BEST EVER COLLARD GREENS
This is my own recipe for collard greens. Once I made them this way my husband won't let me cook them any other way. People who don't typically like greens like these. It is also good with turnips and mustards. I add some of the turnip root if I use turnips.

Steps:
- Heat broth.
- Add remaining ingredients.
- If there is not enough broth to cover greens, add more.
- Bring to a boil, then reduce heat& simmer for about 3 hours.
- Remove bay leaves.
SOUL FOOD COLLARD GREENS

Steps:
- In a large deep skillet or pot, heat olive oil on medium heat.
- Add in onions and cook until tender.
- Stir in garlic and cook until fragrant.
- Add chicken broth, red pepper flakes and smoked turkey.
- Bring to a boil and reduce heat.
- Cover and boil lightly for about 20-30 minutes.
- Remove turkey leg and let cool.
- Remove meat from bone and cut into bite-size pieces.
- Return meat and skin back to the pot.
- Simmer for 10 minutes.
- Add collard greens to pot, pushing them down if needed.
- When greens begin to wilt down, cover and simmer for up to 60 minutes or until your desired texture is reached, stirring occasionally.
- Add salt and pepper if desired.
- Plate the greens and pour on a few drops of hot sauce.
- Serve hot.
GINA'S COLLARD GREENS
A slow cooked side dish with ham hock.

- Thoroughly wash collards, be sure to pull leaves apart and remove any sand. In a medium saucepan, bring 3 cups of salted water to a simmer. Place smoked ham hocks in salted water and cover. Cook ham hocks until slightly tender and remove from pan. In the same saucepan, add collard greens and remaining ingredients. Cover and cook greens for 2 1/2 to 3 hours until water reduces, add more water and additional salt and sugar, to taste.

- In a medium saucepan, bring 4 cups of salted water to a simmer. Place smoked ham hocks in salted water and cover for about 90 minutes. Cook ham hocks until slightly tender. In the same saucepan, add remaining ingredients and collard greens.
- Cover and cook greens for 1 to 1 1/2 hours.

- Using your hands, pull the leaves from the thick collard greens stems, and discard the stems. Roll the leaves lengthwise into a cigar shape, and cut crosswise into large pieces. Fill a clean sink or a large pot with plenty of cold water, and rinse the greens in the water, allowing any dirt or grit to sink to the bottom (repeat several times with fresh water, if necessary). Lift the greens out of the water, and set aside in a colander to drain.
- Heat the ham hocks, salt, and 3 cups water in a large pot over medium-high heat. Bring the water to a boil, reduce the heat to low, and simmer until the ham hocks are slightly tender, about 30 minutes.
- Add the greens, sugar, and red-pepper flakes to the pot, stirring to combine. Cover the pot, and continue cooking over low heat, stirring occasionally, until the greens are tender, about 45 minutes. If the pot gets too dry, add more water as necessary to keep the greens moist (you’ll want to serve the greens with a generous amount of the flavorful cooking liquid).
