FIVE-SPICE FLANK STEAK
This quick spice rub lends robust flavor and helps achieve delicious charring on the surface of the meat. Flank steak is a lean cut that's relatively inexpensive; be sure to slice thinly across the grain for tender bites.

- 1. Combine five-spice powder, brown sugar, salt, garlic powder, and ground red pepper in a small bowl. Rub spice mixture over both sides of flank steak.
- 2. Heat a large cast-iron skillet over medium-high. Add olive oil to pan; swirl to coat. Add steak to pan; cook 4 minutes on each side or until desired degree of doneness. Remove steak from pan; let stand 5 to 10 minutes. Cut steak across the grain into thin slices.

GIN AND SPICE FLANK STEAK
This unusual grilled beef recipe calls for whole allspice, juniper berries, and a splash of gin!

Steps:
- Grind 2 teaspoons juniper berries, the allspice berries, and the peppercorns in a spice grinder until coarsely ground, then stir in the salt. Press the ground spices into both sides of the flank steak; set aside to marinate at least 30 minutes.
- Bring beef broth and remaining juniper berries to a simmer in a small saucepan over medium heat. Simmer until the broth has reduced by 1/4, about 5 minutes. Stir in heavy cream and gin. Return to a simmer, and cook until reduced by half, about 10 minutes. Keep sauce warm over very low heat.
- Preheat an outdoor grill for medium-high heat and lightly oil grate.
- Brush the flank steak with olive oil on both sides. Cook on preheated grill until cooked to desired degree of doneness, about 4 minutes per side for medium. Place steak on a plate, and allow to rest for 5 minutes.
- Slice the steak thinly and place onto a serving dish. Remove the juniper berries from the gin sauce and discard. Serve the sliced steak accompanied by the gin sauce.

- In a spice grinder, grind 2 tsp. juniper berries, the allspice, and peppercorns until coarsely ground. Add salt and whirl to mix.
- Trim fat from steak. Rinse meat, pat dry, and rub all over with oil. Pat and rub spice mixture onto both sides.
- In a 2-qt. pot, bring broth and remaining 2 tsp. juniper berries to a boil over high heat and boil until reduced by 3/ Add cream and 2 tbsp. gin and boil over medium-high heat until reduced by half.
- Lay steak on an oiled cooking grate over a solid bed of very hot coals or highest gas heat (you can hold your hand 1 to 2 in. above grate for only 1 to 2 seconds); cover gas grill. Cook until firm when pressed on thin end but still quite pink inside (cut to check), 8 to 10 minutes; turn over halfway through. Meanwhile, reheat gin sauce over medium-low heat and, if more zip is desired, add 1 tbsp. gin.
