PORK TENDERLOIN SANDWICH

A classic sandwich in the Midwest, particularly popular in Iowa and Indiana, but there are regional variations throughout the entire United STates. I've always thought of this as a German schnitzel on a sandwich. It's crispy and crunchy... tender deliciousness!

1 (1 pound) pork tenderloin
½ cup all-purpose flour
1 teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground black pepper
1 large egg
½ cup buttermilk
1 cup panko bread crumbs
½ cup olive oil
4 medium soft rolls
4 tablespoons mayonnaise
4 leaves lettuce
12 slices dill pickle

Steps:

  • Trim pork tenderloin of any fat and silver skin, and cut into 4 equal pieces. Place each piece between 2 sheets of plastic wrap or in a resealable plastic bag. Pound the cutlets using a meat mallet to 1/4-inch thickness, flattening each piece.
  • Combine flour, salt, onion powder, garlic powder, and pepper in a shallow dish. Whisk together buttermilk and egg in a second dish. Add panko breadcrumbs to a third dish.
  • Dry cutlets with paper towels, and dredge each in the flour mixture on both sides, shaking off any excess. Next dredge tenderloins in the egg-buttermilk mixture, shaking off the excess. Finally, turn cutlets in the bread crumb mixture, pressing down until completely coated. Transfer to a plate and let dry for at least 5 minutes.
  • Heat oil over medium heat in a 12-inch skillet to between 350 to 375 degrees F (175 to 190 degrees C). Place a couple of breaded cutlets in the skillet, making sure not to crowd, and fry on each side for about 3 minutes, shaking the pan occasionally until cutlets are deep golden brown and crisp. Transfer the cutlets to a wire rack to drain any excess oil. Repeat the procedure with the remaining cutlets.
  • Spread each roll with mayonnaise then add lettuce, pickle slices, and cutlets.

2 pounds center-cut boneless pork loin
2 large eggs
2 cups buttermilk
2 cloves garlic, crushed
Kosher salt and freshly ground black pepper
1/4 teaspoon cayenne pepper
2 sleeves saltines (about 80 crackers)
2 cups instant flour (such as Wondra)
Peanut oil, for frying
4 soft hamburger buns, split
1/3 cup mayonnaise
3 tablespoons yellow mustard
1/2 head iceberg lettuce, shredded
2 tomatoes, thinly sliced
1 red onion, thinly sliced
4 half-sour dill pickles, thinly sliced

Steps:

  • Cut the pork crosswise into 4 equal pieces. Put each piece flat on a cutting board and slice horizontally almost in half (stop about 1 inch from the other side). Open like a book. Sprinkle each piece with water, place between 2 pieces of heavy-duty plastic wrap and pound to 1/4 inch thick with a mallet or heavy skillet.
  • Whisk the eggs, buttermilk, garlic, 1 teaspoon each salt and black pepper, and the cayenne in a shallow bowl. Add the pork, cover and refrigerate at least 4 hours or overnight.
  • Pulse the crackers into coarse crumbs in a food processor, then transfer to a shallow dish. Put the flour in another dish. Remove each piece of pork from the marinade, letting the excess drip off. Dredge both sides in the flour, dip in the buttermilk marinade again, then coat with the cracker crumbs.
  • Heat 1/4 to 1/2 inch peanut oil in a large heavy-bottomed skillet over medium-high heat until a deep-fry thermometer registers 360. Fry the pork in batches until golden and cooked through, about 3 minutes per side. Drain on paper towels.
  • Spread both halves of each bun with mayonnaise and mustard. Layer the lettuce, tomatoes and onion on the bottom halves. Add a piece of pork and a few pickle slices. Cover with the bun tops.

1 1 1/2- to 2-pound pork tenderloin
2 cups buttermilk
3 tablespoons barbecue rub
4 cups peanut oil
Kosher salt and freshly ground pepper
1 cup all-purpose flour
4 large eggs, lightly beaten
3 cups garlic croutons, crushed
1/2 cup mayonnaise
1/4 cup apricot- or mango-habanero sauce
Pinch of granulated garlic
Kosher salt
4 large brioche buns, split, toasted and buttered
Spicy pickle slices and shredded iceberg lettuce, for topping

Steps:

  • Make the pork: Cut the tenderloin into quarters; using a meat mallet, pound each piece until it is 1/4 inch thick and about 6 inches wide. Mix the buttermilk and barbecue rub in a baking dish, add the pork, cover and let marinate overnight or up to 2 days.
  • In a large deep saucepan, heat the peanut oil over medium heat until a deep-fry thermometer registers 350 degrees F. Take the pork out of the marinade and season with salt and pepper.
  • Make a three-stage breading station with the flour, eggs and crouton crumbs in separate shallow bowls. Place the pork pieces first in the flour, turning to coat; shake off the excess. Dip the pork in the beaten egg and let the excess drip off, then dredge in the crouton crumbs, pressing until total coverage is achieved.
  • Fry the pork in batches until golden brown, 4 to 5 minutes. Let drain on a paper towel?lined baking sheet. Set aside.
  • Make the aioli: Mix the mayonnaise, habanero sauce and granulated garlic in a small bowl. Season with salt.
  • Build the sandwiches: Place the crispy pork on the toasted buns with some pickle slices, shredded lettuce and then a nice schmear of the aioli. Serve with extra aioli on the side.

It's is so beloved in the Hoosier state that it inspired a documentary about the search for the perfect version of it. We hope it will inspire you to try an uncommon way of cooking pork tenderloin, whether you're a fan or a skeptic.

1 pork tenderloin, trimmed (about 1 1/4 pounds)
1 cup buttermilk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon sweet paprika
1/4 teaspoon sugar
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
2 large eggs, beaten
2 cups plain breadcrumbs
Vegetable oil, for frying
4 toasted hamburger buns
Lettuce, tomato slices, onion slices, pickle rounds, mayonnaise and mustard, for serving

Steps:

  • Cut the pork tenderloin crosswise into 4 even pieces. Cut each piece crosswise again, but do not go all the way through; you should be able to open it like a book. Pound each piece with a mallet until 1/4-inch thick and 6 to 8 inches across.
  • Whisk together the buttermilk, garlic powder, onion powder, paprika, sugar, 1 teaspoon salt and 1/2 teaspoon pepper in a shallow dish. Add the pork cutlets. Make sure all the pieces are coated well with the buttermilk marinade. Cover and refrigerate for at least 4 hours and up to overnight.
  • Set up a breading station with 3 shallow dishes: the flour in the first dish, eggs in the second and breadcrumbs in the third. Sprinkle all 3 dishes with salt and pepper.
  • Fill a large, high-sided skillet with about 1/2-inch oil, attach a deep fat fry thermometer and heat to 350 degrees F.
  • Dredge each pork cutlet in the flour first, then in the egg and finally in the breadcrumbs. Gently place into the hot oil without overcrowding the skillet. You will need to fry the cutlets in batches. When the cutlets are golden brown on one side, about 2 minutes, carefully turn and cook for another 2 minutes. Drain well on a paper-towel-lined plate.
  • Build the sandwiches by putting the cutlets between the burger buns and garnishing with lettuce, tomato, onion, pickle, mayonnaise and mustard. The cutlet should hang generously over the bun.

I love breaded pork tenderloin sandwiches! But every time I make them, the breading falls off in the pan. But last night I had such a great success, I wrote down what I did and will follow this way...I think the key is do not fry them right away after they're coated...let them sit at least 10-20 minutes. My measurements are approximate as I just dump and guess. I guess I just got lucky last night. After they were breaded (uncooked), I had to do something else for a bit. I came back and put them in the pan and it fried up nicely without a bunch of bald spots on my tenderloins. Preparation time includes a 20-minute 'pause' before cooking the breaded loins. You could probably bread them the night before and stick them in the fridge if you have space. Give it a try and let me know!

5 slices pork tenderloin, tenderized
1/2 cup cornmeal
1/2 cup flour
1 cup breadcrumbs, very fine
2 tablespoons italian seasoning
1 teaspoon ground sage

Steps:

  • Mix all the dry ingredients together (corn meal, flour, bread crumbs, seasonings).
  • Don't dip the tenderloins into any milk or egg, just dip it in your dry ingredients and coat both sides. Push the dry ingredients into the tenderloin best you can. The natural juices provide enough moisture to get the breading to stick.
  • Lay breaded tenderloins on a plate or wax paper for 10-20 minutes to sit.
  • Then fry in heated oil. It will take about 3-5 minutes per side, depending upon the thickness of the tenderloin. You may sprinkle tenderloin with salt while frying, if desired.
  • Serve on toasted bun with mayo, loads of pickles (my favorite), mustard, ketchup, lettuce, or whatever you desire.

I grew up eating these huge sandwiches in Indiana. After moving to New York, I began to miss them. So I created my own recipe! We love these sandwiches! I introduced my New York native husband to these giant sandwiches after I moved here to New York. He thought it was joke I was playing on him because the breaded pork loin is so huge compared to the regular bun it sits on. On a trip back to my home state, I took him to a local truck stop diner and had him order the Giant Tenderloin Sandwich. He learned that day I wasn't playing a joke on him, because their's was bigger than mine!

4 - thick cut boneless pork loin chops about 1/2 to 3/4 inch thick, fat trimmed off
6 - sleeves saltine crackers, ground to fine crumbs
12 large eggs
1/2 cup(s) water
1 cup(s) all purpose flour
oil for frying, at least 2 inch deep, i used a 48 ounce bottle
TO MAKE SANDWICHES
4 - hamburger buns, typically served on a basic white hamburger bun
tomato slices
onion slices
pickle slices
mayonnaise
mustard

Steps:

  • Pound each pork loin chop to about 1/4 inch thickness with flat side of meat mallet. Careful not to tear the meat. You want this to be very thin. If you accidentally tear it, it will still work.
  • Beat eggs with water in a large bowl. Place cracker crumbs in another very large bowel. Place flour on a large dinner plate. Set up your breading station: flour, then egg, then cracker crumbs.
  • Dip each flattened loin in flour, gently shake off extra, then in egg, then cracker crumbs, wipe hands now with a damp towel, press crumbs into the meat. Dip again in egg, and again in cracker crumbs, wipe hands again with damp towel, press into the meat firmly. NOTE: these are going to double to triple in size after they are fully breaded.
  • Place in single layer on large baking sheets lined with parchment paper. Press the meat hard again to make sure there are no wet spots. Can use two baking sheets or can place a piece of parchment on top of first layer, then place rest of breaded meat on top. (Picture shows the size of the breaded loin compared to a standard size bottle of seasoning)
  • Place in freezer for 2 hours. Dont skip this. Or overnight. If overnight, I suggest using freezer paper instead of parchment.
  • In a very large deep skillet or stock pot, heat oil to 375°F.
  • Cook each piece, one at a time, until golden brown, turning to cook evenly. About 4 minutes each side. The breading may bubble up and separate from the pork, don't panic. This happens to me usually on the last one I breaded, because I begin to get tired, and didn't thoroughly press the cracker crumbs into the meat each time.
  • Remove to paper towels to drain. Optional you can sprinkle a little salt over the cooked meat. I don't typically because of the salt in the cracker crumbs.
  • To serve, place preferred condiments and toppings on bun, place tenderloin on bun. The pork is supposed to hang over the bun quite a lot! Serve and enjoy!
  • If you think these might be just too large for you and those you are feeding, simply cut each piece of meat in half after you pound them, but before you bread them.

Dip in flour mixture to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help adhere., In a large skillet, heat oil over medium heat. Cook pork 2-3 minutes on each side or until golden brown. Remove from pan; drain on paper towels. Serve in buns, with toppings as desired.
