SIMPLE TOMATO SAUCE

Steps:
- In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.
SO-EASY SPAGHETTI SAUCE

- In a large skillet, cook the beef, onion and celery over medium heat until meat is no longer pink; drain. In a 4- or 5-qt. slow cooker, combine the tomato sauce, tomato juice, tomatoes, tomato paste, sugar, seasonings and beef mixture. , Cover and cook on low for 5-6 hours or until heated through. Discard bay leaves. Serve with spaghetti; sprinkle with cheese if desired.

GRANDMA'S ITALIAN SPAGHETTI SAUCE
This is my grandmother's recipe from Italy. It is wonderful. I have gotten rid of all other sauce recipes because this one is so good. It is also wonderful over rice and by itself. I love it because it tastes too good and is very filling so it lasts more than 2 meals.

Steps:
- Saute garlic, onion and bell pepper in oil until onion and pepper are translucent.
- Add beef to onion-pepper mix.
- Cook til you no longer see pink; drain well and then return to pot.
- Add tomatoes with juice, paste, chili powder and Worcestershire; mix well.
- Simmer for 20 minutes.
- Add mushrooms; mix well.
- Simmer 10 minutes longer.
- Serve over hot pasta.
- I like angel hair with this sauce--it gives it a unique texture.
- I use Georgio bottled mushrooms, Del Monte Tomatoes, Hunts Paste, Lea& Perrins Worcestershire Sauce, McCormick Chili powder.
- All the rest are fresh ingredients.
- This is an old family recipe.
- Once you taste it, you will never go back to any other sauce.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
- Combine mayonnaise, sour cream, Cheddar cheese, pickles, carrot, celery, bell pepper, onion, banana peppers, salad seasoning, mustard, salt, and sugar in a large bowl. Mix well.
- Drain pasta and let cool for about 10 minutes. Toss pasta into the dressing; chill before serving.

GINA'S BASIC SPAGHETTI SAUCE
Steps:
- 1. Prepare the tomatoes: drop them into a pot of boiling water for about a minute.
- 2. Drain and rinse with cold water.
- 3. Slip off the skins, cut out the \"core\", and coarsely chop.
- 4. Set aside.
- 5. In a large pot, heat the oil. Add onion and fennel seed.
- 6. Fry for a couple of minutes.
- 7. Add the pepper and garlic and fry a couple more minutes.
- 8. Add the rest of the ingredients.
- 9. Bring to a boil, lower heat, then simmer for as long as you can (at least an hour), stirring occasionally.
- 10. I cover the pot loosely when simmering.
GINA'S SPAGHETTI SAUCE
This sauce is very popular among my family members and friends. The fresh herbs are the key! It's a great way to have a delicious, but simple meal for a large group.

- 1. Brown meat with onion, pepper and garlic. Drain excess fat.
- 2. In large pot, add all ingredients, except mushrooms. Bring to a boil, then reduce heat and simmer for 2 to 4 hours, making sure to stir occasionally. Don't let it stick!
- 3. About 10 minutes before serving, add mushrooms.
- 4. This makes about 2 1/2 quarts of sauce.
