FIVE-SPICE FLANK STEAK

This quick spice rub lends robust flavor and helps achieve delicious charring on the surface of the meat. Flank steak is a lean cut that's relatively inexpensive; be sure to slice thinly across the grain for tender bites.

Yield Serves 4 (serving size: 3 oz.)

Number Of Ingredients 7

1 teaspoon five-spice powder
1 teaspoon light brown sugar
3/4 teaspoon kosher salt
3/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
1 1-lb. flank steak
1 tablespoon olive oil

Steps:

  • 1. Combine five-spice powder, brown sugar, salt, garlic powder, and ground red pepper in a small bowl. Rub spice mixture over both sides of flank steak.
  • 2. Heat a large cast-iron skillet over medium-high. Add olive oil to pan; swirl to coat. Add steak to pan; cook 4 minutes on each side or until desired degree of doneness. Remove steak from pan; let stand 5 to 10 minutes. Cut steak across the grain into thin slices.

2 teaspoons juniper berries
1 ½ teaspoons allspice berries
1 ½ teaspoons black peppercorns
1 teaspoon kosher salt
1 (1 1/2-pound) flank steak, trimmed
1 cup beef broth
2 teaspoons juniper berries
¾ cup heavy cream
3 tablespoons dry gin
1 tablespoon olive oil

Steps:

  • Grind 2 teaspoons juniper berries, the allspice berries, and the peppercorns in a spice grinder until coarsely ground, then stir in the salt. Press the ground spices into both sides of the flank steak; set aside to marinate at least 30 minutes.
  • Bring beef broth and remaining juniper berries to a simmer in a small saucepan over medium heat. Simmer until the broth has reduced by 1/4, about 5 minutes. Stir in heavy cream and gin. Return to a simmer, and cook until reduced by half, about 10 minutes. Keep sauce warm over very low heat.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate.
  • Brush the flank steak with olive oil on both sides. Cook on preheated grill until cooked to desired degree of doneness, about 4 minutes per side for medium. Place steak on a plate, and allow to rest for 5 minutes.
  • Slice the steak thinly and place onto a serving dish. Remove the juniper berries from the gin sauce and discard. Serve the sliced steak accompanied by the gin sauce.
