrup, 2 cups water, 1 1/2cups fresh lime juice and 1/2 cup fresh lemon juice in a pitcher; pour into the glasses.
  • Simple Syrup: To make 2 cups simple syrup, bring 1 1/2cups each sugar and water to a boil, stirring until dissolved. Let cool.

1 large lemon
1 cup golden raisin
1/3 cup pecans
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 cups sugar
1/2 cup butter, softened
1 teaspoon lemon extract (or vanilla if you don't have lemon)
3/4 cup milk
2 large eggs
1/4 cup milk

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9 x 13" cake pan with non-stick spray and set aside.
  • Wash the outside of your lemon and pat dry. Cut in half and juice the lemon, reserving the liquid to use later. Pick out the seeds and cut each half into four pieces.
  • Put these 8 pieces along with the raisins and the pecans into a food processor and pulse until very finely chopped. That's right, you're using the entire lemon in this cake. Set this mixture aside.
  • In your electric mixer bowl, add one cup of flour, the salt, baking soda, and sugar. Mix them on LOW for about 30 seconds.
  • Add the second cup of flour and mix on LOW for about 30 seconds.
  • Add the softened butter, the lemon extract and 3/4 cup of milk. Beat on LOW until the flour is well moistened. Then turn the mixer up to MEDIUM-HIGH and beat for 2 minutes.
  • Shut off the mixer and scrape down the sides of the bowl.
  • Turn the mixer on LOW and add the eggs, one at a time, beating continuously. Now add the last of the milk.
  • Once everything is incorporated, turn the mixer up to MEDIUM-HIGH and beat for 2 minutes. Turn off the mixer, remove the bowl and scrape down the sides.
  • Gradually add the ground lemon, raisin and pecan mixture, folding it in gently so you don't deflate all that lovely air you just beat into the mixture.
  • Pour into your prepared pan and smooth out as evenly as possible. This batter is a bit stiff.
  • Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean. Remove to a wire rack.
  • While the cake is still warm, drizzle 1/3 cup of the fresh lemon juice over the surface of the cake. It will instantly be absorbed.
  • In a small bowl, combine 1/2 cup white sugar and 1 tsp ground cinnamon until well mixed. Sprinkle this cinnamon/sugar mixture over the still warm cake.
  • Optional: Sprinkle 1/4 cup finely chopped pecans on top of the cinnamon/sugar mixture.
  • Let your cake cool to room temperature, cover with plastic wrap and put it in the refrigerator. This will keep your cake nice and moist.
  • You can serve the cake right out of the fridge or let it come to room temperature.
  • It also freezes well if you wrap it in plastic wrap, then foil, and place the whole thing in a sealable freezer bag.

1 cup sugar
6 ounces raspberries, plus more for garnish
1 cup freshly squeezed lime juice (from about 10 limes)
1 liter club soda
Ice, for serving
1 lime, thinly sliced, for garnish

Steps:

  • Add the sugar, 1 cup water and berries to a medium saucepan and bring to a simmer. Stir until the sugar has dissolved and press against the berries with the back of the wooden spoon so their juices leach into the mixture. Let sit and steep until cool.
  • In a large pitcher, combine the cooled raspberry simple syrup, lime juice and club soda. Pour into tall glasses filled with ice and garnish with a slice of lime and a few extra berries for garnish.

1 lemon, sliced
1 lime, sliced

Steps:

  • In a large saucepan, heat the sugar and 2 cups water until the sugar is dissolved and the mixture is hot. Allow to cool, and then place into a large drink dispenser or jug. Add the lemon juice and lime juice and stir. Fill with ice and top with 1 gallon (16 cups) cold water. Add the lemon and lime slices.

Puree 4 more cups cubed watermelon in a blender; strain into the pitcher. Stir in 1 cup lime juice (from about 9 limes) and 2 cups cold seltzer. Add the frozen watermelon and some lime slices.
